Soup Recipes Please (stuffed pepper soup in particular)

Do you have a tried and true recipe for stuffed pepper soup? I'm really in the mood for it, so I think I'll make it today!

Please share your stuffed pepper soup recipes. :) And also any other soup recipes you love. It's that time of year!
 
Here is the recipe I use for Stuffed Pepper Soup

Thanks for the tip for substituting broth for water! :thumbsup2 That looks like a great recipe. Our local grocery store has the stuffed pepper soup once a week or so. It tastes good, but hardly has any meat in it, so I thought I'd try to make it myself.

It's for baked potato soup. I lighten it up a bit by using 2% milk, turkey bacon, and fat free sour cream. It is so yummy! :goodvibes

Mmmm! I'll have to try to find my recipe for potato soup. It's extremely good.

You know what else I'd like. A good beef vegetable soup recipe. Or stew. I like my beef stew without tomatoes or tomato sauce and I have a hard time making it properly.
 

I would love a really good recipe for vegtable soup. I have a couple of good soup recipes that I'll find and post later, when I get back from Lowe's. One uses leftover meatloaf.

That's interesting. What do you do, break up the meatloaf to put in the soup? My meatloaf practically falls apart anyway. :laughing:
 
I don't eat peppers so I can't help you with that- but this recipe is a favorite here, and is particularly good reheated the following day.

Cheeseburger soup

1 can vegetable broth (I prefer the Shari's organic roasted garlic)
2c peeled and cubed potatoes
2 grated carrots
1 small chopped onion
2 cloves garlic
1 can diced tomatoes, (the kind with roasted garlic and onion is particularly good)
1lb ground beef or turkey
2 1/2c milk
3tlbsp flour
8 oz cheese (Cooper Sharp American is good, but any sliced cheese will work)
few twists of peppermill
seasoned salt to taste

Mix veggies, broth and seasonings together and bring to boil in saucepan. While that is cooking, brown ground meat. Drain fat off meat and add to veggie mixture.

When the potatoes are soft, add 2 cups of milk and stir. Add flour to remaining milk and blend throughly, then add to soup mixture. Bring to a boil, allow to thicken, then add cheese slices; mix well.

Serve with salad and breadsticks. Yum!

You beat me to it. This is my Favorite soup. With mine you add 8 oz of sour cream at the end though. And I've never used tomatos. Sounds yummy though
 
This is a veggie soup recipe very similar to soup we had in Waterford, it was delicious!:
INGREDIENTS
3 carrots, chopped
3 large potatoes - peeled and cubed
1 parsnip, peeled and diced (you could skip this)
1 turnip, peeled and diced
1 leek, sliced
1/2 onion, chopped
1/4 cup dry potato flakes (optional)
salt and pepper to taste
1 cup water, or as needed

DIRECTIONS
Place the carrots, potatoes, parsnip, turnip, leek and onion into a large saucepan. Fill with enough water to cover. Bring to a boil and cook until the vegetables are tender. Drain off water and puree vegetables in a blender or using a stick blender.
Return the puree to the saucepan and stir in water to reach your desired thickness. Heat to a simmer and season with salt and pepper. Serve and enjoy. It's very creamy and soothing.
 
I'm not a measuring kinda cook, but here's one of my favorites this time of year. Peel and chunk up a butternut squash. Put it in a pot with a sliced onion, about a tablespoon of minced ginger, a spring of sage leaves and a couple of peeled and cored apples. Add a can of chicken broth, about a cup of apple cider, half a cup of white wine and enough water to cover the stuff. Simmer till everything is falling apart. Remove the sage. Puree, and taste for salt.

If you want to splurge, a little cream or half and half added in at the end always nice.

I made the soup just like you posted, except added half a diced onion, and it was delicious! My husband raved on and on about it and even the kids liked it. :thumbsup2 :thumbsup2

That sounds really interesting! Is it sweet or savory? I can't tell -- I mean it's got onions and salt, but also apples and cider!

Have you ever had the sweet butternut squash soup from Boma at AKL? That is to die for and I think the recipe is floating around the boards somewhere.
 
OK, you guys are making me reeaaaalllyyyyy hungry! I may have to make a grocery run to try out the stuffed pepper soup. And the baked potato soup is right up my alley too:love: !

Yes, you can. I'm glad you enjoyed it. I usually make a huge batch and freeze the leftovers in individual servings for DH to take for lunch.

Here is the recipe for Tortilla Soup. It gets rave reviews every time I make it.

1/2 teaspoon garlic powder
salt and pepper
2 tablespoons corn oil
4 cans chicken broth
1 can tomatoes, diced
1 can Rotel tomatoes & chilies, Diced
1 packet taco seasoning
1 (10 count) package corn tortillas, broken into small pieces
12 ounces chicken poached and shredded (could also use canned chicken instead)

monterey jack or cheddar cheese, shredded
corn tortilla chips, broken into small pieces
sour cream

Saute carrots, onions, celery in corn oil, Garlic Powder, Salt and Pepper until tender.
Add chicken broth and bring to boil.
Add tomatoes, Rotel, taco seasoning, and chicken.
Cut Tortillas into small pieces and add to broth mixture.
Let boil for 20 minutes or until tortillas are thoroughly incorporated into soup stirring occasionally to keep from sticking.
Top with shredded cheese, broken chips and sour cream just before serving

Tip: I don't add the corn tortillas all at once or they clump up on the bottom of the pot. I take the stack of tortillas and run through them with a pizza cutter to make short thin strips then add them in a handful at a time. Let it cook a few minutes before the next addition. This way you can control the thickness of the soup too.

Go to store
get a can of soup
go home
open can and dump it in microwaveable bowl
microwave
add ritz crackers
eat!
