I’m breaking down and having spaghetti and meatballs tonight. I have nothing else and I guess it’s better than takeout.

Because I’m still on vacation until Monday. I made strawberry ice cream this afternoon. My dairy delivery comes on Friday and this week they also had strawberries.

After looking at your review, I see I misspoke about the port. When you mentioned the ship you were sailing on, I Googled to see where it sails from. Miami came up first. That's the port I was referring to. Sorry, about that.

Tonight we had carnitas bowls with rice, Mexican corn, cheese, guacamole and salsa. I forgot the black beans.

DH wanted sushi rolls. I ordered sashimi in an attempt to avoid the rice, but I will probably steal a few pieces of his sushi roll anyway. It's so hard to resist.

Last night started my hubby’s 60th bday extravaganza! A bunch of friends came into town. We grilled steaks and chicken on the deck with salad and garlic bread. Dessert was carrot cake and key lime pie.

Today is the big day, so we’re catering in from one of our fave BBQ places and a large charcuterie from wine works. I still need to get him a cake!

It always takes a bit more time to finish off a roasted chicky since I’ve become a solo.
This morning I looked at all the meat left and got busy: made a curried chicken salad and an amazingly easy ginger, rice and lemon chicken soup with the rest.
The soup can be made from scratch or just use up leftovers from the fridge/freezer. I’ll add soft veggies like baby spinach or lettuce to the soup when heating it up.

Decided to add some frozen peas to the chicky salad; it’s become a “thing” with me and I’ll stop when something else catches my attention (…squirrel!..).

Tonight it was the chicken curry salad on romaine lettuce leaves. Makes a good wrap.

Sunday was Father's Day so DD took DH out for dinner. I stayed home and happily consumed leftover chicken wings and fried calamari.

Monday night... Work was a poop-show and ran very late. I looked at my watch as we were leaving (at 8:35pm) and decided that it was a pizza night. We ordered in a hurry as everything here closes between 8 and 9pm (weirdest college town ever) and the only other option would have been pb&j at home- not even grilled cheese, I'm not messing up the kitchen at 9pm, LOL!

Tonight... no idea, but I'll WFH most of the day so I can get something started. It's supposed to be cloudy and upper-60s to low 70s, so I'm not hesitant to turn on the oven!

Last night I had pierogies and kielbasa.

I totally blew my diet tonight. DH & I shared Chicken foie gras and pistachio rillette appetizer & Pan roasted halibut entree. He also wanted dessert. He chose carrot cake & ordered 2 glasses of dessert wine. I had the wine & a few bites of cake.

It’s been a constantly cloudy and rainy start to the summer so I’ve been spending a bit of time perusing recipes with the idea of fine tuning my weekly menus. Right now berries and cherries are in season so trying to incorporate them into my entrees as well as desserts. Today, going to try making a cold cherry soup with a mixture of sour and Bing cherries bought at the farmers’ market. Could be a nice starter for grilled entrees.

Last night I had a bowl of the ginger, chicky and rice soup. Worthy and a great way to use up leftovers.
