SO MUCH Pepperoni & Cheese!!!! Aaarrgghhhh!!!

So I had company come over last night to celebrate New Years Eve.

I bought a big container of pepperoni at the deli and cut up a couple blocks of cheese to have with crackers.

Well, one of my guests also brought a plate of pepperoni/cheese. Neither one of these were even touched by anyone (well MAYBE a few pieces of each but not enough to put a dent in either) My friend left and told me to keep what she brought over. So now I have an insane amount of pepperoni and cheese and it's just way too much for any of my family of 4 can eat.

What would you do with it all? Can I freeze it? Maybe use it in a recipe?
 
Pizza?

I do not see why you can't freeze the pepproni as well.

As far as the cheese, I would just make some recipes with that. It is pretty easy to use up cheese.
 
I would just freeze it all. I can't see why you can't freeze the pepperoni, and I freeze cheese all of the time. I purchase a giant bag of shredded mozzerella at Costco (can't remember if it's 3lbs or 5lbs) and divide it into 8oz portions to keep in the freezer. When I need it for a recipe, I take the bag out of the freezer when I start prepping the meal. It's saved us quite a bit of money not buying the individual shredded bags of cheese (which I always used to run out of when I needed it!). I never have cheese that goes moldy either now!

I bought a 3lb beef summer sausage at Costco last week because my husband really wanted it (yuck) and I plan to slice part of it up and use my Foodsaver and freeze it.
 

Freeze them in portions that you may use. I freeze both frequently.
 
Italian Vegetable Stew with pepperoni - but not that much! LOL

I second pizza and freezing. :)
 
Just wrap it carefully in small batches and freeze. The cheese might not be a good thawed as fresh cheese but you can cook with it.
 
We bake both cheese and pepperoni slices to make crispy snacks.
 
Spaghetti or rigatoni pizza casserole. Always a recipe on pinterest or going around Facebook.

Between eating it plain, the casserole and bread my family would finish those leftovers in no time ! If there truly was more left I'd freeze it.
 
We freeze pepperoni often! Just do it in "usable quantities" because it is difficult to separate it when it is frozen.
 
I have a good friend who always makes a salad for pot lucks that is so easy and always crazy popular. It's the bagged iceberg lettuce mix, sliced olives, pepperoni, cheese and tomatoes all tossed with Good Seasons Italian Dressing.
 
I have two teenagers in my house. Anything leftover would be gone today.
 
You could make pizza with pepperoni, make calzones, baked ziti with pepperoni, pasta salad and put pepperoni in it (I do the ff Italian dressing, green and red peppers, cheese and pepperoni), garden salad with pepperoni in it. Spaghetti casserole with pepperoni or even spaghetti and just put pepperoni in the sauce?
These are just some ideas.

along those lines, I freeze baked ziti all the time, to save for later. I bet calzones would freeze well too.
 
pizza fondue is also good for pepperoni. And of course cheese fondue for the cheese. But I'd probably freeze it, if my kids didn't eat it all the next day.
 
A great recipe my mom used to make: it is not so much a recipe as a few ingredients and a few instructions.

Upside down pizza.

In a glass pan, you layer preferred ingredients, cheese, and pizza sauce, and then on top, you put crescent rolls. Bake at 350 until golden brown.

It is delicious!
