Yep, the recipe is one of the first I ever posted, so it should be on the first thread. It is ADDICTIVE!

DH got exciting news this morning - may just be the answer to our prayers! He really wants to be a firefighter but it is SO competitive. He has taken the written test for several cities over the past year; we got a certified letter this morning from one of the cities that they want him to take the physical test in a couple of weeks! They took the top 50 test scores, and he was 58 if I remember right, so a few must have not made the cut on the physical test or something. So he gets a chance!

That's awesome news, would that mean you'd be moving?

My family is eating here today and tomorrow since Liam has baseball today and Caili has her ballet recital tomorrow. If you're not all tired of Caili pictures, I will post one of her in her costume. Dinner today is fish chowder, rolls and salad.
 
Hey Everyone,

Did anyone see the turkey burger recipe that Oprah had on this week? Well I fine tuned it to bring down calories (we are ALL dieting in this house) and my family really liked it.
To keep the meat moist a very small dice of Granny Smith apples and fruit chutney (pureed) went into the meat. I bought the chutney at Whole foods it was mango & papaya. I also added salt, pepper & fresh lime juice. The trick is to let the patties set up for 2 hours in the fridge and them I put them on the grill. I served it with additional chutney & a coarse mustard on whole grain rolls.
Something to keep in mind with grilling season finally here.:)

Nope, thankfully! We agreed when we married that he would follow my work since mine is much harder to find. Now this is a city an hour away, the same city we grew up in, but with a work 24 off 48 shift, he won't be driving that daily and never in traffic so it'd be fine. I'm just praying he does great at the physical test!

Some comfort food, this was my favorite meal my mom made

Mom's beef Casorole

2lbs hamburger
1 yellow onion chopped
Garlic to taste
Salt and Pepper to taste
3 cans black olives
1 lb frozen corn
29 oz can tomatoe sauce
Italian seasonings to taste
1 lb elbow macarroni

Brown Hamburger meat with salt and pepper and drain put in a big pot that goes in your oven
saute onion and garlic add to pot
Cook maccarroni to al dente, drain and put in pot (you can acutally use the pot you cook the maccoroni in which is what I do)
add corn drained olives tomato sauce and Italian seasoning.
Mix completely

Bake uncovered at 350 for 30 to 45 minutes stirring every 15 minutes, you want to pull it before the sauce completely dries out.

Serve with Garlic Bread and a green Salad. I like to serve with parm cheese as well.

This will also freeze pretty well as long as the noodles are not overcooked.

This one sounds so good! It looks like something my kids would eat without fighting me, too! I think I'll put it in my weekly menu! Thanks.

Ok, you've intrigued me! Can you post the entire recipe? I only cook with ground turkey, so I would like to try this!

Tonight's dinner is fried tempeh sticks, garlic monkey bread, and vegan chocolate pear cake (I'm making this in the crockpot....I'm hoping it turns out ok).
Fried tempeh sticks:
Slice tempeh into 1/2 inch slices. Score with fork. place in mixing bowl. Separately, assemble marinade: water, soy sauce, garlic and apple cider vinegar. Mix. Pour over tempeh. Marinate in fridge for at least 20 minutes. Fry tempeh in oil until crispy on sides.
 
Turkey Burgers (a hit in our house)
  • 1/4 cup scallions, thinly sliced
  • 1/2 cup celery, finely chopped
  • 3 Granny Smith apples, peeled and diced
  • 1/8 cup canola oil
  • 4 pounds ground turkey breast
  • 2 Tbsp. salt
  • 1 Tbsp. black pepper
  • 2 tsp. chipotle Tabasco™
  • 1 lemon, juice and grated zest
  • 1/2 bunch parsley, finely chopped
  • 1/4 cup Major Grey's Chutney, pureed
***I used a Whole Food Papaya & Mango Chutney
***I am substituted fresh lime juice for the lemon
***Just remember to put in the fridge for a few hours before you cook them, they fall apart very easily.

The coarse mustard was really good on them.......Enjoy!

That's great! I'll be praying too.:hug: If you have an extra prayer to spare I could use one. My parent's house has been on the market since Feb and we've just reduced the price for the second time. We REALLY need to sell fast because Kyle & I are sharing a vehicle until I can afford to buy a new one, which isn't going to happen until the house sells. It's so unfair to him at this time in his life to be sharing a car with his Mom.:sad2:

Awesome! This sounds great! Thanks for all your tips, too! I'm definitely doing these this week. Do you think I could do them on the grill or would they fall apart too easily. If so, I'll just do them on the stovetop.

