Well...we just dined there for the first time this past June and we LOVED it.
There were 3 dipping sauces...none of us can remember the specifics!
There was a soy/ginger type of sauce for the meat..we think a spicy mustard type of sauce for chicken and veggies and a white sauce for the seafood?
I can tell you that they were all yummy. My DS6 was dipping anything and everything in all 3 and he ate everything on his plate (including his veggies).

The 3 sauces a previous poster mentioned are not cooked with the meat. Those are just given separately. The meat is usually only cooked in a little butter, oil, garlic, soy sauce, teriyaki sauce, or any combination of those (not all at once! lol). The chef when we went asked each time if any of us didn't want something included (my mom didn't want garlic with hers so he pulld out her shrimp and cooked it on the side). The 3 sauces are 2 mustard sauces and a ginger sauce for dipping everything in. The ginger sauce is what I dip EVERYTHING in.
