Can my friend make spa reservations for both of us (we're in different cabins) while I book Palos or do I have to be at the spa?

I don't think that this will be a problem. Your friend will just need to know your cabin number and name and give that to the spa staff to reserve your selected treatment and time-slot.

You could always call DCL directly to make sure.
