Signature Dining???

Okay this seems weird to me--but if you are going to use DDP for signature dining Narcossee's tops the list at a possible $95 per person. Why is the Brown Derby a Signature restaurant at only a possible $49 per person? (Jiko and Artist Point right behind at $55 and $56)
 
We only pay $39 to eat all day so if you assume Dinner $26, Lunch $10, Snack $3 2TS its fair at each place. You still have to add tax and tip to your numbers: at 25% that would bring a $55 bill to $69 and a $35 bill (if you selected cheapest things on the menu) to $44.

I can't do two of these Signature meals on our 5 day DDP budget, but one special meal on the trip should be a really nice treat.

I may pay OP for one of our buffets to keep a TS for another place, we'll see.

Lots of interesting choices for meals.
