Glad you found us again, Tanya. Those enchiladas sound great.

I'm making linguine and clams, garlic bread and salad for dinner tonight. It's not something I would normally make on such a nice day, but that's what Greg wanted.
 
But, I will be cooking, and when I am back I will share photos of what I made with you. For now, here is a picture I took of one of my favorite beaches. You can just picture me sitting underneath this palm tree:


I am so jealous! That beach looks beautiful. Have a safe and wonderful vacation, take lots of pics and we'll see you in a few weeks!

:rotfl: My mother came in the kitchen the other night and was telling me she wanted one they have been advertising lately, I think it's Electrolux :confused:, I said yeah right, waaaaay to expensive. But I did check the Sears website and they have a nice Kenmore for about $550 on sale right now. Has the flat cooktop and a nice big oven that has radiant cooking, so no coil in the bottom and has the self clean feature too.

I don't think you can beat that. It is a lot of stove for a reasonable price. I hate that coil on the bottom of my oven :headache:

Now about those ovens. It isn't the coil at the bottom that bothers me so much, it is the floor underneath the oven that drives me crazy. Ya'll might remember me complaining about my kitchen floor being uneven. Well, in the middle of all the craziness that was tax season I took leave of my senses and decided to make my husband a birthday cake.

What I was thinking marrying a man whose birthday was the day before the tax deadline I'll never know, but anyway, I decided to try my hand at his favorite cake ever - my sister's strawberry layer cake. White cake, baked in three layer pans, each layer split in half, frosted with whipped cream/powdered sugar frosting with sliced fresh strawberries in between each layer. Anyway, I baked the layers and they came out just fine (a miracle in an of itself), but they were ALL lopsided. I split the layers and literally put the cake together by trying to match up the thick side of one layer to the thinest side of the cake (if that makes sense). It all worked out since the cake didn't fall over, but boy was it a royal pain.

Babbling. I know. But I did decide on tonight's dinner - creole shrimp bake. Hubby's request. Like Laura, this would not have been my choice on such a warm day, but I couldn't come up with anything on my own, so......there you have it. Creole shrimp bake it is.
 
Thanks again. I probably won't be cooking this weekend, but I am already craving these enchiladas! Yesterday, at the grocery I picked up some of that totally fattening but delicious Mexican Sour Cream & some organic heavy cream. Noo these enchiladas won't be figure friendly at all, but I'm sure they will be YUMMMY! I'm thinking asiago cheese too! So I am definitely going to fix these early in the week! :goodvibes

Yummy!! Asiago cheese sounds like a great idea! And that Mexican Sour Cream and the organic heavy cream... drool ... I can feel the calories taking up residence in my thighs and *I* haven't even eaten it yet! :lmao:
 

Once again, kudos to Kathy and her creamy cajun chicken!!! I made it without the green onions, since my family doesn't like them, and it was so yummy! The kids ate the entire skillet!!! Love this recipe!!!

I also have to rave about a new cookie recipe I tried. I love to read, and had a series of mystery books suggested to me. They are the Hannah Swenson mysteries, and they revolve around a character who owns a cookie shop. Recipes are included in all the books. I had all the ingredients on hand to make "Hannah's Bananas" and they are a HIT!!!

Here's the recipe:

Hannah's Bananas

Do not preheat oven - this dough must chill before baking

1 1/2 C. melted butter (3 sticks)
2 C. granulated sugar
3/4 C. mashed very ripe banana (2 medium or 3 small)
4 tsp. baking soda
1 tsp. salt
2 beaten eggs
4 C. flour
2 C. finely chopped walnuts or pecans
1/2 C. granulated sugar (for later)

Melt butter in a microwavable bowl. Stir in the sugar, beaten eggs, baking soda, and salt. Choose bananas that have black freckles on the skin so they're almost overripe. Mash them until they're smooth. Add the banana puree and mix thoroughly. Mix in the flour and then the nuts. Cover your bowl and refrigerate it for 4 hours (overnight is fine, too.)

When you're ready to bake, preheat the oven to 350 degrees, rack in the middle position.

Roll the chilled dough into walnut-sized balls with your hands. (This dough is quite sticky - you can wear plastic gloves if you like, or wet your hands slightly so the dough won't stick to them.) Put 1/2 cup white sugar in a small bowl and roll the balls in it. Place the dough balls on a greased cookie sheet, 12 to a sheet. Press them down just a little so they won't roll off when you put them in the oven. Then return your bowl to the refrigerator and let it chill until it's time to roll more.

Bake for 10-12 minutes at 350 degrees, or until they're lightly golden in color. They'll flatten out, all by themselves. Let them cool for 2 minutes on the cookie sheet and then move them to a wire rack to finish cooling.

These cookies freeze well. Roll them up in foil, place the rolls in a freezer bag, and they'll be fine for 3 months or so, if they last that long.
 
Oops! I completely forgot to post dinner tonight.

