Sausage Peppers and Onions on heros....not sure of the sides - maybe just salad...
 
Tonight I am making rack of lamb with an herb-breadcrumb crust, plus big fat asparagus and a potato gratin. I think I might make a salad too.
 
DH and I took DGD to see Garfields Christmas at the Bushnel today and then we met DD, DSIL and my DDIL for a Chinese dinner. We are having desset and coffee at home because I want to finish the pies.
 
Hi my friends, I'm back!! What a magical week we had. I'm already planning some homecooked meals, so I'll be joining you guys again tomorrow. :sunny:

Well, we had a "chocolate dessert party" tonight with about ten other families (and boy, was that fun!) so I knew I wanted a light and nutritious meal to kind of balance it. We had Easy Mexican Eggplant served with mashed root vegetables (potatoes, sweet potatoes and carrots) and a mixed greens salad.

Easy Mexican Eggplant
1 medium eggplant, peeled and cut into cubes
4 tomatoes, cut into cubes
1 onion, chopped
2 cloves of garlic, minced
1/2 tsp chili powder
1/2 tsp black pepper

Put everything into a skillet, stir well, and simmer for 15 to 20 minutes or until the eggplant is tender but not mushy.

It's also very good over rice but I felt more like having the mashed veggies.

We are taking my MIL out for her b-day today to Logan's, so no cooking for me tonight!

Well, it will be back to cooking for me tonight. Not sure what, though. Maybe some oven fried chicken and veggie.
 
Back in the saddle again - Spaghetti with Bolognese sauce, family request after a week of Disney, with lemon/parmesan broccoli. YUMMO!!

nucpharm - what an incredible game Friday, we watched it at ESPN club. It's too bad either team had to lose! Good luck in Atlanta!! :thumbsup2

Welcome back Tigerkat, I'll read your report after I post this:

We had indian food again today. I am sick and spicy food sometimes helps with that. My sister was carrying a dish of tikka masala to the table, and she tripped, sending the entire dish all over my parents' floor! Which, by the way, is covered with tan wall to wall carpeting. What a horrible mess! There is no way the stains are coming out. My parents took it well though. My Mom just turned to my Dad and said, "Well dear, we were talking about recarpeting the floors anyway. Looks like we'll just be doing it a little sooner!"

The food was good though.

Tonight I am making chicken provencal soup. Not sure if the recipe is posted. Hang on...yup it's there. It's such a rich, hearty soup. We love it! We are having breadsticks to go with it.

Well, tonight will be the oven fried chicken! Last night was pizza again! We spent the day putting up our xmas decor, so by dinner time I was in no mood to cook. Happy Monday all! :sunny:

Tonite I have pork chops planned along with mashed potatoes and green beans. I hope that I get to them because DH brought all of the Xmas decorations down for me and I seem to have more than I remember :confused3. How did that happen?

Nancy - how is your Mom doing? I have to go and buy all new Xmas stuff - Katrina wiped us out and last Xmas I didn't have the heart to do it.

Tonight will be, yep that's right, red beans & rice with smoked sausage. I'm also marinating some chicken in a garlic/lemon marinade to broil tomorrow night. It's really good, if anyone's interested I'll post it!

I would love your marinade recipe as well...

We have been pigging out since the day before Thanksgiving so we have to be a little better today...I am baking some boneless porkchops, broccoli sauteed like I am going to put it in cavatelli and broccoli and maybe a little rice on the side...

This broccoli is yummy...basically sautee it in EVOO with alot of garlic, crushed red pepper and salt and pepper...if I was making cavatelli and broccoli, I would add chicken broth and about 2 - 3 TBS of butter...great to add some chicken in there too!

I am babbling again!!!!

Thanks Lauren!! Here is the recipe - you can either grill or broil the chicken:

Lemony Garlic Chicken

8 pieces of chicken
1/2 c. olive oil
1/2 c. lemon juice (fresh)
3 tsp. salt
1/2 tsp. pepper
1 tsp. dried oregano
1/2 tsp. paprika
3 cloves garlic, minced (more or less to taste)

Place chicken in a shallow baking dish or large ziplock baggie. Combine remaining ingredients and pour over chicken, toss to coat. Marinate at least one hour (I do it overnight). Grill or broil!! I boil remaining marinade and use as extra sauce.
