? rides during EE in MK w/ 8YO

Hi--Can anyone advise me what to ride during EE on MK days? What about EE for MGM and for AK(I heard Safari ride in Africa)? I have an 8 year old daughter and it is her first time at Disney and she doesn't love roller costers or dark rides (too scary). I'd appreciate any tips. We had a 5 dya hopper to use from Nov 2 thru Nov 8. Thank you
