I will have the standard dining plan on my trip, and I see that the quick service credits don't include desserts. However....can I still use my quick service credit on a meal that includes dessert as part of the entree already? I notice that Katsura in Epcot does this with certain dishes, where ice cream is included with the entree. not sure if they do it anywhere else.

I'm not aware of any entree that comes with a dessert other than the kids meals as they generally come with the main dish, side dish, drink, and usually a cookie.
But if the entree literally says it comes with say chicken and rice and a scoop of ice cream then yes you could get it.

Some of the adult meals at Katsura say ice cream is included under the entree description (the combo dishes), just wanted to make sure meals like that still qualify for a QS credit

Could you screen shot or copy/paste a description?
I feel like seeing the wording would help me understand it better and give a better answer.

Where did you see that?
Wondering because this is what it says on the WDW website same price but the description does not say it includes a drink and ice cream like the one you provided does.

Chicken and Beef Teriyaki
served with Steamed Rice and Mix Garden Salad
$12.00

I'm guessing you saw it on Allears.net
It does have a note on it that if you add $4.95 you can get a drink and ice cream.
I am unsure as to whether you could use a QS credit to do that or not.
I would say that because the WDW website does not mention it that you would not be able to do so.

Yes on Allears.net. I'm starting to notice that the site isn't that accurate/updated while looking at other restaurants menus also and double checking things

Most accurate prices and menu items are gonna be on the WDW website although sometimes they don't have the greatest descriptions of what is in a certain dish so when I want details I see what is on the WDW website and then go find that item on another website to see if it gives a more complete description.
For example WDW website may say "turkey sandwich served with french fries" where as another website will tell you that there is cheese, lettuce, tomato, and a spicy mayo on that turkey sandwich.
