Kathy, I just finished a little bit I made for Alexis. (She's not feeling very well today (stuffy nose) & didn't want to eat earlier. )

You're right it doesn't need a thing it's perfect & EASY! Thanks for the recipe! Now, back to crawfish peeling to make a big batch for dinner.
 
I forgot to mention that DH gave me a Paula Deen cookbook yesterday that I've been wanting, so if anyone needs a "good ole southern" recipe just yell! I think I've gained 5 lbs just reading thru it.:rotfl:
 
Dinners this week are going to be kind of odd because I am trying to use everything up before we leave for vacation. Lots of stuff from the freezer, not so many fresh vegetables as the week progresses. Tonight I am making portobello mushroom lasagna (from the freezer), roasted asparagus, baby carrots, and crusty bread.
 
WTH is right! I would have kicked his butt! But, then again, I'd be on my knees on the floor with a straw...bottle shards be darned!:lmao:

And I'd be calling to "remind" him before the next get together...maybe even suggest where to find it so there's no excuse. And since we all know the chocolates won't last a couple of months he can add a couple nice bars to make up to Mom for making her clean!

I have one and love her recipes! Between the butter, sour cream, the cream and the sugar her recipes are the reason that I went from a ten to a fourteen :confused3.

Dinner tonight was just so-so. I made the apricot prune chicken, and that was good, but I served it with the potato and macaroni salads that my SIL brought Saturday evening, and I am not a fan of store bought salads. I was going to serve sugar snap peas with dinner, but I was DISing and burned them, so no veggie tonight. We will have dessert from last night, death by chocolate made from Marisa's brownies or cheesecake topped with blueberry pie filling.

I want to read her new book, "It ain't all about the cooking". I saw a clip of her on Rachael Ray talking about it. It sounds good!

It's funny you mention that, poor DH initially bought that book, which is her memoirs, not a cookbook. He saw my disappointment and hurried back to get a "cookbook". I wish I could have kept it too - it looked great!
 
For dinner I had a veggie sandwich with lettuce, red onion, pickles, tomatoes, alfalfa sprouts, avocado, dijon mustard and dipped in hot sauce. (yes I'm strange! :) )
 
Today I am making black bean chili and cornbread. The A1 made my regular chili taste so good so I am going to add some to this one and see what happens :)

Lindsay- I made a black bean chili and had a lot left. Yesterday I turned it into a southwestern style soup. It is so good and will keep me from eating junk for lunch. I have been trying to make soup every week so that I don't get sidetracked into eating grab and go lunches.

Tonight we are having a boiled dinner. Smoked shoulders were on sale this week so I could not resist!
 
I have been wanting roast chicken lately so I will be making beer in the butt chicken on the grill. I do not have any beer in the can though so I'll take another can and fill it with white wine, etc.

Probably a nice salad on the side.

Tonight will more than likely be leftovers--I've got a fridge full of them. If DH balks at the idea I'll make black bean and corn enchiladas--but probably will postpone that until tomorrow

Lauren- I use orange soda and season the chicken with a dry rub blend of salt, chili powder and brown sugar. I glaze he chicken with a combination of the orange soda that I removed from the can and orange marmalade. It is so good! I bought two chickens yesterday because I was craving this.

The Crawfish Monica, Kathy posted was delicious! No changes to that recipe were needed it was great!

Lauren, I quit using beer once I tried it with white wine & lots of fresh herbs! Everyone here thinks it comes out so much better! I rub the chicken with poultry seasoning or cajun seasoning & chopped herbs (especially rosemary) & put seasoning & herbs in the can with the wine. Mmmm, yuummy!

Nancy, that "Orange soda Can" chicken sounds really great! I'm copying that to try it too! and it gives me another idea for a lemon chicken!

Oooh, maybe we'll have chicken for dinner instead!:lmao:

I hope you like it as much as we did! I was just thinking that I have to make it again...maybe this weekend. The sauce does come out thin but good enough and yummy for the pasta...enjoy! I bet it would come good in the crock pot too...:)

I picked up 2 yesterday as well...on sale at shoprite!!! Your idea looks good. I have mountain dew...maybe I'll try it that way...do you glaze after cooking or before?

I'll put the bird on the grill someway...if I try another spice or liquid, I'll let you know...the chicken comes out so moist on the grill! :banana:
 
Lauren- I glaze it the last 20 minutes or so. I have never cooked with wine, but I would love to try it. rosemary , lemon and white wine....sounds so good!

Nancy, never cooked with wine? I use it in soo many dishes! Then, again I almost always have a bottle of something open around here!:lmao: Roast, spaghetti sauces & almost any meat cooked in a sauce we'll get some red wine thrown in. Any butter-garlic type sauces benefit from a dash of white wine. I use any cheaper, but decent wine that I would drink. I have had dishes ruined by a bad wine, I don't use cooking wines at all. Although someone said something about a Marsala dish that was better with the cooking wine. I also use Sherry for quite a few dishes, it's really good for sauteed mushrooms & I used it in that Romanoff sauce for strawberries.

I keep a large bottle of Chardonnay in the fridge mostly for cooking. If you buy one of those air-pump type wine bottle stopper sets it will keep for several weeks. Here's the kind I'm referring to:

ps White wine will keep longer, red wines will only last about a week.
 
I've been toying with the idea of South Beach diet after watching Lauren talk about it. On the freebie thread I got a South Beach bar that came with a recipe book. Last night was Grilled salmon with Artichoke Salsa from that booklet. It was yum-o! I'd like to say I was good and had a salad with it, but no......I just had 2 pieces of salmon:rotfl2: I said I was toying with the idea, I'm not doing it yet!:laughing: But if anyone wants the recipe let me know I'll copy it over.

Tonight is another freebie insert. Walmart sent out Knorr Side Plus samples and I'm doing the Asian noodle salad that came with it. If anyone wants that one let me know.


Can you even imagine 2 whole weeks without even the thought of having wine or Rosa Regale!?!:scared1:
