Not yet. I'm hiding my head in shame! I'm actually waiting for my notebook with my "cliff's notes" to be mailed to me. Dad keeps forgetting. My sister is going down this weekend, so hopefully, she'll remember. I've been trying to piece together what happened next from my pictures, but I'm too old! I promise it will get done!

Oh my gosh, don't hang your head in shame!! I just wanted to make sure I didn't miss it!

Every time I go to WDW, I think I'll do a dining report or trip report and remember everything but of course, I get home and it all runs together.

Honey Basil Lemon Chicken

2 tablespoons lemon juice
2 tablespoons oil
1 tablespoon honey
1/4 C fresh basil chopped
1/4 teaspoon grated lemon zest
1/4 teaspoon salt
1/8 teaspoon pepper
4 skinless, boneless chicken breast halves

In a large resealable plastic bag, mix the lemon juice, oil, honey, basil, lemon zest, salt, and pepper. Place chicken in the bag, seal, and marinate in the refrigerator overnight.

Preheat the grill for medium heat.

Place the chicken on the grill, and discard marinade. Cook chicken 15 minutes, turning once, or until juices run clear.

Yum, that sounds good. Was it tasty?


I should hang my head in shame - I ordered pizza and wings for dinner! Since I am staying home tomorrow, I figured it was cheaper to order a large pizza and wings so we could have dinner and both have lunch tomorrow then eating out 4 times. See how I justify my decision? It was damn tasty, I might add.

This is a Berry Shortcake. It's on a chocolate dessert cup that I got from Whole Foods. I added a little Kahlua, they are a little dry this time, blueberries, strawberries and Cool Whip. :cloud9:

Oh and for those of you watching what you eat, the dessert cups are only 100 calories and very little fat. :thumbsup2

I've had worse! :rolleyes1 That is something I would eat, with Blue Cheese dressing for the mozzarella sticks and lots of mustard for the corndogs, when I have PMS.

Kady is back to normal this morning. Actually she is better than normal, she was up early and not grouchy :lmao:, so back to our regular day. We have Reading Camp and then swim lessons. I usually stay at the lake after the lessons because there are some girls around her age and they swim together. I have given up getting all of my summer list done, if I haven't gotten my chores done by 10 Am I am in trouble. I was feeling a little guilty but Buddy was funny, he said it must be relaxing to sit with the others and just watch the girls so I should enjoy it while I can. :thumbsup2 I should cook for him, shouldn't I????

We are going to see his Aunt tonight so I guess cooking is not in the plan. His cousins mentioned getting a bite to eat together so we'll see if he gets out of work in time.

do you make your swiss steak? I've done it in the crockpot the last few timeHow s but the prep is fairly complicated.





I need instructions on how to grill pizza!

We make swiss steak by browning blade steaks dredged in flour , salt , and pepper in a dutch oven. Remove steak and saute a couple of onions cut into sliced rings. Then we add tomato soup, cider vinegar, dash worcestershire, salt & pepper. Add beef and simmer on low. Sorry no exact recipe but boy is it yummy and tender. This is a great winter meal with egg noodles.

Pizza is so easy. Your grill must be really clean, and med/low heat. Oil dough or pizza shell well (last night I used Naan). I do precook veggie toppings. Place dough on grill without anything on it. Cook on one side then turn. Now place topping on and cover grill till cooked. If you need to you can always pop it under your indoor broiler to melt chesse more.
Last night, I did sundried tomato pest, vidala onions, parm and mozz. DH also had pepperoni on his. He raved how good they were. Try it, good luck.

Tom took off tomorrow so we are going to see his Mom. She just had eye surgery last week so I am bringing some food: shrimp cocktail, sausage, peppers and onions (subs), chicken legs, thighs and wings in my famous marinade, tossed salad and some jello and whipped cream for dessert.

Tomorrow night my sister is having a grad party for my cutie nephew and a welcome home for his sister that just came home from Australia.

What a good DIL, here's to her speedy recovery.

Kyle was pretty down when we spoke, he just found out that his BEST friend decided very abruptly to go out of state for college. This boy has a pretty rough home situation and I'm sure he just wants to "get away", he pretty much raises his younger brother and that's just not the way he wants to spend the rest of his life. I feel sorry for the little brother, hopefully the Dad will step up, the Mom is useless.:sad2:

I am sorry for Kyle, but maybe this is what his friend needs, my prayers to both in dealing with the change.:hug:

Aimee- You are going to love the Poly and while there are so many reasons the Monorail is the one that comes to my mind. I think you are brave to do a split stay, I suggested that we do this to my DD and honestly she almost fainted :lmao:. Your little one will like playing on the beach, while the others went out one evening, Buddy and I just enjoyed the ELP while Kady built sand castles. We had requested a balcony but got a patio, connecting rooms were more important to us. Well that was one treat that we did not know how much we would enjoy. The grounds are lovely and our patio was shielded but the plantings so it was almost like an extra room it was so private. You are getting the best of both worlds, my SIS IL loves the cabins for teh space and we love the Poly for the convenience and the amenities.

Yum! Lucky! I have not had crab in a long time.

Another vote for the Polynesian from me! I have not stayed there in forever, but the two times we did stay there we loved it! We had a lagoon view and got to watch the fireworks and the EWP from the room. The rooms are bigger at the Poly than a lot of the other resorts too.

So, last night really did not turn out exciting. I could not remember what I had in the fridge because it turned out a had almost nothing in the fridge! I ended up settling on making panini, and I did not even have enough bread to make two sandwiches! :laughing: I ended up making one on bread and one on naan. I also did not have anything green to put in--so this is a no-veggie sandwich! Good thing I ate a big salad for lunch!

