Rate my lunch

Sorry I somehow missed this question yesterday, Denae. It's an inexact sort of recipe, but here you go:

One box of chicken broth (I like the Imagine brand organic broth)
One small package of frozen cauliflower
Some cream (half and half will do, but heavy cream is better)
Some Velveeta (if you're using slices, which is what I usually have in the fridge, it's probably about 4 or 5 of them)

Bring the chicken broth to a boil, put the frozen cauliflower in, turn the heat down and simmer for about 5 minutes, or till the cauliflower's soft. Stir in some cream - maybe 3/4 cup? I just eyeball it. At this point I use my stick blender to mash up the cauliflower, but you could pour it into the regular blender, too. Then stir in the cheese until it's melted. Salt and pepper to taste. Very yummy.

Oh, and I guess I'm just a free spirit when it comes to cutlery presentation. :hippie:
 
If I had know there was Velveeta in this supposedly homemade soup I would not have increased your score. You're a fraud LiteBrite! I feel used.

Thanks for the recipe. I make a cream of broccoli soup almost he same way, except I add onions, and cream of mushroom soup. I will try it sometime with cauliflower.

Lite Brite- I had a nightmare last night about your infamous photo. I will never be able to unsee those Crocs and that tablecloth again. :sad2:

On the bright side, stay tuned to today's lunch presentation. I am very excited about today's photo, and I can PROMISE you it will NOT have anything to do with shoes on a tablecloth. :teeth:
