The All-New What's For Dinner Thread!!(recipe index in OP)

Thanks for all the compliments on my cakes. I will post the one I did tonight later.

Dinner tonight was leftovers for the boys and DH. I went out with my cake class to Nacho Mamma's. The food and service was good and the prices were very reasonable. 4 of us ate for $12.50 a piece including tips. I had the Steak and Blue Cheese wrap. It was so yummy. It was fajita steak(skirt steak), fresh baby spinach, blue cheese, avocado, and roma tomatoes, wrapped in a tortilla.

I have no clue as to what is for dinner tomorrow, because we are going on a field trip with our homeschool group, and when I get home I have to start making a cake for my 5 year old cousin's birthday party on Sat. So I can already tell this is going to be a junky weekend!
 
Morning all!

I am going to my mom and stepfather's house for dinner tonight. We are having ham, potato salad, broccoli and carrot casserole, and I'm not sure what else. My grandmother will be there (she lives next door) and she is bringing a chocolate cherry cake.

I mixed up a pitcher of peach sangria last night! Oh yay!
 
Morning all. Last night ended up being the leftover Kathy's Bolognese sauce (yummo!) and spaghetti. DH was in charge of dinner--so warm up leftovers it was! Not sure about tonight (what a surprise). Fridays are normally pizza night, but DH is in the "let's not spend money" phase right now. So we'll see!
 

Good Morning WFD folks!!!!!

Shopping day with my Mom. We will probably have some kinda fish at her house.

So bummed out, DH is working 10 hours of OT tomorrow. Nice $$$ but I hate not having him on the weekends!

I have not been cooking anything really creative lately, I admire all of you and your fabulous recipes. Right now I am brainstorming, we have 3 family graduation parties this year & I want to bring something different to each one.

Big Merle- I remember when my stove went down to one burner. My DH said it was time for me to go get a new one- I think he was getting hungry- anyway I got one that was not too expensive but not the bottom of the line-and he was shocked at the price. He thought I could get one for under $300! I told him those stoves were called gas grills :lmao:

Tonight we are having breakfast for dinner. I made a roesti cake last night that I will heat back up, and then I will poach some eggs and I am even making John a small steak because hey, once we are out of work today we are on vacation!

I'm going to be off the boards for the next couple of weeks. Internet access on the island is slooooooooow and not worth logging in for. Uploading a picture would probably take about an hour! But, I will be cooking, and when I am back I will share photos of what I made with you. For now, here is a picture I took of one of my favorite beaches. You can just picture me sitting underneath this palm tree:

Lovely cakes, Mrs. Kreamer. I can bake, but cakes...not so much. My cookies are famous worldwide though (wherever DH is stationed ;) ).

I'm sure they are. But I'm impressed that you can ship them and still have them manage to be good when they get there. I am baking challenged as I have said before and my cookies are not a pretty sight.

:rotfl: :rotfl: Poor Buddy. Between the girls' diet and you "nanatizing" his food, the poor man must feel like you are all trying to poison him. ;) Or he is just smart enought to figure out this is the best way for him to have his sandwiches and eat them too. :laughing:

Stephanie - At least your husband has mastered the art of reheating. Whenever I ask Kenny to heat up leftovers, he acts totally helpless, like he's never seen a microwave.


I have no idea what I'm cooking for dinner tonight. Maybe when I check back in I'll have figured it out.

:rotfl: My mother came in the kitchen the other night and was telling me she wanted one they have been advertising lately, I think it's Electrolux :confused:, I said yeah right, waaaaay to expensive. But I did check the Sears website and they have a nice Kenmore for about $550 on sale right now. Has the flat cooktop and a nice big oven that has radiant cooking, so no coil in the bottom and has the self clean feature too.

I couldn't understand why the WFD thread, normally so entertaining, chatty and educational, had gotten so quiet! Hopped over there to post today and....CLOSED... WHAT? Oh yeah, that pesky new thread length rule... SIGH. But I found you guys again, so all is well! :banana:

Tonight for dinner at our house is chicken enchiladas with a white cream sauce. This is a recipe passed down to me from my mom, it is a family favorite. It's not budget, and rather heavy in the fat/calories department, so we don't make it very often.... but boy is it yummy! Sometimes you need a treat after a LONG work-week, right?

