Some Wonder questions...

First, lose the WDW mentality with all it's fast passes and reservations. Cruising us totally more chill.
For your first cruise, and a short one at that, I would not even bother with the specialty adult dining. You will be assigned a rotation through the 3 dining rooms. Your servers, who will become your best friends, will rotate with you.

I've never understood the angst over port arrival time....you can't get to your room til they open for everyone so, unless you bring your swimsuits in your carry-on you just end up walking around upper decks. Nice but not something to get excited about.

You do want to book your excursions...we always book through Disney but a lot of people don't. You can get to the excursions now, just read them over and list your top 2-3. You should get one of them.

There are the couple of character meetings that require reservations and the Bibbity... Boutique. Thank goodness my kids outgrew that before it started!

We don't do the drink sampling things but if that interests you, you need reservations.

But that's really it. Everything else is free and open to everyone (within age limitations).
 
A tip when you are doing the online check in, I have found that if you go through the first part quickly. Then you can get to the port arrival time and activities quickly. You can then go back and fill in the checkin document. For example select own transport for arrival/departure.
