Ok. I promised the recipes from last night. Here they are:

Chicken with Peach Stuffing

1 can sliced peaches
4 chicken breast halves (I used chicken tenders)
2 Tbs. vegetable oil
2 Tbs. butter
1 Tbs. brown sugar
1 Tbs. cider vinegar
1/8 tsp. ground allspice
1 pkg. chicken stuffing mix

Drain peaches, reserving syrup. Set aside8 peach slices for garnish; dice the remaining peaches. Add enough water to the syrup to measure 1 cup. Set peaches and syrup aside. In a large skillet, brown chicken in oil. Add the butter brown sugar, vinegar, allspice and reserved syrup. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add the dry stuffing mix and diced peaches. Remove from the heat; cover and let stand 5 minutes. Garnish with peach slices


Apple Pie in a Goblet

3 large tart apples, peeled and coarsely chopped
1/4 C. sugar
1/4 C. water
3/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
12 shortbread cookies, crushed
2 C. vanilla ice cream
Whipped Cream

In a large saucepan, combine the apples, sugar, water, cinnamon and nutmeg. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until apples are tender. Uncover; cook 9-11 minutes longer or un til most of the liquid has evaporated. Remove from the heat. In each of 4 goblets or parfait glasses, layer 1 tablespoon cookie crumbs, 1/2 C. ice cream and 1/4 of the apple mixture. Top with remaining cookie crumbs and whipped cream.


I didn't use goblets, as my kids would destroy them, so I just used small bowls, and called it apple pie sundaes. I also made them slightly healthier by using sugar free shortbread cookies, carb smart ice cream and sugar free Cool Whip.

This was so good my family demanded I "keep it in my file!"

I'm surfing all these great recipes and making a grocery list. Perhaps tomorrow it will be warmer and I can take my DS outside to go to the store! He's been home with a double ear infection. :sick:

I have got to stop whining! I know that our weather is the milder version that you all are experiencing.

I hope that your DS is better, ear infections are terrible. Between the colds, GI bugs and upper resp infections it has been a tough season, hasn't it? Thank goodness we can make some hot comfort food to ease it.

Emeril's Shrimp & Potato Stew

2 lbs. shrimp, peeled, reserve shrimp shells
2 tsp. Emeril's Essence, or any cajun blend spice
1 c. vegetable oil
1 bay leaf
1 1/4 c. flour
1 large onion, chopped
1 Tbsp. minced garlic
2 Tbsp. chopped parsley
3 large baking potatoes, peeled and cut into 2 inch pieces
1 1/4 tsp. salt
1/2 tsp. cayenne pepper
1/4 tsp. black pepper
12-16 ounces andouille sausage, diced
1/4 c. sliced green onions

Combine shrimp shells, bay leaf and 10 c. water in a stockpot. Bring to a boil, reduce heat and simmer 1 hour. Strain and reserve stock.

In a heavy bottomed Dutch oven or a soup pot, heat the 1 c. oil and, when hot, whisk in the flour. Cook, stirring constantly, until a roux is formed the color of dark peanut butter. Add the onions and cook until soft, 4-6 minutes. Add the garlic and parsley and cook for 1 minute. Add the potatoes, andouille, 8 c. of the reserved shrimp stock, salt, cayenne and black pepper and bring just to a boil. Reduce heat to simmer and cook until the potatoes are very tender and the sauce is thickened, 30-40 minutes. Add the shrimp and green onions and continue cooking until shrimp are done. Serve over rice.


Velvet Shrimp

1 Tbsp. butter or margarine
1/2 c. chopped green onions
1/2 tsp. each salt, dry mustard, basil and cayenne pepper
1/4 tsp. each garlic powder and thyme
1 lb. medium shrimp, peeled and deveined
1/2 tsp. minced garlic
1 c. heavy or whipping cream
1/2 c. shredded Muenster cheese

Heat a 10 inch skillet over high heat about 1 minute. Add butter. Stir in green onions and 2 tsp. of the seasoning mix; cook 1 minute. Add shrimp and garlic; cook stirring occasionally, 2 minutes. Stir in cream and remaining seasoning mix; cook 1 minute. Remove shrimp with slotted spoon.

Boil cream in same skillet, whisking constantly, 2 minutes. Stir in cheese, then shrimp. Serve over pasta.

BTW, here in Florida I always used to have trouble finding hot sausage or andouille. But this year I found some at Publix and it is really good. It is called Thomas' Ragin Cajun Hot Smoked Andouille Sausage. It is REALLY hot but that is just how I like it. Any hoo, I used it to make my black-eyed peas for the New Year and they were the best I have ever made.
 
I jsut had to share...I baked banana muffins today!!! I never bake and they came out pretty good...I used a recipe from my SIL and altered it to be somewhat low fat...I had a lot of browning bananas.

I never bake so I am very excited!!!

Anyone ever freeze muffins? TIA!

I know exactly how you feel. I never bake as well, however, I got a stand mixer for Christmas and I've been baking something every weekend. The stand mixer makes it so much easier.

Every time DF sees a stand mixer he asks me if I want one and I say no...I am in the process of getting the house organized (like that will happen) and find I do not have any room right now...DF took over my house with RC car stuff and he never puts anything away til I haunt him! Another thing is...we need to lose weight and I think if I baked we would eat too much cake and stuff...

ya think a wedding would make me lose weight but NO...we are getting married soon...even though we haven't set a date!!! my dress is alreaddy too big...so that doesn't even give me incentive...

I'm babbling again!!! :)
 
Just to let me all know the double chocolate dip was pretty good. Just make sure to beat the cream cheese until smooth. Next time I might add pieces of toasted pound cake to dip with the fruit.

We are having sandwiches tonight. I have been wanting a turkey sandwich with all the trimmings for a week now and just kept making other things. Not tonight!!!!!! I wish dh would hurry up and come home!
 
We had the most disgusting dinner tonight. We bought these pre-made "Black and Blue" hamburger patties from the meat section of the grocery store. They had blackening seasoning and blue cheese mixed in with the ground beef. I love blue cheese, and thought these sounded yummy. Ugh...they were so gross and they smelled like vomit. Even DH couldn't eat his and he'll usually eat something if it's at least so-so.

Tonight was taco night at our house.
I think I see a trend, I love to bake, but don't love to cook. It looks like some people that love to cook don't normally bake. Interesting! I will post some of my cookie/dessert recipies soon!

The sausage and beans turned out pretty good yesterday--I'll post the recipe later today. I think tonight that I'm going to make hte Bourbon Chicken posted here!

Congratulations! I love to bake but because I have never met a recipe that I am not tempted to "nanitize" it is sometimes touch and go. I don't freeze baked goods but it is a personal preference. Muffins freeze well.

I have had my kitchen aid stand mixer for over 20 years, and while I don't use it all of the time, I could not be without it. I keep hoping it will break down so that I can justify one of the new professional models. Mine is the smaller one that was available so long ago, but I really want one of the Bad Boys!

Tonight is a busy night here so I am having spaghetti and turkey meatball stoup with a green salad and garlic bread. It can be ready when we are all home.

Thanks Nancy! I did "Laurinize" the muffins yesterday (lower fat) and they were a hit with DF...he actually brought some for the girls in the office today...:) so I guess I won't have to freeze any but it is good to know I am able to.

I guess I should make some room and get a stand mixer...I have room in the bathroom closet!!!

I was storing mine on my basement shelves with the rest of the appliances that I don't use everyday, and I found that I was not using it at all. Now it has a home on my counter top and I use it more often.

I didn't look at the recipe but how about some type of rice...I love the basmati rice that I get at indian restaurants...not that I ever made it! :)
