She's doing remarkably well considering. She sleeps a lot more than she used to but she still plays, runs, barks, eats and best of all loves me just like she used to.:goodvibes

We had some good food including an Indian dish one lady brought that was so good, she told us it was homemade cheese, I think it's called Paneer cheese :confused:

Yes, it is paneer. It is SO yummy. I know Becky has made homemade paneer before...maybe she will post the recipe, hint hint! ;) I think she also still owes Sheryl a golden curry recipe as well.

Laura, blueberry chutney sounds nice, but I can just hear Ron now if I served him fruit with crab! :rotfl:

I suppose there would be no way to disguise blueberries. Kathy's remoulade sounds great. Good luck to your niece tomorrow!

Lauren -- Good luck to Andrew and the team! 7 PM on a school night is a little harsh. Liam was a bear today. I am sure it is because of the late game Friday.

Gretchen -- I am sorry to hear about Kenny's mom. It is so wonderful of you to be helping out the way you are. I know it must be such a strain on you -- you have so many other things going on -- but I am sure Kenny and his mom appreciate your assistance.

Wendie -- Wow, I am glad your dad wasn't seriously hurt. That must have been very scary for you and Ross. I hope your dad isn't too sore in the morning.

Who schedules these games? I bet who ever it is never had to try to wake a sleepy grumpy kid.;)

If the scheduler spent an hour with Liam today, that person would rethink the late games for the younger kids. :laughing:

Thanks everyone for the good wishes for Liam. He thinks he did pretty well, so that is all that matters. Unlike last year, he is guaranteed a spot on a team this summer. They just do the tryouts to determine placement.

Beck posted our dinner...I guess the Cornell chicken recipe is another one she needs to get on here. John is in China this week, so she should have time to copy them...unless she spends all her time talking to me. ;)

Hi gals!! Sorry I haven't posted lately, the kids and my cakes have been keeping me very busy! Boy did I have a busy weekend. I made 4 cakes which altogether could feed over 300 people! Here are some pics with descriptions!
this was for our Homeschool Organization's promotion ceremony. I made this one and the another exactly like it. I donated the cakes. The cake is Vanilla, and the icing is my special butter cream.

Today it's leftover spaghetti and meatball stoup and bread. I don't remember who on this thread recommended Barilla Plus pasta, but whoever it was, THANK YOU!!!! It is so good, better for you, and it fills you up!

I am running today for coaches gifts. We are giving them gift cards, signed baseballs and pics of the team playing...so I have to pick up everything today.

Quick morning check in--

I have to take my dad to get his glasses fixed today, he is still sleeping, but I bet he is going to be some sore when he wakes up.

I am dealing with some MIL issues....(again) I won't bore you with the details but same ole same ole.

Supper tonight will either be fish with sides or steak tips with some sides, not sure which one I am in the mood to cook just yet. We over slept by about 15 min this morning so I am all frazzled right now, lol.

I will be back later on to check on everyone's day and weekend!

Lauren--Sorry for the tough loss, I send more pixie dust A's way for tonight though!!

Mrs. Kreamer--love the cakes, the hippo is so cute, great job!

I missed Glynis but I am waiting to hear all about that glorious trip.

Wendie- OMG! Your poor dad, poor Ross and poor you! I mean that this is really enough stuff to happen. Now I am in a bad mood after yesterday so if you want to farm your MIL out to me, now is the time. I guarantee she will be kissing your feet after a hour or so with me.

Lauren- Tough loss :hug:

Laura- I agree that whoever schedules these games needs to take the whole package on.

Mrs Kreamer- Please treat us with those cakes often, they are so much fun.

Merle- That was nasty scary weather.

Becky- I know that business travel can be tough but I envy John and his voyages a little. It sounds exciting.

Kathy- I am still amazed at Sammie's progress. It was just a bit ago that she was so sick and now, outside of a little nap...and who can argue with that?...she is doing so well.

Thanks for asking about my PI. It is still here but no where near as itchy. I have a lot to do this week, Dan and I picked up patio furniture from my niece yesterday and walked in what turned out to be a nightmare for her. She was moving into my BIL's house and the tenants at her old apt wanted whatever furnishings, etc she did not want. They told her they had nothing. Well she left them a lot, right down to window treatments my sister made to fit her windows, cleaning supplies and kitchen gadgets. And a lot of furniture. This was a huge house, but a dump.

One of the new tenants arrived just before us and tried to move in before paying all of the rent, she said "no" and he went ballistic. He was still drunk from the night before. He wanted the entire house cleared out. Okay. Landlady wants to have the boys pick and choose, the new drunk has given her a week to "figure it out". "No."

Dan and I helped her clear the entire house out, removed everything, gave a lot of things to the family down the street, and insisted the landlady do a walk through and release Deb from any responsibility. She did not want to but we would not leave until she inspected the house, wrote a release and stated that Debbie would receive her entire security deposit back. She was so upset about the boys that she wanted the house to their standards, not to what it was when Debbie moved in. She told me it was in better shape than Debbie got it but wanted time. "Sorry, these girls are not stepping foot back here after today and they deserve the chance to rectify any issue you have." Long day!

Tonight is WI at WW. I think I will grill chicken (Marisa grills it) and have it with a strawberry salad. Regular green salad for our less adventurous diner :rolleyes1 and a veggie or potato so that Kady has enough to eat.

