Rider Swap Question

Hello! I've been reading lots, but first time posting :) The last time I've been to Disney was almost 20 years ago and my husband went for one day as a kid, so all this planning is completely new to us.

I am planning a Sept trip with my husband, my mom, 6 year old twin boys, and almost 2 year old daughter. I'm starting to look at rides and Fast Passes and touring plans, and I've been reading about the Rider Swap and have some questions.

If I understand correctly, since my twins are 6, they cannot ride alone. Dad, Grandma, and the 6 year old twins ride Star Tours or Seven Dwarfs Mine Train, and I stay back with the 2 year old, and we can get a Rider Swap so that I can ride when they are done. But when I go to ride using the Rider Swap, can both of my twins come with me or just one since they aren't 7 yet? I'm just trying to figure out if I should plan on some Rider Swaps or not worry about getting them if both boys won't be able to go the second time. Some rides both may not want to go again, but I know certain rides they both would like to go again, such as Star Tours. Or if only one twin can ride with me using the Rider Swap, will there be an issue if Dad, Grandma, and one twin ride first, while the other twin, toddler, and myself wait and then the other twin and I ride using the Rider Swap?

Also for example, if we do get a Rider Swap for Mine Train and the first group rides with FP+, do I need a FP+ to get the Rider Swap or can I save that FP+ to use on a different ride close by with the almost 2 year old while the first group is on Mine Train?
 
Rider swap is good for up to 3 people. So on something like Star Tours, it will be no problem for you to go with both twins. On something like Mine Train where they sit 2 x 2, their age may become an issue as I don't think they will be able to ride together or one alone while you ride with the other.

No issue with splitting the twins between the first and second group of riders, though.

You don't need the FP+ if you're using Rider Swap. DH and I have frequently split up our FP+ attractions when we plan to use rider swap.
