The DisFort's Chit Chat Cafe

Getting caught up from yesterday.

Here is my morning cup of "joe" (I don't drink coffee except when I'm in Europe).



Plans for Wednesday had us doing something that evening so I did my Blackstone griddle cooking at lunchtime. It was another shrimp-in-a-sauce recipe from home (burned out on those now) but it turned out better than any prior attempt. This one had a lemon-garlic flavor and I threw in some asparagus for variety and color. Turns out converting home recipes for a camping griddle takes more prep and planning - at least for me.



Got the sauce going, put on the 'gus (thicker stalks), and some leftover mushrooms.



Throw the shrimp on -



Mix everything in the pot with spices and parmesagn.



It was very good.



Kris, I would offer that these asparagus were "Bart-Man' quality. That was my goal anyway.

Today is our last full day here. Gonna run up to Foley and look for some khakis and other last-day things to do.

One of my new favs has been griddled asparagus. Squirt some olive oil down throw them on, drizzle some mid cook/turn. Then some salt and pepper at the end. If I am feeling fancing a little bottled balsamic glaze (goes well with seafood.)

I do find that griddle adaptations require most of the prep to be done before I start cooking. Unlike at home when I can continue some prep while cooking. In some cases I have made sauces ahead of time, then reheat so I can toss or pour it over the meal when we are camping to cut down on some of the more complex meal prep.
 
No luck on khakis today as FYI.

However, on the way back to GSP, we were hungry so we stopped at Skyliner Diner for lunch (sorry no food pix) and topping off the gas tank before getting back.

After a little email time in the shade, I ambled down to @rocketmom and DH to take a close look at their bike rack and ask stupid questions.

Since the sand was running out of the hour glass, I wanted to get out to the beach with my new kite and it performed quite well.







I was at the big Beach Pavilion and there were still many folks out there about 4pm.









And closer to the water:







I think the high today was 77F and high UV with a yellow flag flying for surf conditions.

Back at the campground,

A few more photos, eating some leftovers for dinner, getting the TV hitched up to the camper for a quick getaway in the morning, and we'll hit the sack early and leave out early.









Only one bad weather day out of eight so not bad at all. We'll be in this campsite about the same time next year. And while I will likely bring the griddle again, I'm gonna cook some steaks too.

Looks like you had a good trip. Loved your shrimp on the Blackstone Ideas.
Side Note. I have followed your " GRANDS" style biscuits on the griddle idea. I used a disposable Roasting pan as a cover while on the baking rack. It worked pretty well IMHO
Side note 2. Did up a Batch of Cracker Barrel Pancakes yesterday. Did a bit of experimenting. Replaced the water they call for, with PLAIN Club Soda. Result was some super fluffy pancakes. Added a Tablespoon of vanilla and got a good flavor

I do have to announce that I was able to grab an RV site in Jupiter Florida next March for Cardinals Spring Training! West Jupiter RV Park. It is one of the many places I started calling in January just to be told they were booked or didn't take reservations that far out. This place asked if I wanted to get on a waiting list and today my number came up. This campground is about 15 minutes from Roger Dean Stadium and should be perfect. I don't think the girl that called me knew where I was from (although the phone number area code may have been a giveaway), but she was originally from St Louis and has season tickets to the Cardinals games in Florida. Not sure if that helped get a site, but I'll take it either way.

I get to do some toy car building for my nephews gift. We decided to get him a Lil Tikes Cozy Coup because "Racecar!" of course. :)

its so nice out im split between doing nothing and relaxing at the end fo the day and getting started on the truck to see if the front shocks will comply with being removed. Not as worried on the rear shocks as there is a lot less rust to deal with then the shock tops of the front.
 
I knew last Friday it was done but I could not risk any issue so did nit post till I had it home. Really wanted to test run it but work is pretty busy for both of us, going to take it out on June 10 about halfway to Chattanooga to run it through its paces. Then up for the Harrison bay meet. We have a packed May. Bert did say it drove very nicely on the way home. I tailed in the Prius. Whisky spent the day at daycare which was a great idea. We got some errands done. Then dinner and wine on the balcony. Bert is struggling with his allergies though.
 
Kris, Bert and Whiskey. Congrats on getting your rig back. Waiting on parts for ours to come home. The parts for the issues we reported last August came in while we were at Disney in Dec/Jan. Still waiting on parts from issues that developed while we were there or on way home. Just Hoping all the issues are resolved before we are going to Cape Cod in June.
 
If I remember accurately from previous get togethers at the Fort, some of you are big fans of The Curse of Oak Island. Oak Island is approximately a two hour drive from our home and we were fortunate to have a visit last summer with Rick at our Farmstand. Perhaps any eagle eyed fan may have noticed him sporting a familiar hat in a couple of episodes this season.

Very cool Boomer. What episode was this in?

We are big fans of Oak Island. I think one of our first big trips after we retire will be a swing up to New England and Nova Scotia. We've never been up that way. You may have the train running by then.

He has worn the hat in a couple of episodes, I believe episodes 18 and 20. Would love to have you swing by if you ever find your way up to our neck of the woods. Hoping to have the train running by this fall.
 
@Teamubr So glad you got to see @MrsPAHunter!!!!!! I am hoping her trip went well.

Storms are on the forecast today, gonna have to see if they come about or not. Sadly the rains we could have used for the past month are trying to arrive att at once on Saturday. There is over an inch of rainfall in 24 hours forecasted. With any luck it will be a slow soaker, rather then 1" in 15 minutes.

We didn't get the water heater swapped, but did seem to get the old one working and not leaking. Jenn said once she was back home (she is now) she would try getting on here a little more. She is doing well and it was great to see her and Chris' sister.

Well if its working that is a plus! I hope to see her post some more. Was jsut thining about her and Chris. Next trip is French Creek State Park take 2. This time we hare hoping for mothers day without inches of rain. The original plan for a trip this weekend got postponed, got too much other stuff going on.
 
Apparently you can camp at Disney for under $50/night.

Disneyland Paris... In the parking lot, but if only there was a cheap way to get the coach there.
