Quick to fix on the outdoor grill?

We spend many weekends at functions where we also campout, and we are typically very busy and have to eat on the fly. I'm looking for ideas besides burgers, dogs, links, but still super quick and simple.

Please share recipes too!

My favorite is boneless chicken breasts. Buy them frozen (at Bj's, Sam's etc) and put them (frozen) in a Ziploc with bottled Italian salad dressing. Throw the bag in a cooler and they defrost - then put them on the grill. Very simple and delicious. Leftovers make great sandwiches or Caesar salad. I like the Wishbone dressing with lots of stuff in it.

I was going to post the same thing. I use the Kraft Zesty Italian dressing though.
 
Flank Steak. I put it in a gallon ziplock bag with Teriyaki sauce the night before and let it sit in the back and marinate until dinner the next day. Just throw it on the grill, a couple of minutes per side. Tasty!!
 

I love to marinate a pork tenderloin and put it on the grill. I usually make the marinade in the morning. The recipe I have came from Martha Stewart and it's super quick. Works well with pork chops too.

3 Tbls. Olive Oil
3 Tbls. Maple Syrup
1 1/2 tsp. Dijon mustard
1-2 cloves of garlic pressed

So yummy! When I do the tenderloin I swear you can cut it with a fork! Pork chops would probably be quicker.
 
Pizza on the grill is super easy. Pile whatever toppings you want on premade crust (I like the individual size, pre-baked kind) and pop it on the grill until the cheese is melted. The premade pizzas that come refridgerated from the deli section in the grocery store would probably work too if you didn't want to deal with making your own.

Here is a good sausage recipe. It can be premade and sealed into packets so it's ready to go. It takes a bit of time to fully cook, but you could probably get already cooked sausages to shorten the actual cooking time. It's good with some nice crusty bread.

Big Ol' Mess

1 lb smoked sausage, cut into chunks
3 jalapeno peppers, sliced
1 green bell pepper, de-seeded and cut into chunks (I like to use red/yellow/orange peppers too, for more color)
1 sweet onion, peeled and cut into chunks
1/4 cup Tabasco sauce
10 ounces sweet and sour sauce

Make an aluminum foil bag. Use 2 12" x 18" sheets of heavy-duty foil (or double regular foil) and, (after the ingredients are in the bottom half), crimp the top half on.

Put the sausage, green pepper and onions in the bottom half of the foil bag.
Mix the Tabasco up with the sweet and sour sauce and pour it over the sausage mix. Seal the foil bag with the top half. Make sure it is "leak-proof".

Place on the grill (gas or charcoal) and cook for a total of 45 minutes, turning after each 15 minutes.
You can slit the bag open when done and serve from it at the campsite.

If you are cooking this in the hot coals of a campfire, reduce the total cooking time by about 15 minutes and turn every 5 minutes.
 
I get rave reviews for my ribs.

I parboil and marinate baby back ribs the night before grilling...makes it alot easier (can be done up to 2 days in advance).

2 racks ribs (each rack cut in half)
about 4 cups apple cider vinegar
marinade (whatever you like - I use teriyake)
bbq sauce (I like Sweet Baby Rays or Bone Suckin Sauce)

Parboil ribs in equal amounts of water and vinegar (gently simmer for about 30 minutes). Drain and cool.

I then gently score the underside of each rib to make it easier to cut (pull apart) after grilling. Put in zip lock with marinade and refridgerate.

Take out of cooler/fridge about an hour prior to grilling. Grill on greased (Pam) foil for about 15 - 20 minutes basting with bbq sauce.
 
Grilled chicken wings are great this time of year!! Dh's favorite! I visit our local tyson plant and get pre-cut meaty wings. I don't marinate before, I simply wash and place on the grill. The sauce is easy and cheap. I use Frank's Red Hot. I melt some margarine in a sauce pan on the stove and add the Franks (not the healthiest, but its sooo good). I flip the wings and started adding my "sauce". Flip again and add more sauce. By the time they come off, they are SO yummy. Great with your favorite beer and football team! :thumbsup2
 
Seafood....

I love fish and anything bar-b-q'd, however until recently couldn't easily cook fish on the grill. Either over or under cooked or other issues.

Well now you can buy cedar (and maple and alder) planks for cooking on the grill and it couldn't be easier. Soak plank in water one hour before cooking. Toss soaked plank right on the hot grill for 3 minutes, turn it over and put fish fillets (or shrimp, scallops etc) on the plank and walk away. 10-15 minutes later your fish is perfectly cooked, moist and with a fantastic flavor.

Since learning this method I've drastically cut back on my spices and am able to enjoy the flavor of the fish and respective woods.

The best thing is, time is no longer your enemy, as it's almost impossible to overcook it. The moist plank prevents this.


Steaks...

Learned this from a respected hunting camp cook. Throw your steaks on a hot grill right from the freezer. That's right, frozen solid! You'll be amazed how much juicier these will turn out and how much easier it is without any prep time. I was a non believer, but you have to try it. Just make sure your coals are good and hot.
 
Our grocery store has the BEST marinated beef sticks on the planet. They cook super fast, and are yummy!

For a different flavor, I hit flank or skirt steak with salt pepper and a good shot of fresh lime juice. Let it soak for a couple hours and grill to medium rare.
