The first time we took our daughter to WDW was in December of 2012. She was two at the time so she wasn't tall enough to ride anything with a height requirement except for Barnstormer. Noting bothered her and this includes Great Movie Ride, Pirates of the Caribbean, and Maelstrom. On Great Movie Ride, we did whisper to her a couple of times to just remember it was all pretend, but she really had no issues. On Maelstrom, she got startled by the polar bear that is standing up, but it really was just a startle. She jumped, looked at me, and was fine. In fact, it's one of her favorite rides now. Nothing about Pirates scared her in the least.
Jump to this past January/February. We took her again and she was three. She was able to ride everything on your list (save mine train as it wasn't open) and did with no problem. In fact, she wanted to ride Thunder Mountain over and over again. Test Track was fine and Soarin' was another one she loved. And, although it isn't on your list, I thought I might add that she actually wasn't scared of Tower of Terror. Now, to be fair, her dad used to hold her up in the air and sort of drop her a bit before catching her and would call it "Tower of Terror", so she was actually excited about the idea of riding it. We made her watch it from the outside, first, so she could see how it drops. And we told her constantly through the line that we could decide to not ride at any point prior to getting on the elevator, if she so desired. She was determined, though. And she did great. She actually asked to go right back on it as soon as we got off. I agree with the other posters about showing her some videos and such and letting her see as much of the ride as possible prior to riding if you are concerned.