Nancyg56- How are you feeling? I am one of the fortunate ones that has never had poison Ivy (knock on wood) but DBF usually lands in the hospital when he gets it. I hope you feel better soon

OKWMom-I am sorry to hear about Kenny's Mom. My grandmother is the same way, she would eat crackers for a week before she asked anyone for help! I SO understand what you are going through trying to take care of multiple households, I am helping my mom to take care of my Dad and my Grandmother. Keep your chin up

MrsKreamer- AWESOME cakes!:worship: I dabble in cake decorating myself. I have 5 graduation cakes to do in 3 weeks. They are all going to be the wilton graduate pan. The last 2 nights we have had nothing for dinner. Have had company both nights until after 9pm. I think tonight is going to be marinated steak tips, corn on the cob and a pasta salad for dinner.
 
Scared the heck out of me that is for sure, I gave him hell I mean at 70+ yrs old he shouldn't be playing full on basket ball with an 11 yo!!!!! What the hell was he thinking....I called my brother, but he didn't answer his phone, he must be playing golf, he will call me when he gets in. This is for your upcoming Disney trip? If yes, then I would say you don't need to bring too much--the grocery stores are allright there. One thing that you can do is think about what kind of food you might be cooking, and what spices you'll be using, and then measure out a few tbsp. of those spices to bring down. It's cheaper than buying a whole bottle at the grocery. I buy small metal tins from the container store dot com to transport my spices in. I also always bring my chefs knife because the knives at rental houses are always really dull. I have a plastic sheath that I can snap on to the blade to keep it safe, and I sharpen it the night before we leave.

Thank you, it is for my Disney trip. And I really appreciate the information for the spices. I was planning on taking some with me, but I wasn't sure about the transport. I will look into the containers you recommended. And I guess I can find a sheath for my knife at BBand Beyond or Williams Sonoma. Now I just have to remember what pans etc are in the villa. I've actually been thinking of taking my good saute pan with me. I love that thing, even if my husband thinks they are all alike. :confused3

Maybe that should be a requirement for the scheduler. I cannot believe they would have those games so late. I don't know if I could stay awake myself.

And you're right, as long as Liam enjoyed himself and thinks he did well, that is all that matters. He must have enjoyed it if he wants to play in the summer games.

Thanks to everyone for the well wishes. I wasn't looking for any attagirls, I was just looking to complain a little. I don't mind doing things for Kenny's Mom, she is such a wonderful person, but I have just been a little tired from the extra work. And I don't dare complain to Kenny about it or he would feel guilty. He is already thanking me about every day and telling me how much he appreciates me taking care of his mother.

We sent P off to school today to take the first of his four final exams. He has one each day through Thursday, so my nerves will be shot by the end of the week. I see Kenny and I going through several bottles of wine this week.

Tonight I'm making shepard's pie by request of Amanda. Something relatively easy, thank heavens.

I know how hard it is to manage separate meals for people. I loved my Mom and my Aunt and did not need to make special food so it was not too bad. Cooking additional meals does impact a budget. It is not just an extra portion when considering dietary restrictions, it is a whole new meal. Then the transport. When taken one by one, not too bad. Add it all up into day to day life and I see some overwhelming days. There are a lot of folks like your "busy" family member whose lives are just so much more important. My older sister valued her time an "busy" life so much more than Gail's and mine. What are you going to do?

You'll get through finals, a little liquid courage at your side. :hug:

Keep telling yourself that there is justice in this life....P will become an adult some day :lmao::lmao:and you can enjoy that :thumbsup2BWAAHAHAHAHAH

I'm glad Andrew played well. :thumbsup2 Good luck tonight! These are playoff games, aren't they? I'm curious as to how they work there. I'm pretty sure Liam's team will make the playoffs (they are in 2nd place, despite the losses last week) but I don't know how many games are involved or anything.

Tonight is a skating night, so I'll just be making something for me when we get back. Right now, a fresh mozzarella, tomato and pesto sandwich sounds good.
 
I love the hippo cake, Mrs. Kreamer! The icing job on the second cake is really pretty also.

Tonight I think I am going to test out my new grill. I am thinking of attempting to grill a quesadilla, and I'll make some guacamole to go with it. John sent me a picture of his dinner from Shanghai this morning. I'll post it when I get home. It looks kind of weird, I have to warn you!
 
Cornell chicken

1 chicken, spatchcocked (see below)
1 cup vegetable oil
2 cups apple cider vinegar
3 tbsp. kosher salt (or 1.5 tbsp table salt)
2 tbsp. poultry seasoning
1 tsp. freshly ground black pepper
1 egg

Mix all ingredients except chicken in blender. Pour mixture over chicken and marinate, overnight if possible. Turn the chicken occasionally. Remove the chicken from the marinade and reserve marinade. Grill the chicken over medium low heat until cooked through, turning occasionally and basting with the reserved marinade.* Total cooking time will vary based on the heat of your grill and the size of your chicken. A 4 pound chicken will take 45 minutes to 1 hour.

*To reuse the marinade, make sure you bring it to a boil and boil steadily for at least five minutes to kill any salmonella bacteria. Alternatively, you could make up a fresh batch of the marinade to use as a basting sauce.

To spatchcock a chicken, take a whole chicken and cut out its backbone, using poultry shears or a very sharp chefs knife. Flip the chicken over, cut side down, and press on the breastbone to flatten slightly. Rinse the chicken well, removing any organ-like bits that might be clinging to the cut edges. Pull off any visible fat deposits around the neck and tail of the bird. Chop off the top third of the chicken’s wings. The bird is now ready for grilling.
