Sure. It's another EXTREMELY easy recipe!

Fruited Rice Pilaf

1 pkg. rice pilaf mix
2 Tbs. butter, softened
1/2 C. pineapple chunks, drained
1/2 C. raisins
1/4 C. prepared Italian salad dressing
Toasted coconut, optional

Cook rice pilaf according to package directions. Stir in the butter until melted. Add the pineapple, raisins and salad dressing. Top with toasted coconut, if desired.

I like to take this to pot luck meals. It's different, and people always comment on how good this is!
Thanks. I'm definitely going to make it for my family.
However, a lot of the boys (ages 7-11) in our cub scout pack are pretty picky. I wonder if they would even try a rice dish. Now that I think about it, if I want them to eat it it might have to be something like tater tots or macaroni and cheese. :rolleyes: So much for going with the theme.
 
Is this recipe posted? DH loves cabbage and I don't know that many ways to cook it.

This was actually my first time making this one but I just tried it and it is yummy :) so here's the recipe:

Cabbage Roll Stew

1.5 lb ground beef
small onion, chopped
6 cups bagged coleslaw mix
3/4 cup Minute Rice
1 C water
28 oz. can diced tomatoes
3 tsp. paprika
1 tsp. salt
1 tsp. pepper

Brown ground beef with the onions over medium heat in Dutch Oven. Drain grease. Add remaining ingredients and bring to a boil. Reduce heat to a simmer and let cook for approx. 1 - 1.5 hours or until cabbage and carrot pieces are tender. If liquid runs low, add a little water or tomato juice to the pot.

Enjoy!! :)
 
Ok, my friends! Valentine's day is right around the corner. I would like to come up with some kind of special "themed" meal that would be suitable for my whole family. Anyone feel up to the task of coming up with some ideas for a family who, with the exception of DS, are pretty cool with anything we eat???

Let the ideas start flowing!

I'll confess.....I can't make any recipe without changing it up somehow and I'm using Catalina dressing also! I hope DH and the kids like it.
 

Hi again. Thanks to everyone for the welcome. Glynis, here is the ground beef and wild rice casserole recipe. The ingredients sounded strange when I first read it, but it is one of my family's favorites.

Ground Beef and Wild Rice Casserole
2 lbs. lean ground beef
One 6 oz. pkg. Long Grain and Wild Rice
1 large onion, chopped
One 8 oz. can mushrooms, stems & pieces, drained
One 10 ½ oz. can cream of mushroom soup
One 10 ½ oz. can cream of chicken soup
Salt and pepper to taste
Herb seasoned stuffing, unprepared (I use Pepperidge Farms)

Prepare rice according to directions. While rice is cooking, brown ground beef and onion. Drain. Add rice, mushrooms, and soups to meat. Salt and pepper lightly. Mix well. Pour into a 3 quart casserole dish. Top with stuffing, cover, and bake 45 minutes to 1 hour at 350 degrees.

You can freeze this dish or put it together the night before baking. If you do, leave the stuffing off until just before baking.

liamsaunt - I did the curry tonight as the family seemed to get over the bug very fast and they wanted it - it is INCREDIBLE and so quick!! We'll definitely be having this one again.:thumbsup2
 
Tonight I am making the Ritz parm chicken (Original Kitten Chicken, as my hubby calls it), with chicken Stove-Top, and a green veggie.

Pork chops of some sort.
Haven't decided to stuff them (cornbread & cranberries or prunes) or broil.
The plumbers are here today and in the kitchen, so it will depend on what happens there~

I've got Glynis' Lime Chicken Nachos in the crockpot right now. It sounded so good, and something the kids might like. We've got snow here today, schools got out early, so I'm glad to have dinner already cooking.

Tonight, haven't decided yet between a pot of gumbo (which sounds nice on a cold snowy day) or a recipe from a Rachel Ray 30 min. book that I've been wanting to try. BBL with recipes depending on which it is.
 
Seems like alot of us are having pork today!!!

I am trying a recipe from the Martha Stewart show for Braised Pork Chops...I will probably make rice pilaf and some sort of veggie...maybe corn. Yes, I am finally trying a new recipe...its easy too. I'll let you guys know how it comes.

My guys are not big veggie eaters and only like corn, broccoli, carrots, greenbeans (some times) and sometimes a small salad.
 
I just don't know today. Last night ended up being a frozen pizza b/c I didn't feel like cooking. I think I might have caught whatever DS had this weekend, cuz' I feel terrible. It might be takeout for the family tonight.
 
Count me in for pork today as well. I am making Paula's fried pork chops with mashed potatoes, gravy, a veggie and a green salad. I have some stove top on hand and my DH loves it so I may fix that also.

Stephanie, I hope that you fell better, and that the rest of you are on the mend also.
 
I made Chili Mac last night. It's one of my kids favorites.

Chili Mac

2 C. elbow macaroni
1 T. vegetable oil
1 lb. ground beef
1 onion, chopped
1 red pepper, chopped
4 garlic cloves, minced
2 T. chili powder
1 T. cumin
1 (14.5 oz.) can diced tomatoes
1 (28 oz.) can tomato puree
1 T. brown sugar
2 1/2 C. shredded Co-Jack cheese

Cook macaroni in salted water until al dente, about 5 minutes. Rinse in cold water and drain. Brown beef and drain, set aside. Add oil to skillet & return pan to medium high heat. Add onions, pepper, garlic, chili powder, anc cumin. Cook until vegetables are soft, about 7 minutes or so. Add tomatoes, tomato puree, brown sugar, about 1/2 C. of water and beef to skillet. Simmer about 20 minutes. Add pasta and pour into casserole dish and sprinkle with cheese. Bake at 350 degrees until cheese is melted, about 30 minutes.

I think you already use Kraftsfoodsonline, but there are some cute sweet items there this month. I did not look for meal items yet, but the treats look like treats you make for your little ones.

I'm not sure about dinner tonight. I have parent teacher conferences from 6:30-7:00 tonight, so I want something fast. We may just have leftover night, or pizza meatloaf muffins if I can through the meat together before PTC's and then bake them when we get home. Not sure. Leftovers would be easier. Hmmmm......

Super easy dinner here tonight, grilled smoked sausage, baked fries, and broccoli.

wow, this sounds like my family with veggies....I can add summer squash in there but that's about the extent of it!

The apricot chicken was such a big hit last night that we had NO leftovers! I am used to cooking a lot and DH always takes leftovers for lunch the next day but there wasn't anything left for him to take. I made a 9 x 13 pan full and there was nothing left. So tonight I'm going to try the ground beef and wild rice casserole.....I think.....DH isn't big on rice and we had rice last night with the chicken so don't know if that will go over again.
 
We are having leftovers tonight so that I can go to the gym. I'm trying to go three nights a week, which means my poor family has been eating a lot of leftovers.

Still trying to decide about tomorrow night. But Kathy's cajun pork tenderloin sounds really good. Is that recipe here?
