I'm always searching for easy yummy and of course budget recipes. I get tired of cooking the same stuff so I'm interested to see if anyone wants a thread where we can post tried and true recipes. I will start with one I made yesterday that was so easy and surprisingly tasty - even my kids liked it!
Lazy Man's Cabbage Roll Casserole
3 cups Cabbage; coarsley shredded- I used cole slaw mix
1 pound Lean ground beef
1 Onion; sliced
1 can Tomato soup
1 can Water
6 tablespoons Long grain rice
1 teaspon Salt

Original recipe makes 4

Servings


Preparation
Pre heat oven to 325 degrees.

Cook beef until no longer red add rice to meat.

Layer meat ,onions and cabbage in casserole.

Mix soup , water and salt and pour over casserole.

Bake1-2 hours in covered casserole

We love taco soup - it's easy to make & uses up lots of leftovers...

I basically take leftover chicken & chop / shred it or leftover ground beef & put in a pot. I add some chopped onion & a packet of taco seasoning & 1/2 pack ranch dressing mix if I have it. To this I add corn, beans (usually black or pinto beans who hate rinsed) - I open a new can if needed but often have leftovers I can use. One can rotel tomatoes (or alternately use some diced tomatoes & a small can green chiles or 1/4 c salsa)& a can chicken broth. sometimes I'll add rice if I have any leftover. Let simmer & add a cup of water if too thick. Serve with crunched up Doritos or taco shells & various accompaniments - shredded cheese, sliced avocado, salsa, sour cream, black olives... Whatever I have in the fridge...serves 2 adults & 2 kids
 
Tried and true plus budget! This is from a cookbook that you buy by the check out at the grocery from when I first got married.

Pasta skillet dinner

2 cups uncooked Ziti
1 lb. Ground beef/turkey
1 14oz jar tomato pasta sauce
1/2 cup water
1/2 cup sour cream
1 cup shredded cheddar

Cook pasta and keep warm
Cook ground beef
stir in the rest until warmed through and cheese is melted.

Very easy to double!

I make something fairly similar but I add a little half & half to the saucy mix give it a little richness/sweetness! And yes it easily doubles!

Making this one tonight with leftover ground beef from the soup: Tater Tot Casserole
Ingredients
  • 2 pounds ground beef
  • 1/4 cup chopped onion
  • 1 envelope taco seasoning
  • 2/3 cup water
  • 1 can (11 ounces) whole kernel corn, drained
  • 1 can (11 ounces) condensed fiesta nacho cheese soup, undiluted
  • 1 package (32 ounces) frozen Tater Tots
Directions
  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in taco seasoning and water. Simmer, uncovered, for 5 minutes. Stir in corn and soup.
  2. Transfer to a greased 13-in. x 9-in. baking dish. Arrange Tater Tots in a single layer over the top. Bake, uncovered, at 350° for 30-35 minutes or until potatoes are crispy and golden brown. Yield: 8 servings.