CHICKEN ENCHILADAS

Boil chicken. Reserve 1 cup of cooking broth. Alternatively, buy a rotisserie chicken from the supermarket and a can of chicken broth. Cool bird, then pick off all meat and chop it as finely as you would like it. Mix meat with 1 can Ro-Tel tomatoes and chilies (drained), OR one can (also drained) of finely chopped green chilies (if you don't like the tomatoes). You can also mix in some shredded cheese here, if you want your filling to be cheese-y. (Mom doesn't, I do... good both ways.) Set filling aside.

Make sauce:
Whisk together 1 Tbsp flour and 1 cup chicken broth in a large skillet. Cook until thickened and bubbly.
Stir in 1 pint heavy cream and two finely chopped green onions (Tops and bottoms of onions both).
Add 1 tsp salt (or to taste) and pepper to taste.
Bring to a boil, remove from heat.
Stir in one pint sour cream until smooth.

To assemble: (clear a space, and have all your ingredients and your pan ready to go and right to hand... this gets messy LOL)
One at a time (careful! this part gets HOT), dip tortillas into sauce (fully immersing in skillet), then lay in a greased 9 X 13 (or 11?) baking dish. Put chicken mixture in the tortilla, then roll it up. Repeat till either chicken or tortillas are all gone. Pour remaining sauce over top of enchiladas in dish. You may need to use a second pan, usually a 9X9, depending on how much chicken mix you started with and how full you fill your enchiladas.

Bake at 350° for 30 minutes. Sprinkle a couple of cups of grated cheese over the top of the enchiladas, return to oven, and bake another 5 minutes, or till cheese melts and browns slightly. Serve over chopped fresh lettuce and tomatoes, spoon extra sauce from baking dish over top, sprinkle extra cheese on top (if desired), and serve with salsa.

Enjoy, and have a great weekend!

Today is my day off. I slept until 11am, have drunk 2 cups of coffee, and am watching TLC. I made my grocery list last night so I'll head out in a bit to get that and a new garage door opener since mine was stolen last weekend.

We'll have whatever I buy at teh store for dinner :laughing:
 
Hey Y'all,

Sorry I caused some of you to worry! I had to go to traffic court yesterday for that accident in Dec. I was able to get the charge reduced to a non-moving violation but it still cost $160 bucks. I was pretty freaked out though they mix traffic court with criminal court. They were some very scary people there. Then I had to sit there & watch the judge give most of them less than a slap on the wrist. It had me in such a funky mood for the rest of the day.

No cooking here tonight, probably the whole weekend. Our church (& Alexis's school) Fair starts this weekend. So it will be lots of really bad for you, but yummy Cajun Fair food. Fried oysters, fried shrimp, fried crawfish pies... They even do a fried twinkie!!!

Tanya, This recipe sounds wonderful! At first I thought the recipe was going to be similar to my enchiladas but then I got to the sauce! MMM-mmmm! I'm going to have to try that soon. Although I know I won't be able to resist & add cheese. Does the sauce come out white or does it get pinkish from the rotel?

The sauce comes out white.
The Ro-Tel is wrapped up inside the enchiladas, and (I forgot to add this part - BAD me) should be drained first.

Thanks! I realized the rotel was inside, but thought it might blend while baking. What kind of cheese do you usually add?

Just depends on what I have on hand, actually. ;) I have used sharp cheddar, co-jack, and the pre-shredded "Mexican-style" cheese you can buy in the little bags. All work great. I think you could use any kind of cheese your family prefers!

Thanks again. I probably won't be cooking this weekend, but I am already craving these enchiladas! Yesterday, at the grocery I picked up some of that totally fattening but delicious Mexican Sour Cream & some organic heavy cream. Noo these enchiladas won't be figure friendly at all, but I'm sure they will be YUMMMY! I'm thinking asiago cheese too! So I am definitely going to fix these early in the week! :goodvibes
