What’s for Dinner Tonight?

We got another couple inches of snow last night. I’m already over winter. 😂

Tonight I’m making lobster risotto with asparagus and a salad. I went whole foods for shallots for the risotto and no one was there so I grabbed some things for the weekend. Hoping to not to go back to a grocery store until Sunday when i shop for the work week.
 
Thanks for the encouragement!!! I also like Ree’s recipes! I made her sausage, egg, cheese and potato casserole Christmas morning. It was delicious!
We love that casserole! We've had that every Christmas morning for the past several years. Super easy to throw together the night before and just bake that morning.
 

we are eating late (busy watching a movie). dh's pasta is dried and ready to boil, oldest made about 4 dozen mozz ball stuffed meatballs, I made about 7 quarts of meat sauce. pasta tonight (and likely tomorrow)-and a nice stash for the freezer (also final broke down the rest of the ham into freezer bags-lots of meat on the bone for some future split pea soup).
 
Tonight was the New Year's Day food that you have eat.

Black eye peas (for coins/money), salad (greens for green money), cornbread (for gold) and spiral cut ham (for moving forward as pigs don't forage backwards). We made brownies too, but we didn't cook them long enough. So we didn't eat them. We ate so much at home today that we had to run the dishwasher twice (just DW and I).
 
Lolled about the house yesterday knowing that leftovers were in my future for the next few days. Not that leftovers bother me, not at all. Love gumbo as the week grows cuz it always tastes better as time goes on. So instead of cooking, I read about cooking, lol. Always inspiring and/ or challenging articles on the subject at this time of year.

Lobster and asparagus risotto

6 cups chicken broth (heated to a simmer)
2 tablespoons butter
1/3 cup finely chopped shallot
1 garlic clove minced
1 cup Arborio rice
1/2 cup white wine
1 cup freshly grated Parmesan
Salt and pepper
1 bunch of asparagus (cut into bite size pieces)
1-2 lobsters cooked and meat removed (I bought the lobster lazy man style at Stew Leonard’s) cut into bite size pieces.

Heat the pan over medium add butter and shallots. Cook 3-4 minutes until translucent.

Add garlic cook 1 minute.

Add rice and cook 3-4 minutes until translucent

Add wine and cook until it’s almost all is evaporated. Stirring often.

Add 1/2 cup of broth at a time cooking until til almost all is evaporated, stirring often.

Repeat with broth and keep stirring.

Taste it after about 20-25 minutes. It should still be a little hard. Add the asparagus. Cook another 10 minutes and taste again. It should be close, add the lobster just to heat it through. I added mine with my last ladle of broth. You may not need all the broth. I had about 3/4 of a cup left.

Remove from heat, add Parmesan and black pepper (and salt if needed) and stir.
 
Friday is leftover night......DH goes to watch the grand kids at trampoline, so we eat later.
There is still taquitos, spring rolls and a lot of cheese and cracker.
I will just have a green salad and some cheese and crackers.
