The All-New What's For Dinner Thread!!(recipe index in OP)

I promise to catch up later...busy cooking for Tom...thanks for the bday wishes! I am taking pics of everything too. (Practicing for Disney).

Sheryl, Here goes:

Here is my Tomato Sauce/Gravy recipe (makes 3 - 4 family servings...great to freeze):

4 oz salt pork, cut in 2 or 3 big pieces
1 lb country spare ribs
6 - 8 sausage links, I like a mix of hot and sweet
meatballs (I put mine in raw to cook in the sauce, but precooked can be added)
1 large onion, finely diced
6 - 8 cloves garlic, crushed
2 tsp red pepper flakes
2 bay leaves
1/3 - 1/2 cup chopped fresh parsley, dried is OK too
1/3 - 1/2 cup chopped fresh basil
1 TBS dry oregano (I never buy this fresh but you can)
2 bay leaves
6 oz tomato paste
2 28 oz cans crushed tomatoes
1 28 oz can puree
1 28 oz can sauce
water
salt and pepper to taste

Brown sausage in a pan and set aside (does not have to be cooked through - they will cook more in the sauce).

In an 8 quart pot, heat 1 - 2 tbs olive oil. Brown salt pork for about 5 minutes. Add ribs and brown on all sides for about 10 minutes. Reduce heat to medium/low.

Make room in the center of the 8 qt pot and add onions. Cook for 3 minutes. Add garlic and cook for another 3 minutes. Stir constantly.

Add paste and "fry" for about 5 minutes. Add 1/2 cup of water and bring to a simmer. Add crushed pepper and 2 bay leaves.

Add all other tomatoes and 1/2 - 3/4 can of water, stir. Cut sausage to desired size and put in sauce.

Cover 3/4 of the pot with foil and simmer for at least an hour (2 - 3 hours is better). Stir every so often.

At this point, taste to see if salt is needed and discard salt pork (do not over salt since meatballs will be added later). You can remove the ribs as well. This is your choice. The rib meat starts to fall off the bone after a while and is really yummy. Just make sure to remove the bones.

Add parsley, basil and oregano. Stir. Simmer another 1/2 hour. Add meatballs and gently simmer for at least 30 minutes.

Then its ready to serve

I finalized my dinner menu -- grilled swordfish with a pineapple salsa, fried rice and green beans. Now I have to go make it!

Kathy- I sure will add some prayers for this sale. When I was ready to part with my Mom's house we had some issues with the buyer, the appraisal and then the deal fell through. I asked my Mom to handle it and I kid you not....the whole thing came together. I have dumped more than one thing in her hand to manage for me and she has taken care of it.

Sheryl- I have made Buddy's aunts cabbage many times. It is wicked good!

Buddy would take tuna or chicken over stuffed cabbage any day though.

Gretchen- I saw Aimee's picture of the zip thing. Now I have to ask.....Hailey does that???????????? :faint:

Laura- My sister took Kim's door down when she "somehow" made a hole in it. Kim was around Liam's age. Gail was furious and then Kim said "It's just a door." Well she came home and found tout that if it was just a door than she did not need it. Now Kim started that unpleasant teen girl thing when she was born so her reaction was not good. She took quite a while to earn that door back. :rotfl2::rotfl2::rotfl2:

Thank you all for that Anniversary wishes. Now it is not a secret that Buddy has a few little quirks. He came home a few weeks ago and said that he found a way to kill two birds with one stone. WE had been invited to a retirement party June 13th so he figured that was a great way to take me to dinner on our Anniversary :rolleyes1 Good thing I already decided to keep him around but Father's Day is just around the bend.......I may see Shepard's Pie oe beef stew on the menu :lmao:

Yeah, the safety measures are enormous. You're about 100 ft up in the trees on platforms. You have a helmet on (tight!) plus this climbing gear. You're always hooked onto something so if you step wrong and fall off, you just dangle.

When I get mine all downloaded I'll share a pic of two.

You do it about 1.5 hours, and you also walk on some bridges are were scarier than the zipline to me.

I can't wait to see your pictures. It looks like a lot of fun.

Yay! That's good news! I hope you find something to help with your allergies. Liam takes Claritin and Singulair (that is prescription). The Singulair helps keep his chest clear.

If you're mean, I am too. I told Liam the same thing. However, he knew I would do it, so he doesn't slam the door anymore.

Laura, I had no idea there were so many of us allergy sufferers who were having to take more than one medication at a time. I thought I was just strange. And Patrick now knows I mean exactly what I say. This was in the first 6 months Kenny and I were married and he was still testing. Although sometimes I think he starts testing again, just for the heck of it. It is nice to know I'm not the only mean parent. ;)

Not at all, the one in our yard was low enough that I could reach the bar if I stood on my tiptoes (and I'm 5' 8") if Hailey wasn't on it and I could reach it (and her) easily if she was on it. But it is the same principal. A quick ride provided by gravity. I do think she would love the canopy zipline though. But I'm not sure how she will feel about the tight helmet. We had to give up horseback riding because she refused to put the helmet on.