This is the drink I made for John--I did not have one because I did not have enough raspberries!

There are lots of leftovers, which is good because John is working from home today and I know he'll eat them.

I also have to say that every time I make a sandwich I think of Nancy's Buddy! I always wonder if Buddy would like my sandwiches. :rotfl:

Dinner tonight is going to be a flank steak for John. I have not figured out the rest of the menu yet. I am going to go to the farmer's market and see what I can get for vegetables.

No, not scrimmages. The teams are divided into two "pools" and play within that pool and how well they do in pool play determines how they will be seeded when tournament play starts. The higher seeded teams play fewer games and are the home team. So far with one win and two losses we're not looking too good, but we have two more games today.

Here's hoping for no more changes! We stayed there last July and had a great time. And as someone else said the rooms are big. We had a total of 6 people in ours. :rolleyes1 3 adults and 3 kids. We sat out at the beach for fireworks almost every night and there is a great view of the Electric Parade.

And an absolute must if you like grilled cheese is the Adult Grilled Cheese at Captain Cook's. :cloud9:


I cannot wait to have crabs tonight, I haven't had any this year so far.

Glynis, How is Leslie doing? Those mouth sores can be awful! I hope she's doing a little better. Rinsing with antacid (malox/mylanta) half malox & liquid benadryl can help her feel better for a little while, usually long enough to manage eating something. (just make sure she rinses & spits don't swallow)

Merle, That quinoa looks & sounds so good! And that dessert, wow! The chocolate dessert cups from WF, is that chocolate shells or little cakes? What dept would I find them?

Laura, What did you put in your guacamole? It looks so yummy!

Becky, Even your empty fridge meals look wonderful!

Lauren, Are you feeling any better yet? If not, you need to go to the dr.!

My dr appt. went okay. He explained the results of the MRI's, and I have problems with 3 disc/vertebrae in my neck that will probably need surgery eventually. He wants me to try a spinal injection of steroids first. I have to go see an anesthesia/pain mgt. doctor for this. The dr. said it will either work very well & could put off surgery for a few years. Or it won't help at all or it won't last long enough to make the injections worthwhile. They want you to be able to manage with 3 injections per year. So I'm waiting for that to be scheduled & I'll just have to see if it helps. He also said that even if it helps I will have to have frequent MRI's to watch for further deteriation of the discs & spine.

On one hand I'm happy I don't have to have surgery right away. But if I have to surgery this year, now would be the best time to do it. I asked him why not just do it now & get it over with. He said because my condition is likely to repeat itself, so we have to put off surgery for as long as possible. That was something I didn't want to hear.

Bob came with me the dr., so we went wine & grocery shopping after the visit, then out to eat Mexican food. Totally blew the diet, but they have the best mango margaritas!

I have a dentist appt in a little while, so I've got to run. Maybe the chipotle salmon burgers for dinner tonight.

They are the little cakes and I got them in the bakery.

Hopefully the shots work for you and you don't have to have the surgery right away. :hug:

Nancy, That's why I drug Bob with me to the visit. I feel like we've become "the old people" in the family. I used to get so frustrated with his Mom & my Dad, when they go to the dr but couldn't tell you clearly what the dr told them. One of us would have to go with them, to know what was going on. Now I understand! Thanks for the hugs!

Carreta's Grill on Vets! We've gone there a few times & always get a top shelf margarita on the rocks because they have really good tequilas. But it was so hot, so I decided on frozen & fruity. The best Mango margarita I've had anywhere. (as good as the ones I've made at home with pureed mango & anejo tequila) It really tasted like fresh mango & it was so strong I had to take the rest of it in a go cup! (Which I think you know is not typical for me!)

Super fast check in....I know I am far far behind this week...I promise that I will catch up Monday night............This week has been Crazy!! Ross cut off the bottom of his big toe one layer away from needing a skin graft on a field trip with the summer rec program on Tuesday, and that has basically been my week, dealing with it.
This weekend is our big Karate team bootcamp at a semi local campground. I have spent the day food prepping and packing etc. We go tonight to start helping set up, thank goodness it is close enough that Kris and I will come home each night, (I am (ahem) a bit divaish and camping is NOT my thing.....bugs, dirt, no room service or private bathrooms). I do love the whole sitting around the camp fire drinking part, so we stay until the wee hours then head home. Our best friends have a 30+foot camper that they bring, (they love camping?!!?) so we luck out and hang with them and use it like our own, they keep telling us they have plenty of room for us to bunk in their camper, but home is only 20 min away. (like Kris said though, if it was 2hrs away we would have a room at a local hotel, lol) So we will be there until late tonight then back early in the AM, there all day until the wee hours then home for some ZZZ's then back again Sunday morning until 3ish.
Ross is only going to be able to do certain events due to his toe, and I will have to keep cleaning and wrapping it. It is grizzly.
Next week Kris and I are leaving on Thursday for a mini vacation to Bar Harbor just him and I, Ross will go to the inlaws.

My thoughts, hugs, prayers are with all of you. I hope everyone is doing well, but for those who might be having a rough week, extra hugs for you!!!
I will "see" you all Monday evening.

I figured out dinner as long as the farmer's market cooperates. I am going to marinate the steak in soy, honey, rosemary, garlic, and olive oil, and grill it, slice it thin and serve that with corn on the cob, sliced tomatoes on arugula, and some crusty bread. I'll probably grill myself a piece of chicken in the same seasonings as the steak.
