Ok, for all you pot roast lovers out there, I'm going to post my recipe! It's incredibly easy, and DH says it's the best tasting pot roast he's ever tasted! I've tried so many recipes, but this is the one I'm sticking with:

2 boneless chuck roasts (2.5 pounds each)
1 envelope Ranch dressing mix
1 envelope Italian dressing mix
1 envelope brown gravy mix
1/2 cup water

Place roasts in a slow cooker. In a small bowl, combine mixes and water. Whisk together. Pour over roasts. Cover and cook on low 7-8 hours until tender.

I always add some carrots and onions with this.

Very yummy!
Oh my gosh, Glynis! This was soooo good and so easy! Even Christopher liked it and he doesn't eat much meat. It's definitely going in my menu rotation. Thanks for sharing.

So here's a dumb question. I bought a chuck roast, but there was a lot of fat in it. Is that normal?

Here's my confession: I don't know much about buying meat! I usually let DH pick out our roasts, etc. He's so much better at it than I am. We've tried it with different types of roasts, and they all taste wonderful. By using the crockpot, they are pretty much guaranteed tender.

I'm glad you liked the recipe. I'm so glad Christopher liked it. I know how tough it can be to please a picky eater!
 

Tonight I am making black bean chili and cornbread. Another good comfort food. It isn't really cold here right now, which is VERY odd. Anyone else having unseasonal weather right now?

yes, it's warmer than usual here. I'd really like a white Christmas, but it looks like that isn't going to happen.

My son has a 4pm dr's appt today and dd has a concert at school at 7 pm. I better go find something to throw in the crock pot!!

lucas--Happy Anniversary!!!!!

Tonight will be pizza again for us. Trying to do as little clean up as possible--tomorrow will be out to eat! :thumbsup2 And then no cooking for me for 2 weeks!!! Gotta love being at the IL's! :teeth:

It's a good thing I decided on this yesterday (it's a prepare a day ahead recipe) all I have to do is pop it in the oven when I get in from the hospital this afternoon. Yea Mom was admitted again this morning and I think this will be the last time. :sad1:

Come to my house for a white Christmas! I've got about 8 inches in my front yard right now, and we are supposed to be getting more this week. That's pretty unusual for us. We haven't had a white Christmas in the last 10 years. My kids are so excited!

Attention: LINDSAY AND OTHER OREO TRUFFLE LOVERS

I just finished my first batch of truffles made with the double stuffed mint oreos. THEY ARE AMAZING!!! The mint is not too overpowering, just enough to let you know they are mint. They are soooooooooooooooooooooo good! I dipped the first batch in white chocolate, and then sprinkled them with red and white sugar crystals. The next batch will be in milk chocolate with Christmas sprinkles. I'll try to remember to take pictures before devouring them all.

So they held together good?

Yup. I mixed the cream cheese in really well, and it resembled cookie dough. I put the balls in the fridge to firm up, and they did. They held up to the dipping. I'm keeping them in the fridge, as they are a bit soft if left out too long. The taste is incredible. I think, next time I do them, I would maybe add part of another package of cream cheese.
