The laundry is progressing, one folded, one in dryer and one in washer. I also did a workout video so that is overwith for the day. Now if they would just cancel snowboarding I could stop worrying about that. The mountain hasn't updated their website since yesterday. I can't imagine that they got anything but the rain that we are getting. It isn't a very high elevation.

Sounds like your day is off to a good start, other than the whole snowboarding fiasco. Hopefully you'll hear something soon.

I have a load of wash going, did the grocery shopping, and meal planning for the week. I'm making the shepherd's pie tonight and then I'm preparing enchilada casserole for another night. I'm going to cook and shred the chicken for it, so when I get home from work all I'll have to do is layer and bake it.

Sounds like you're off to a good start too. I hate meal planning. Thankfully I work tonight and Thursday night so Chris gets to meal plan. I already know that Thursday night is pizza night, the boys look forward to it :)

Now I'm going to sit for a bit before picking up Alyssa and going to ballet.

I just checked my ressies through DVC's website and it looks like my waitlist came through for OKW. Now I don't have to split my stay between OKW and SSR, for one night.

I'm getting excited!!

I had to look at it a few times. It really looks like the kid was doing something to Tiggers back & his arm was wrapped around Tigger's in a strange way.

I watched it again, too. I really wish that it was larger and better quality. I also wish that we saw more leading up to and after the incident. From what I can see, though, I'm totally with Tigger on this. The kid definitely appears to be up to something. Even the father said that his first reaction was to blame his son for doing something to Tigger. I have a 15 year old ds. If Tigger were to haul off and smack him without warning like father and son are now saying, I would never think that ds did something first. If the father thought that then the son must have a history of acting like that. At the end of the clip, Tigger and the boy appear to be shaking hands and everything looks fine. Sometimes I don't know what goes through people's minds. I wonder if the supposed neck injury kept the teen off all of the rides. I hope that this goes nowhere and the the father ends up feeling embarrassed.

:thumbsup2 :cool1: :cool1: That is awesome. It will make your trip a bit easier.

  Snowboarding is cancelled for today and possibly for next week too. There is no school next Monday due to Martin Luther King's Birthday so they don't want to have the kids go to snowboarding. They may have to have it if there is so as there is no way to tell when or how much snow we will get this year. Our economy is really hurting with the ski areas being closed or open with limited access and there is no snowmobiling at all. this is the 3rd bad year in a row. I'm sure some businesses will wind up having to close because of this.

CBR! Of course, that has nothing to do with the fact that I'll still be there until 3/4 so could run across you if you are at CBR! :lmao:

Oh, I didn't realize you would still be there at that time! I thought you were going to be gone by the end of Feb. That would be cool if we could meet again! :goodvibes

The food poisoning we got on our WL trip was not from the WL itself (at least we don't think). The likely culprit was the Sci-Fi Dine-In - DH got SUPER sick (had to take him to Celebration Hospital in the middle of the night), and I got sick (though not as bad) while we were at the hospital. Needless to say, it was not fun! The people at the WL though were awesome to us while we were down for the count - helped us get directions to the hospital (they wanted to call us a cab), called the hospital to make sure they took our insurance, Room Service made all kinds of bland food for us when we could start eating again, and Mousekeeping would always call and ask what time we wanted them to come by and change our sheets, etc., and then they would come and be in and out so we just had to hang out in the laundry room for a few minutes (it was the closest public space). The CM's there were just fabulous - unfortunately, we just now associate the WL with being sick. I thought maybe a good trip could supplant those memories, though.

Channon - thanks for the CSR suggestion. We might do that one day, but just don't feel the urge at this time. Since we live in Texas, I already see more than I care to of that type of theming, and it's not my style to begin with.

That is terrific!

I just saw a robin in my backyard... is spring really almost here?!?!? Or did it never leave?

Could you post the enchilada casserole? Sorry if it was already posted but I must have missed it..sounds yummy.

Here you go. This is Glynis' recipe from the WFD thread. I'm making it with chicken instead of beef, and I left out the corn.

Enchilada Bake

1 pound ground beef
1 1/2 C. frozen corn
1 can enchilada sauce
1 can chopped green chiles, optional
6 oz. pkg. corn tortillas cut into strips
shredded cheddar cheese

Preheat oven to 375 degrees. Brown ground beef in large skillet until no longer pink. Drain. Add frozen corn, enchilada sauce, and chiles. Cook about 5 minutes. Layer 1/4 meat mixture in a lightly greased 8 inch square baking dish. Top with 1/4 tortilla strips. Repeat layers 2 times ending with meat mixture. Cover with foil and bake for 40 minutes. Remove foil and spread cheese on top. Return to oven for 5 minutes or until cheese is melted and bubbly. Serve with sour cream.

Yay for not having to move! :cheer2:

Love  DVC. I made my last night's worth of reservations for our Dec. trip this morning - got all 5 nights without a hitch - very exciting!

Thanks!

Dana loves mexican, so I am going to try this.

It's snowing here today! FINALLY! I hate the snow, but goodness, it needs to snow now so it doesn't snow in the spring! It's almost like we need to add a month before October to even the seasons out!

Well, in two days I have to teach 10 people about how to buy a Disney package and enjoy their time there...anyone have any suggestions on what to "sell"? My powerpoint goes into detail about the parks, hotels and types of packages - I'm wondering if I should remove Adventures by Disney all together (only three slides) and talk about Fastpasses and the touring the parks more. And I'm still waiting on a box of brochures to be delivered. Apparently no one told me we are down to 4 brochures - and the TA that orders brochures always forgets about Disney - go figure - so of course it's my fault...so if you were traveling to Disney for the first time - what would you like to hear about?

Hi Chanon,
Thanks again for helping with the trip for my daughter. I would put a ticker in my signature for it but I'm afraid she might see it. I have to wait 10 more days before I can purchase the tickets for Thunder.

If I were traveling to Disney for the first time I would definitely be interested in transportation, how ME works and how to get back and forth from the parks. I would also like someone to explain the pros and cons of the Dining plan, it works great for the two of us, actually it's more than enough, but with the plan I am more adventurous about trying new things. We didn't go with the plan when we took the large group, we went the more economical route, brought breakfast foods and snacks from home along with a cooler for drinks.

Good for you! I wasn't really minding it, and it would have given me a chance to see SSR. But now that I don't HAVE to do it, even better!

One more recipe request please? Shepards pie if you have? Thanks. I have to start cooking more. (new years resolution, cook more at home, eat out less)