We are having macaroni and cheese pizza. Dessert will be more cookies. I forgot to mention that this recipe makes a TON of cookies, so be prepared!!!

Lauren - How are you my friend, haven't heard much from you today?

I've been having a toothache all day. It's funny though, it's a tooth that I just got a filling in about three weeks ago....anyone ever had a filling go wrong?
 
Had a good dinner, grilled things on the grill tonight. I had chicken that I marinated in Catalina dressing, asparagus with proscuito and I also grilled some leftover boiled potatoes.
 
I went to the store, bought tons of food, and then decided I didn't feel like cooking! =)

We went to Potbelly's for sandwiches and chips. Then to Braum's for ice cream. BUT, I did really well and got a junior cone with frozen yogurt instead of ice cream. I was so proud.
 
I am popping in for a very quick second....have not had time to catch up this week...I did notice above the very exciting ticker that we are all going to be "AUNTS"!!!!! My congrats to you Glynis.

I am exhausted and am heading to bed...Kris and I are very sad. We received the call today that one of our dear friends is hours away from losing her fight to breast cancer (well, what started out as breast cancer 9 yrs ago, and is now full body spread cancer) We are very close with David and Becky, we just clicked the first time we met, and just loved each other. Becky is only 40yrs old. Their children are 9 and 12, Ross is right in the middle, so they all get along great. We went over tonight to say our goodbyes to her. She is on morphine at home, she hasn't eaten in 4 days and only responds in moans to Davids voice. It was a shock to see her looking 80 instead of 40, she is yellow from cancer that has spread to her liver.
They have been through more in their time then anyone should ever go through. She has given "it" a hell of a fight, she was only given 9months to a year to live almost 9 years ago. They are the nicest couple you would ever meet, I can say that I have never in my life EVER met anyone that was like these two.....they are amazing people, and it is just so damn wrong that this is the card that has been handed to them in life.
She wasn't expected to live through the night last night, so we are now on borrowed time.................if you could find the time for a prayer that Becky goes soon and in peace. I will find comfort knowing she is free of the pain, my mom knew how much I love Becky, so I am sure she will be keeping her eye out for her for me.

I will try to catch up this weekend, tomorrow I am going to be cooking a bunch of dishes to bring over to David and Beckys, they have a ton of family coming in and out, and David asked if I could help out.

Big hugs to all of you....I hope that everyone is doing well!!!

I am OK...I think I am feeling better. :hug: I wasn't around much yesterday since we started tackling the yard projects. I was out there almost 8 hours and not finished. I like having alot of land but I do not have a green thumb.

Kathy - Laugh all you want honey. I don't mind. Really, it was pretty funny. As for your tooth, Janice may be right and it may be a high spot. However, my worst dental experience came just when I found out I was expecting. I went to a new dentist and he did the filling. Long story short, he did a terrible job and I ended up having to have a root canal five days before I gave birth.

You should have seen my swollen, toxemic, rear end waddling into the endodontists' office. Since he had to speak to my OB prior to the procedure to discuss which pain medications wouldn't cross the placenta, he also knew how far along I was. Anytime I would shift a little (you remember the full bladder feeling all the time) or groan a little, this poor man would turn ash gray and ask if I was ok. He was so scared that I was going to have the baby in his office he got me in and out in record time - and that included a potty break in the middle of the procedure.

Wendie - Hugs and prayers for your dear. I'm so sorry for your impending loss.

Lauren - I love macaroni salad but have never tried making it. Would you share your recipe when you get time?

Tonight Kenny and I are going out for dinner. Actually, we are having old people date night. The babysitter is coming at 1:00, we are driving to the beach, going to Sam's Wholesale, hitting Target and Bed, Bath and Beyond, and then going to a 3:30 movie. Afterwards, we are going to dinner at PF Chang's. There I intend to stuff myself with lettuce wraps.
 
I am proud to say I have officially gotten over my fear of the dentist, it's really not as bad as I convinced myself it would be. Of course I was forced to go by falling and breaking my front tooth. It didn't take long to get to the dentist after that. I don't consider myself vain, but a broken tooth is to much for me.
Anyway, after all this dental talk, dinner last night was leftover stew, tonight I'm going to my parents house for dinner. Tommorow I have to work all day but I'm going to try a recipe I saw in the Martha Stewart Everyday Food magazine. It's boneless, skinless chicken stuffed with brie and spinach. We'll see how it turn out. Enjoy you weekend everyone.
 
I forgot I wanted to remind everyone, I think this tuesday is free scoop day at Ben and Jerry's. We have so many local ice cream shops, this is the only time we go there, but it's always a fun time.

I had a really bad experience getting veneers years ago...the temporaries were really ugly, fell off and hurt like a SOB, then I got the veneers and they were not to my liking and then they did not bond them right and I wound up getting a piece of pork chop stuck between my real tooth and the porcelain!!! :scared1: Not a memorable experience but I have to get them redone soon so I guess I'll be going through all that again...:rolleyes:
