Hey all! Finally got a moment to let ya'll know that I found my way over! Thanks Lauren for the PM!

Kathy--that bolognese was awesome! DH actually thought it was jarred sauce. I said, "Uh, no, I did it all myself (with a little WFD friend help)" He said I could do that one at least once a week.

I'm so glad you guys liked it, it is really so easy and addictive!!!! Johnny says he loves it because it's "lighter" than a regular sauce so he can eat twice as much.:rotfl:

My mother gained a lot when she quit. She always weighed around 130 lbs and was over 160. When she quit she started eating micro-wave popcorn with extra butter on it every night. She stopped that and started eating Starlight mints and lost all the excess and eventually was able to give up the mints too.

Here is a photo of last night's dinner. Morrocan tagine of fish with couscous with pine nuts, currants, and scallions:

Change of dinner plans. I've been having a migraine all day and DH was sweet enough to call & say don't cook. So he's picking up omelets for us while we watch our beloved NO Hornets play basketball!!!!!:cheer2:

Here is tonight's dinner it was really good so good someone never even talked :rolleyes1

Empanadas con queso

1/2 lb beef sirloin steak trimmed and cut into cubes
1/2tsp cajun spice blend
1/2tsp oregano
1/2tsp salt
1/4tsp pepper

saute in 2tbsp oil and add
1/4c diced onion
1/4c frozen corn kernels
1/4c thick salsa
2tbsp beef broth
1tbsp tomato paste

simmer until thick then spread on a cookie sheet and put in the freezer briefly,don't freeze solid.

1 box frozen puff pastry thawed
1 egg
1 tbsp water

cut puff pastry into 4 circles whisk egg and water together. Put a little filling in the middle of each circle and moisten edges with water fold pastry over and seal. place empanadas on baking sheet coated with cooking spray. brush with egg wash. bake until golden15 minutes

you can serve with noodles Melt 1tbsp butter in small saucepan whisk in 1tbsp flour cook 1 minute gradually add 1c milk whisking constantly until mixed well stir in shredded pepper jack cheese about 1c. toss in noodles.

or you can serve the filling over buttered noodles or rice.

Carissa's funeral this morning was beautiful! There were over 500 people in attendance. It was awesome! At the cemetery, we had a balloon release. All her cousins, and nephews let white balloons go. It was nice. She belonged to a riding club, and they were all there on their horses (including a riderless horse) to lead the way to the cemetery.

Anyway, not too sure what we are having for dinner. I'm not feeling too much like cooking or eating. If you take a look at my siggie, you'll see why!
 
Yum! I love food threads. It helps me spice up my menu. Tonight we are having PB&J on homemade bread that is in the oven right now. I will also cut up some fruit and have some baby carrots on the side. That was supposed to be dinner last night, but I forgot to thaw the bread dough! So, we are substituting our cereal dinner with PB&J, LOL! It's quite adventerous over here, eh?

Does anyone know about Soy Milk that they can tell me the benefits over cows milk in a nutshell?

DISCLAIMER: I don't know much but Kady drinks only Soy milk. A lot of people just cannot digest cows milk, and there a lot of people like Kady who are not necessarily allergic but are so sensitive to it that they get sick. Soy mile had more calcium then milk and the last time I compared the vitamins were higher. She will only drink the chocolate but if I have vanilla I put in Hershey's syrup.

Her Dr is not worried yet about how much she drinks, the soy is supposed to have an effect on estrogen levels so Marisa makes sure to keep him informed about her intake.

Thanks. We're excited! With all our infertility problems, I really never expected to get pregnant without the heavy drugs. Apparently, having the gastric bypass surgery fixed that little problem.
 
I've been spending the day reworking our fall Disney trip. We had planned on going for a long weekend in Sept and then again for a week in Jan. with my sis and niece. Well, we (actually DH) realized that it would be much cheaper if we travelled with the whole crew before my niece and DS turned 3 (gotta love that they're still 2!). So now we're going the last week of August for 5 nights and then just a weekend in January. Can't wait!

My Mom ate peanuts, any kind of peanut. She had one of those little gumball things and those little nuts wee on a constant path to her mouth. Then M&M's. Then any other little candy. After that she started chewing gum. That was worse. Gail and I would get cross eyed watching her chew. We almost wanted the peanuts back :rotfl2::rotfl2:Finally she found those Starlight mints :worship:

Oh Glynis, the ceremoney is making me teary. It must have been so moving. What wonderful news for your family. You have wanted that new little addition and soon he will be here. Is he a he??????or a she???? Now I can't wait!

Let me tell you, to this day I despise those things! :sick: She always carried a quart size bag full of them and always smelled like mint. It was especially bad when we would go somewhere in the car and there was this overpowering smell of mint.
