Recipes for hard boiled eggs? Update p. 13 - recipe of what I made!

as usual too many dyed eggs, nothing to do with them. would love some recipes, esp dinner ones, that are not just egg salad - thanks!
 
Whenever I have too many hard boiled eggs I make egg salad and then use what is left in my green salads (like a chef salad).
I don't usually have too many left over, my kids love to eat just a hard boiled egg out of its shell as a snack.
 
The main ones I have seen were for deviled eggs, egg salad, other salads with chopped eggs on them or mixed in with them (like potato salad). I also read some with using them on sandwiches, or as a breakfast item (with a hot creamy sauce over them). I did see one putting them on pizza, but I haven't tried that, as luckily I like deviled eggs and egg salad!
 
In my house not only do we have hard boiled egg leftovers, but Easter dinner left overs too. School is out so everything will get eaten. I usually do egg salad blt's, ham and egg salad sandwiches, deviled eggs and salads.

Anything but low calorie, but a yummy recipe from a restaurant that used to be around and was known for its salad.

Peasant Stock salad

1 head lettuce, bite-sized pieces
3/4 cup chopped celery
1 green pepper, chopped
8 ounces fresh spinach, torn
2 medium red onions, sliced
6 hard-boiled eggs, sliced
1 10-ounce package frozen peas, not cooked
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon white pepper
1 pint Miracle Whip (mayo can be substituted)
6 ounces Cheddar cheese, grated
1/2 cup crumbled crisp fried bacon

In a large bowl mix together lettuce and celery. Layer all remaining ingredients over lettuce and celery in the order listed. Cover and refrigerate for 8 hours. Toss together just before serving. Yield: 8 servings.
 
Drop them in a pot of Gravy & meatballs.
 
spinach salad: Sliced strawberries, grape tomatoes, shaved parmesan reg, crumbled bacon and crumbled or sliced hard boiled eggs with a nice balsamic dressing-I make Good Seasonings with less oil and balsamic vinegar.
 
My other idea is pickling them in beet juice. YUM!

so, thanks everyone for your ideas. I was trying to find a recipe that was more meal based, and this is what I ended up with (and boy was it good!!!)

Pasta Tetrazzine

16 ozs spaghetti

1 stick butter

1 onion (chopped)

2 T. garlic

1/2 cup flour

2 cups milk

6 hard-boiled eggs (chopped)

4 ozs mushroom (stems and pieces)

4 bacon slices, crumbled

1 tsp salt

12 tsp pepper

12 tsp paprika


1. Prepare spaghetti as label directs; drain and place in baking dish.

2. Meanwhile, in 3 quart saucepan add the butter and when melted add garlic and chopped onions an cook till tender, about 5 minutes; stir in flour until blended.

3. Gradually stir in milk and cook stirring constantly until mixture is thickened; stir in chopped eggs, mushrooms, bacon, salt, pepper and paprika till well blended.

4. Put cooked spaghetti in sauce and mix until thoroughly covered.

Curried eggs on toast is good too. Make a simple white sauce, drop in a bunch of chopped hard boiled eggs and some curry powder.
 
Over the years I've learned to make not more than 1 dozen hard boiled eggs for dyeing.

My kids usually eat 2 each so that uses up 4.
I use 4 to make 8 deviled eggs for Easter dinner and I use the rest for egg salad sandwiches or cut up in my salad for lunches for the couple of days after Easter.

Your recipe sounds good.
 
For what it's worth, I gave up boiling the eggs the kids dye. They're 11 and 16 now, but we've been doing this about 5 years anyway. As long as they are old enough to get keep them over the table, really not a big deal if one drops just on the table. It just cracks, but not open. I'll take it and crack it into a dish- use it for breakfast the next morning. We might lose one or two a year that way, but sure beats having to come up with alot of boiled egg recipes after the fact.

We'll be having scrambled eggs a couple times this week, make a cake or muffins or something and the colored eggs will be gone.
