I want to hear more about your trip!! How old is she now?
We're still thinking about going next August when Lily will be 1.
Before I was always one of those people that would "NEVER" take a baby to Walt Disney World; Of course, that changed when I started getting the Disney itch. Isabelle is 3 1/2 months old, and was such a trooper at Disney. Our flights there and home are only about 2 hours. She didn't cry at all. I just made sure to feed her while we were taking off and landing. In fact, on the flight down, I didn't even feed her while we were landing because she was asleep.
Here's the real kicker that shocks the grandparents, we didn't take her stroller to the parks at all (except for the first 1/2 day).

We had taken a small umbrella stroller (which did come in handy at the airport), which we were only going to use on the Behind Seeds Tour, but she didn't want to be in it b/c it doesn't recline and she won't sleep in it, and we just ended up carrying around an empty stroller that first day while at Epcot. Isabelle spent 90% of her time at the parks in my Peanut Shell baby carrier (a pouch style carrier that is worn over one shoulder). It looks so tight and uncomfortable, but she LOVES that thing. She was quiet and content, and slept often. I also liked that the Peanut Shell protected her from the sun and breeze, and people touching her / sneezing around her.
I only took advantage of the Baby Care Center once, and that was to feed her while my DH and friends rode Test Track (since the baby center was nearby and air conditioned). Another lifesaver was my UdderCover. I can feed her anywhere and with ease while wearing this, and not have to worry about a blanket falling off since it straps around the neck. It's also nice and long, so I feel like it covers around to my back and stomach area so it's not exposed to everyone to see. I planned her feedings corresponding to rides / attractions that were a bit longer such as Hall of Presidents, American Adventure, TTA, Spaceship Earth, etc. We were going to do the baby swap with our friends so DH and I could ride some rides together, but it was more of a hassle to get her in and out of her Peanut Shell, so I sat out the rides with height restrictions.
Here's a tip to any moms (or dads) traveling to Disney anytime soon with a little one:
The baby care centers only carry Nestle brand formula if you formula feed, and they only carry size 3 and 4 Huggies. I had shipped down diapers since Isabelle is still in the 1's, and wears Pampers (not to mention, I didn't want to pay the price there, as I'm sure they're more expensive on property). I also brought along the single serve Enfamil packets for the times it was more convenient to give her a bottle instead of feeding her myself (like if she got hungry when we got to a restaurant, or when our food arrived, etc.).
If you or anyone else has any questions about taking a baby so young, feel free to ask, and I'll do my best to help out and answer anything.
