Lauren thanks for the link for omaha, I like to order packages like this when they go on sale for my parents, as they tend to think they are paupers and eat like it, lol.

Sounds like my Mom...she lives on those Banquet pot pies...store brand cookies and milk.

I think we are going to have kielbasa and sauerkraut too. We are going to the jewler for rings tonight. I may get a new setting all together we'll see. I posted a pic of my ering on the wedding boards...I love it just don't know what type of band will fit. DF custom designed it.

I have never had the Omaha stuff before. I assume its good? I better get my freezer cleaned out!!! This package comes with alot of stuff. I thought my cooking buddies would like to know about it...:)
 
Tonight will be a new recipe for black bean, corn and zucchini enchiladas. I made the enchilada sauce yesterday, and it was yummy! I hope the full recipe is just as good! happy Hump Day all!
 
Wedding Update: We just went to pick out tuxes...Tom is wearing a 3 button black with an ivory paisley vest and ivory striped tie. Andrew wearing a black 2 button with the vest and tie in black. :groom:

Dinner was really good laast night. Ham, boiled potatoes, carrots, turnip (rutabaga), cabbage adn green beans. Yumm!

Tonight I think we have enough for leftovers. Marisa made brownies for work (a bribe I think) and she made an extra tray for us, so there are pleny of sweets for dessert. DDIL and DS are not joining us this evening,,,,a quiet night :guilty:.

AKLMegs- My DGD would have loved to have dinner at your house last night! You had two of her favorite foods at the same time, and she was complaining about my dinner selection.
 

In one of my Cuisine magazine there is a recipe for preserved lemons. I'll go look. Did you use fresh grated ginger or powdered ginger? That can make a big difference

Thanks for looking for this!:thumbsup2 I'm sure I used fresh, I usually keep it in the fridge. But I didn't have preserved lemons & tried it with fresh.

shovan Here is a recipe I found on Foodtv ala Tyler Florence preserved Lemons:
6 to 8 lemons, unwaxed
2 cups kosher salt

Wash lemons well and dry them. Cut 4 lemons into quarters from the top, being careful not to cut all the way through. Pack salt generously into the cuts and place lemon into a sterilized glass pint jar. Continue procedure, packing the lemons into the jar as tightly as possible. Squeeze juice from remaining lemons. Add another 2 tablespoons of salt to the jar and top off with the lemon juice, make sure the lemons are completely covered. Close the jar with a non-metallic lid and set aside in a cool, dark place or the refrigerator for one month. Preserved lemons will keep for 1 year. Refrigerate after opening.

I've made preserved lemons often. If you look on the main page, I have a recipe for shrimp with preserved lemons that is excellent if you want to make them and don't have too many recipes for them. :)

Lemons are often waxed, so scrub them well.
Kosher salt is a must!
Do not cheat and use bottled lemon juice to top off the jar. It makes it more bitter.
The lemons themselves get soft and mushy after awhile and a white lacy substance forms in the jar. Just shake it up once in awhile to distribute. Don't eat the lemon flesh-it is mushy and very salty. After a week or so, the peel separates easily from the flesh and can be minced and added to anything for a delicious flavor - excellent in a standard vinaigrette recipe made with lemon juice. The whole lemons can be used to stuff chicken or fish, just don't eat the lemons with the meat.

I keep pulling up that shrimp recipe! Then of course, I can't fix it because I need preserved lemons.;)

Lauren, You are going to love Omaha steaks! I used to order them & keep the freezer stocked up! But then we had Katrina & I had just had a package come in from Omaha, that was so sad having to throw away all of those good steaks! I haven't ordered since, I just don't stock up the way I used to.

I think I'm going to grill lamb chops tonight. Not sure what kind of seasoning or what sides yet.

Kathy, the Outback Cabernet Sauce you've posted calls for packaged au jus? Is that dry in the packets (like the gravy mixes) I don't remember seeing au jus mix.:confused:

Yep, it's the dry gravy packs, I also add dried rosemary & mint to it. Hope you like it!
 
I tried Omaha a few times, just dont like it. Butcher cut filets from the supermarket are bigger, tastier, & cheaper IMO. Lots of people love Omaha, but I wont be ordering again. The stuffed fish wasn't much better. And the potato mounds are horrible. Surprisingly, the hot dogs (which I've never liked from anywhere) were good from Omaha! Again, just my opinion, if I hadnt tried it I wouldnt have known I dont like it!;)

Tonights dinner is cheeseburgers, bbq chicken, caprese & tossed salads, & chips. Having friends over. Would call it a cook out but since DH is grill-challenged I will be broiling:rolleyes:
 
Good morning everyone! I can tell my family is about 2 weeks out from a Disney vacation...one of my twins came down with the flu!!! It always happens!!! At least we've got time for it to run it's course before we leave (I hope!).

Anway, dinner tonight will be the lime chicken nachos for the healthy people, and chicken noodle soup for the sickies. I'm anticipating the other twin to get sick at some point today. She's very lethargic right now. Of course, that could be due to the fact that she is very dependant on her twin, and when they are not together Mary gets very sad. Poor thing.

All this talk of "beer butt'" chicken reminds me of when I first heard about it several years ago. My stepfather asked us if we wanted to come over for "chicken on the can". I didn't have a clue what he was talking about, but somehow DS and I got into a discussion about it being like "turkey on the toilet", which made DS :rotfl2: and it's been a family joke ever since.

I like to brine the chicken before I cook it on the can so the breast meat doesn't dry out. I usually use beer or lemon-lime pop. McCormick Grill Mates seasonings are really good rubbed on the outside too.


Last night I just made ham steak, tater tots, and broccoli.

I was going to grill chicken breasts tonight, but when I went to grill the ham last night it wouldn't light. :confused3 So unless I can figure out what's wrong with it, I'll have to think of something else to do with them.

That's what I told DH. With my twins you can pretty much assume that whatever one gets, the other one will get within a day or two. Oh well. Such is life!

Last night DH had a work dinnner, so I went to my folks for dinner, which was nice because my fridge is slim pickins right now. We had grilled cumin-crusted cornish hens with mango salsa, sweet potatoes, green beans, and spinach.

Tonight I am making a sandwich. If I am lazy it will just be gruyere and butter on a baguette. If I am feeling ambitious is is going to be carmelized red onions, bacon, cheddar, avocado, and arugula. Either way I am making a salad to go with it, using up the last veggie scraps. Exactly 72 hours until my plane lands, not that I am counting or anything...

Kathy, :confused: I have another question about the Outback Sauce! I know this shouldn't be that difficult, I guess I'm having an off day! I found the au jus mix but couldn't find any lamb seasoning. Will salt, pepper, rosemary & mint work just as well? I could add some poultry seasoning, if you think it needs it.