As for Buddy's bright anniversary idea, I say if he goes through with that, then the gloves should be off. Shepard's pie for Father's Day dinner and if you need a recipe for a broccoli slaw that I have found to be universally hated by men but liked by the women, let me know. We have to stick together. ;)

Tonight's dinner was ok I thought, but Kenny really enjoyed it. He'll take the leftovers to work tomorrow.

And I have great news. It looks like Kenny's mother is doing much better. She now is able to stand some and is able to cook for herself. I didn't mind doing it, but it will be nice to only have to prepare one meal for each day.

I laughed at the story of your niece. It is amazing how quickly they learn how important that door is. Fortunately for me, it only took Liam one time to contemplate what having the door missing would be like for him to start treating it with more respect.

Husbands can be pretty daft sometimes, can't they? When Greg was leaving this last time, he gave all of us gifts. Do you know what he gave me? An exercise book. :furious:

I just tell myself, I am a parent, not a friend. It did kill me the afternoon that Liam's friend said, "Your mom is really mean!" and Liam said, "I know!" :confused3

I am glad Kenny's mom is improving. I hope she is well enough soon to take some of the pressure off you.

I ended up boiling red potatos and smashing them with ranch, bacon, and cheese to make a mini Glynis' potato salad. Yummy. I evidently don't own a potato masher so I used a meat mallet. :laughing:

I head back out tomorrow for mini-camp with kindergarten, first, and second graders. I have some kindergarteners that are counting down the hours until their first "camp" away from mom and dad. We'll do kid friendly food (sandwiches, pizza, pancakes, burgers, and hot dogs) all weekend. That combined with the stuff I ate on that road trip earlier this week and I need to diet BIG TIME!!

An Exercise book :scared1::scared1::scared1: We don't generally exchange gifts except a small one at Christmas but then Buddy always gets me what I want. "Marisa, will you pick up something for your Mom?" Last one was Christmas Eve as she was on her way to my sisters. Thank goodness she always knows what I want :lmao:

Your kids are lucky. You have such fun activities planned for them.

Dinner was good tonight. The place is under new management with pretty good food. Buddy and I ordered the prime rib special medium rare, It came out well done but it was well seasoned and very tender. Buddy thought that it was pot roast. The little Author ate as much as I did. She generally will not eat beef if it is not rare but she enjoyed this one.

Wow, an exercise book. When you add that to the gargoyle book, and what are, I'm sure are other wonderful gifts over the years, you have yourself quite an eclectic little library going there. :lmao: Seriously though. An exercise book? Did it come with an explantion of what he was thinking? :lmao:

And I agree about not being your childrens' friend. It is the much harder road, especially when their friend's parents are obviously not so strict, or in my case, when my step children's mother allows them to do whatever they want. I'm sure it hurt to hear your son agree with his friend, but I'm sure both your children are better people for all your hard work and will grow into better adults. At least that's what I keep telling myself. ;)

Maybe that is why she didn't want to wear it. Honestly, we never thought of that.

It looks like you have the hang of it. I keep promising myself I'm going to figure it out. And your dinner looked wonderful, BTW. That chicken is making me hungry this morning.

Tonight's dinner is going to be hotdogs and cole slaw. I made the hot dog sauce last night because I think it always tastes better the second day, so all I have to do tonight is reheat the sauce and the franks. So the rest of the evening is devoted to laundry. Mostly Amanda's since she needs to pack for camp tomorrow.

Kenny is taking the kids for haircuts this morning. We discovered that Amanda's photo was on the camp's website and we (ok, me mostly) were horrified to see her hair. :scared1: I don't think that child brushed it the entire week she was there. So just in case her photo gets put on this year's website, we are instructing her to brush it every day. Along with the reminder to brush her teeth, use the soap, etc. You know, standard kid going to camp stuff. :lmao:

TGIF,

WFD- crab cake sandwiches with Kathy's Spicy Remoulade Sauce(pg 104).

Be back later to read and catch up. I have to get my grocery shopping done today, because I will be cooking most of the day tomorrow for DN and DgodS graduation bash.

Crab Cakes
1 lb crab meat
2 slices white bread, crumbed
1 egg, beaten
2 tbsp mayo
1 tsb old bay
1 tsb worcestershire
1 tsb dijon
1 tbsp fresh parsley
2 tsp lemon juice

Mix and chill for at least an hour. form into patties and saute on medium heat till golden brown and warm thru.