I did them on the grill but couldn't have it I didn't let them set up in the fridge. When I first put them together I was really worried how "soft" they were, but they worked out great. I'm wondering how the mix would do as a meatloaf.....maybe make a fresh pineapple salsa in the summer.

Getting ready to go to the baby shower. My friend roped me into going although I am really not friends with the Mommy to be. I think she wants me there to make sure things go okay, she has her DH doing to food and set up. She and another girl took the guest of honor to a spa today, it's also her birthday today, and then she is taking her out to dinner while the other girl comes to help finish set-up:scared:

It's being held at their church, the womans DH is a youth pastor so he is having her come over to set up some stuff for tomorrow. My friend is going to ask her to go to the gathering room, where the shower will be, to get her a soda.

Morning all!

I already have the crockpot going with Cheesy Chicken Pasta. I got up early so it would be ready when we got home from church. I did all the prep work yesterday (see long stories below).

ETA: Ok, here we go- long story number 1. We got our mattress yesterday. I got my new sheets on it and everything. My room looks so awesome I may go take a picture and post it for you guys, hee hee. Anyway, we have one problem though. *sigh*

It's too high for me to transfer onto it.

Yes, you read right. It's about 2 inches too high. But I recalled the saleswoman telling me if it ended up being to tall we could exchange the boxsprings for the "half" boxsprings free of charge. So that's what we're going to have to do.

Other than that, it sleeps like a dream!!!!!!!!!!

Long story number 2.

My husband was talking to me a few weeks ago about the rising gas prices. He has about a 30 mile drive to work and we are feeling the pinch. I told him I really couldn't worry about it too much. He had to go to work, you know? Furthermore, I don't drive around aimlessly, and when we are together we try to conserve gas by not driving as much, taking the best route to get places, etc.

Also, he was concerned about the rising cost of food. I, again, rationalized that I don't buy us unnecessary junk, we don't throw away food, I don't look for the most expensive items, etc. Try to relax, I said!

Well, I saw a bit on our local news last week. They did a piece on foodbanks, both here and in other states, including one in NYC. Their shelves are bare. People cannot afford to donate food right now and hungry people are being turned away. That hit me really hard.

So in an effort to contribute, I am trying not to cook every single day and use my crockpot more, my oven less. For example, I am only cooking 3 days this week. Each meal I cook will feed us 2 days, and 2 of the meals are crockpot. Make sense?

I am hoping this helps in some small way. I feel bad not doing anything to try and cut back in SOME way.

Any thoughts or comments, you guys?
 
Lindsay That stinks about you bed. They are making mattress thicker. I noticed some of my sheets don't fit the same. I'm glad the have a box spring that will work for you. 2 inches is a lot. We are also not going to the store for extra stuff making do with what we have in house.

I work for a Union so we see right up and personal how the housing slump is very real.

I heard that historically gas prices go up before a presidential election. I never paid that much attention. This just under $4.00 a gallon is insane.

Tonight is something since my car is not on the same page as me. It thinks it need to go to the repair shop. I could use some major prayers it isn't big $$.:scared:

Laura, Of course we want pics. If I remember correctly, the costumes last year were gorgeous!

Lindsay, I am glad things are going to work out with the mattress. I am try to cook a bit differently too...I am trying to clean out the fridge and pantry. The budget board has a WFD budget thread that I read to get some ideas but can't seem to find any ideas I like. How about cooking things and freezing...buying more in bulk. I have not been to BJs lately but I hear their prices are going down a bit. I am checking that out this week. Cook with less meat more fillers...

Hi All...just a quick update.

Party was nice. All the calzones went as expected. (ever been to a party where you can't stand someone there and it ruins your whole night? Well, that is kinda what happened...let me say I strongly dislike one on my DSIL best friends...she makes me want to puke literally! We left early and blamed DS:rotfl: )

My DN's softball team won last night 4-3... it went into OT. She pitched the whole game and got 5 hits, this keeps them in 1st place still! :banana: She pitches for my old alma matta which makes me very proud.

I will be checking in later hopefully.
