We're having leftovers from yesterday, made with a recipe I got from a Readers Digest magazine years ago. It's called WINTER WARMER, HEARTY CHICKEN BAKE & we've always used leftover turkey in it. Simply yummy!!
Here's the recipe just in case anyone wants to try it out:
3 cups hot mashed potatoes
1 cup shredded Cheddar cheese, divided
1 (2.8 oz) can Durkee French Fried Onions, divided
1 1/2 cups cubed cooked chicken
1 (10 oz) pkg frozen mixed vegetables, thawed & drained
1 (10 3/4 oz) can condensed cream of chicken soup
1/4 cup milk
1/2 teasp Durkee Ground Mustard
1/4 teasp Durkee Garlic Powder
1/4 teasp Durkee Ground Black Pepper
Heat oven to 375 degrees F. In a medium bowl combine potatoes, half the cheese & half the onions; mix thoroughly. Spoon into a greased 1 1/2 quart casserole spreading across the bottom & up the sides to form a shell. In a large bowl, combine chicken, mixed vegetables, soup, milk & seasonings; pour into potato shell. Bake uncovered for 30 minutes or so or until heated through. Top with remaining cheese & onions. Bake uncovered 3 minutes or until onions are golden brown. Let stand 5 minutes before serving. Makes 4 to 6 servings.
After the first time making this, I learned to either used canned vegetables or cook the frozen ones first. They weren't done. We also like to add more cheese & onions to the potatoes. This could also be an excellent way to use up leftover vegetables.
