Well, I am better and want to thank you all for the well wishes. The only one left to get the bug was DH. He is sick and miserable, so we are taking it easy tonite. Homemade chicken soup for us and dino chicken nuggets and fries for DGD. We are babysitting for her while DD and SIL go to see Josh Blue at the Hu Ke Lau.

I started shopping for the Holidays today and made a huge Costco run. I like to keep some frozen appetizers on hand "just in case" and I need to stock up on baking staples so that I don't need to run out everytime I want to bake.
 
Where on earth has this year gone? :confused3

Tonight I am making my version of Jambasta (page 1). We will have sun-dried tomato basil bread with it.

Rice
Steamed veggies--broccoli, cauliflower, carrots, water chestnuts
spinich dip with toasted triangles

I am getting so tired of cooking. Anybody else ever feel that way? Seems I spend so much time cooking and cleaning up after I cook. These people just shove it in their mouths and talk about how they don't really care for it or say "It's OK". :confused3

Then again maybe I am just in a "BLAH" kind of mood as everything is bothering me lately.

Oh well, that's our lunch (hubby works the evening shift today).
 
Mom21, I'm sorry :( I would seriously talk to them and tell them how you feel. Heck, I don't have any kids, but if my husband didn't share his pleasure and appreciation of my food, I would be seriously bummed.

On a lighter note, could you share your spinach dip with us? :)
 

Mom21--I have lots of nights of thinking "Why do I continue to try to cook a nice meal for my family? :confused3 " Dh is content to eat Hamburger Helper for every meal and DD (3) says everything is "yucky" and she's not eating it. Luckily,my little man will eat whatever is in front of him. But for me, cooking is the one thing I can do, and I try to think of it like my hobby!

Now, WFD--I have no clue. Our church group is meeting here tonight and food is being brought over. So we're at the mercy of others! ;) I'm sure it will be yummy. Last night we ended up at our local sports bar and had some yummy burgers!

Why sure I'd love to if I could......LOL :rotfl: I got some of TGIFriday's at a B1G1 in my grocery store. I will be the only one that eats it anyway. They don't "do" spinach. Sorry no recipe. I'll let you know if it is any good though. My Publix makes an awesome spinach and artichoke dip, but it is expensive and i can't eat the whole thing so I don't buy it unless I am having a party.

Yes, I can totally relate. I really like to cook, but DH and DS make me feel bad when they say they don't like something. There are times when I try a new recipe and even I don't like it, but when someone else makes a negative comment when I've worked hard on something, it makes me wonder why I even bother.


Tonight's a perfect example of what I do to try and please my family. I'm making cheese ravioli, meatballs (cuz DH won't eat a meal without meat :rolleyes: ) another kind of pasta (because DS probably won't like the ravioli), salad, and mozzarella rolls.

I know how you feel. DH is pretty appreciative, but my kids generally don't like anything I cook. It used to bug me a lot! However, now I cook for myself. If a recipe sounds yummy, I try it. The kids have to give it a fair shot. If they don't like it, they know where the peanut butter or cold cereal is. I'm much happier now that I'm cooking for me!
 
Hmmm, what's for dinner??? Good question. Actually, I think I'm making chicken piccata. It was on tap for earlier in the week, but I didn't make it. (DH took me shopping for a Disney themed Christmas tree!!!!) I usually make a nice dessert, but I don't know what I have. We'll see! Guess I'll have to get up off my duff and see what's in the cupboard. Any suggestions?
 
I still don't feel like cooking. Head cold, sinus or something. Just feel blah. I'm taking Nyquil & Dayquil. They give some relief. Might have to break down & go to the dr. tomorrow. Ugh.

Thank goodness for the crockpot! I've got some spaghetti sauce & Italian meatballs simmering. Later I'll fix some noodles & garlic toast. If I can find the recipe and I feel like it, I might try the pumpkin roll recipe I found recently (in last Sunday's paper). It looks great! But, I'd like to give it a dry run before I make & take it to Thanksgiving dinner. LOL. If I do make it and it does turn out really good, I'll post the recipe. :)
 
Anyone have a recipe for brussel sprouts? I had one I loved and I cant find it. The one i had had bacon and cheese! Any help out there? Im still searching!

Have you tried Food Network ? There are quite a few brussel sprout recipes there. Rachael Ray has one with bacon and cheese, but it sounds a little odd because it also has maple syrup in it.
 
We just order Kung Pao Chicken, Roast Pork Lo Mein and a PuPu Platter

I can totally relate to all of you about cooking and pleasing the family...I love to cook and now I have time (I am a stay at home Mom for the first time!!!) but sometimes I do not feel it is appreciated...about a month ago I made homemade chicken soup, they loved it but DFi said not to waste so much time and open a can of Progresso!!! :furious: :stir: :furious: :stir: :furious: :furious: :furious: Anyway, he was sick this week so I took out some of my frozen soup and he loved it... :confused3

I am trying to do easy things now and be a little more organized...if they don't care why should I? But I love to cook and will always do so...I am babbling now!!!

We had a big lunch today at friendly's so we just had some hot dogs tonight and mac and cheese...

I made some Tastefully Simple Pumpkin Muffins to send to my Mom since I am not going to see here for Thanksgiving and have to share with you guys that they were sooo good and easy!!!

We do a very simple one.

Simple Sprouts with Browned Butter and Bacon

Take 2 containers of fresh brussels sprouts and wash and peel off any brown leaves. Trim root end. Slice from top to root end.
Take bacon (pref. applewood) (maybe 6 strips?) and dice it and fry it until crisp. Remove crisp bacon.
Add 2 shallots and 1 T butter and saute in fat/melted butter mix until translucent. (can add diced jalapenos if you like)
Add sliced sprouts and toss. Cook until sprouts are tender. Add salt and pepper to taste.

You can top with browned bread crumbs, or shredded cheese to taste (optional).

Yum. ;)
 
Our group fed us tonight with lasagna, ravioli, salad and garlic bread. I had made some Pumpkin Pie bread and Oatmeal Cranberry Chocolate chip cookies earlier in the day which we had for dessert! Yummy!!
 
I feel that way lots of times with the cooking, too. With 6 of us in the house at almost every meal, it is very hard to please everyone. :sad2:
Tonight it wasn't my problem though ~ DH made ribs and fries while I was at work today. :thumbsup2

I haven't gotten to "Dis" much lately and I have lots of catching up to do on this thread!! :surfweb:
 
We are having leftover jabasta tonight with sun-dried tomato basil bread. Boy was it good!

ETA: Day 2 is now on the trip reports board. I hope to do the whole trip today :)
