I'm back! I love all of your plans! You are going to have such a great trip. I'm so happy for you!

I'm still trying to think of meal pairings to go with your themed dinner nights. I feel like The Lion King should be something African...maybe some couscous? Although, I have no idea how to make it!

I was thinking steaks, but then my up all night with Shelby lead to brainstorming. So I gotta update now lol

Well I was up all night with Shelby so I had nothing better to do than plan our Disney Movie Nights. Now since I am in the Disney Movie Club, some of these will change, but as of now this is how it stands.

Food: Chips & Fish
Recipe: Ingredients
For the fries:
1 gallon safflower oil
4 large Russet potatoes
Kosher salt
For the batter:
2 cups flour
1 tablespoon baking powder
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
Dash Old Bay Seasoning
1 bottle brown beer, cold
1 1/2 pounds firm-fleshed whitefish (tilapia, pollock, cod), cut into 1-ounce strips
Cornstarch, for dredging
Directions
Heat oven to 200 degrees F.
Heat the safflower oil in a 5-quart Dutch oven over high heat until it reaches 320 degrees.
Using a V-slicer with a wide blade, slice the potatoes with the skin on. Place in a large bowl with cold water.
In a bowl, whisk together the flour, baking powder, salt, cayenne pepper, and Old Bay seasoning. Whisk in the beer until the batter is completely smooth and free of any lumps. Refrigerate for 15 minutes. Note: The batter can be made up to 1 hour ahead of time.
Drain potatoes thoroughly, removing any excess water. When oil reaches 320 degrees, submerge the potatoes in the oil. Working in small batches, fry for 2 to 3 minutes until they are pale and floppy. Remove from oil, drain, and cool to room temperature.
Increase the temperature of the oil to 375 degrees. Re-immerse fries and cook until crisp and golden brown, about 2 to 3 minutes. Remove and drain on roasting rack. Season with kosher salt while hot and hold in the oven.
Allow oil to return to 350 degrees. Lightly dredge fish strips in cornstarch. Working in small batches, dip the fish into batter and immerse into hot oil. When the batter is set, turn the pieces of fish over and cook until golden brown, about 2 minutes. Drain the fish on the roasting rack. Serve with malt vinegar.

Tangled_poster_nov-535x745.jpg

Menu: Hazlenut & Squash Soup
Recipe: 2 lb butternut squash, seeded and cut into 6 sections
1 lb parsnips, peeled and roughly chopped
1 green apple, peeled, cored, and quartered
2 tablespoons olive oil, divided
3-4 sprigs fresh thyme
1 medium brown onion, thinly sliced
4 cups of chicken stock, divided
1/2 teaspoon cumin
1/2 cup heavy cream
Salt and white pepper to taste
1 cup raw hazelnuts (for topping)
To Roast Hazelnuts:
Preheat oven to 275 degrees F
1. Place 1 cup of raw Hazelnuts on a parchment lined baking sheet.

2. Bake for 25 - 30 minutes, or until the hazelnut skins burst.

3. Remove from oven and let cool. When cool enough to handle, roll hazelnuts between paper towels to remove skins. Place skinless hazelnuts into a small plastic bag and crush using a rolling pin.

For Soup:
Preheat oven to 400 degrees F
4. Line a baking dish with parchment paper and drizzle 1 tablespoon of olive oil on top.
5. Arrange butternut squash in the baking dish, skin side up. Scatter chopped parsnip and apple quarters around the squash. Top with a few sprigs of fresh thyme. Pour a quarter cup of water into the baking dish.

6. Bake uncovered for 45-50 minutes, or until a knife slides easily through the skin of the squash.
7. Remove the baking dish from the oven and throw away the sprigs of thyme. Set aside to cool.

8. Heat the remaining 1 tablespoon of oil in a pan over medium low heat. Add thinly sliced onion and half a teaspoon of salt to the pan and sauté slowly about 10 minutes, or until the onions are soft and translucent, but not browned. Turn off the heat.
9. When squash is cool enough to handle, use a paring knife to peel the skin from the butternut squash, discarding the skins. Place the peeled squash into the bowl of a food processor. Pulse into a smooth purée, about 20 seconds. Pour purée into a large stockpot or Dutch oven.

10. Place roasted parsnips, apple and sautéed onion into the bowl of the food processor. Add 1 cup of the chicken stock. Purée 20-30 seconds, or until smooth. If the purée is too dry, thin it using an additional half cup of chicken stock.
Note: Do not fill a food processor more than half full with hot liquids. Doing so could result in the top or bottom of the food processor bowl blowing off due to pressure.
11. Add puréed parsnip and onion mixture to the squash in the stockpot. Add the remaining chicken stock to the pot and raise the heat to medium high. Bring soup to a boil and then reduce heat to simmer.
12. While soup is simmering add a half teaspoon of ground cumin, as well as salt and white pepper to taste. Before serving, stir in a half cup of heavy cream.
13. Serve in bowls or insulated cups and top with the crushed roasted hazelnuts.

Food: Faline's Forest Flatbread Sandwiches
Bambi's Bagel Chips: Recipe:
1. Pre-heat the oven to 350 degrees.
2. Grease a baking sheet, either using a spray like Pam or by lightly spreading olive oil on the bottom of the baking sheet. This will keep the bagels from sticking.
3. Slice the bagels, using a serrated bread knife. The slices should be 1/8 in to 1/4 in thick. This will produce 4 to 6 slices per bagel.
4. Combine olive oil, salt and pepper in a small bowl.
5. Brush the bagel chips, using a kitchen brush, lightly brushing both sides of the bagels with the olive oil mixture.
6. Arrange the bagel chips on a baking sheet in no more than a double layer.
7. Place in the oven and bake. Bagel chips will take 20 minutes to cook. Be sure to keep an eye on them as the more stale they are, the faster they will cook. Remove them from the oven and let them sit. They will get crispier as they cool.
