I am a Jerzy girlie and just *JUMP* at the chance to get this southern breakfast meal anytime I can get it. Any tips for the best spot at WDW for it?

It was more like white, flavorless Jello. It was really gross. At Maya Grill, the gravy had sausage pieces in it and was creamy without being so Jello-like it could stand up on its own!
They also serve biscuits & gravy at one of the stations in the Pepper Market at CSR. I didn't eat there, though, so I cannot attest to the authenticity.
