We are having a ground beef and wild rice casserole that my husband loves. And tomorrow will be the leftovers because it makes so much.

And, kind of off topic - I've lurked on and off on this thread and have made a lot of the meals posted here. Just wanted to say thanks to everyone for sharing.

Well, I'm glad you've stopped lurking and started joining in the fun! We are a harmless bunch, and love to hear about all the fun meals going on! I would love the recipe for the casserole you mentioned! I think my picky family might like it! TIA!
 
I guess last night's cincinnati chili was a hit. I didn't eat any of it, as I felt quite sick. On the upside, I was in bed by 8:30, and asleep by 9:30. I woke up feeling much better. Hopefully, things won't get any worse!

Tonight will be pretty easy. DH has to work late, so it's just me and the kids. I'm throwing together a chicken nugget casserole made with nuggets, spaghetti sauce and lots of cheese. I know my kids will eat it! I'll be having leftover chili! Green beans for our veggie, and probably nothing for dessert! We try to only have dessert once or twice a week.

Thanks for the warm welcome Glynis. I'll post the recipe tonight. I'm sure my kids would like your chicken nugget casserole recipe. Please share.
 

Good morning ladies! Tonight I'm going to make the Thai Chicken Curry that was posted by liamsaunt, I believe. What would go with that????:confused3

I like to serve my curry with basmati rice that's been soaked for a few hours in water, then drained, rinsed, and cooked in a mixture of half coconut milk, and half water or chicken stock, with some fresh ginger grated in and then tossed with chopped scallions when it is cooked. For extra veggies I like either sugar snap peas or snow peas steamed and tossed in toasted sesame oil. I hope you like the recipe!
 
So, I ended up making nothing for dinner last night. I have a yucky cold and bailed out of work about an hour early, came home and started the squash and potatoes, then promptly fell asleep. DH put everything in the fridge for me and I slept until 8 AM today--15 hours!! I called out sick from work today at the 'suggestion' of my boss, who sent me home yesterday telling me I looked horrible (gee, thanks). I am actually starting to feel somewhat back to normal (hooray for cold medicine!) so am going to try again for last night's menu, assuming the tuna is still fresh.

If it is not, I am going to cook up these ricotta gnocchi I put together on Sunday afternoon while making the cod pomodoro. I hope the tuna is still good though.

Well my curry may have to wait a day or two - DS and DH have a stomach bug.:sad2: Somehow I don't think that recipe will settle too well with them.

liamsaunt - is this a dish I could make today and serve another day, or is it best eaten when it's first cooked?
 
I have a big pot of cabbage roll stew going right now for tonight's dinner. There is popcorn chicken for those who won't eat that. ;)

Tigerkat: We had the GI thing a few weeks ago and while thae last round skipped me, my family said it was awful. Hope that it passes your home quickly.

It's definitely yummy leftover--just don't cook the chicken too much (of course!), and watch your spice level--it will get spicier as it sits overnight. Hmm...maybe I should make some curry--it would blast this cold right out of town!

Is this recipe posted? DH loves cabbage and I don't know that many ways to cook it. The beef and rice casserole that a PP mentioned sounds like something my family would enjoy also.

I'll add my thanks to Lindsey for keeping up with this thread for us. I don't know what I would do without it. I don't post too often on here but there are many days when I don't have a clue what we're having for dinner and this is the first place I look for ideas!

This is what we had last night (I make mine with Catalina dressing)...I think I called it something else. I served rice and broccoli...the sauce is sooooo good...DF and DS's favorite.

I need help thinking of a side dish to take to our Blue & Gold banquet (cub scouts). The theme is Hawaiian Luau. I'd like to make something in keeping with the theme. Any ideas?

I have a quick and easy recipe for fruited rice pilaf. It has raisins and pineapple chunks in it. My family loves it! Let me know if you want it.

Chicken Nugget Casserole

1 pkg. (13.5 oz.) chicken nuggets
1/3 C. grated Parmesan cheese
1 can (26.5 oz.) spaghetti sauce
1 C. shredded mozzarella
1 tsp. Italian seasoning

Place nuggets in a greased 9 X 13 baking dish. Sprinkle with Parmesan cheese. Top with spaghetti sauce, mozzarella cheese and Italian seasoning. Cover and bake at 350 degrees for 30-35 minutes or until chicken is heated through and cheese is melted.

As you can see, I go for easy and simple recipes!!
 
I've got Glynis' Lime Chicken Nachos in the crockpot right now. It sounded so good, and something the kids might like. We've got snow here today, schools got out early, so I'm glad to have dinner already cooking.

Sure. It's another EXTREMELY easy recipe!

Fruited Rice Pilaf

1 pkg. rice pilaf mix
2 Tbs. butter, softened
1/2 C. pineapple chunks, drained
1/2 C. raisins
1/4 C. prepared Italian salad dressing
Toasted coconut, optional

Cook rice pilaf according to package directions. Stir in the butter until melted. Add the pineapple, raisins and salad dressing. Top with toasted coconut, if desired.

I like to take this to pot luck meals. It's different, and people always comment on how good this is!
