Quick & easy summertime dinners....

Grilled Pizza- even a Jack's pizza tastes better off the grill, but we do ours homemade.
Shish Ka Bobs- or just chunk the meat and veggies and use a grill basket
The 365 Crockpot Blog has awesome ideas and my crock pot dosn't heat up my kitchen at all- love the Brown Sugar Chicken from there and then use the leftovers the next day in homemade egg rolls.
Lo Mein and Stir Fry are faves with our kids too.

ooo, I just tried some great new recipes.
One is Chicago style pizza, it called for sausage but I"m sure you could just use veggies, chop 1/2 onion, 1 clove garlic, green pepper, put ingredients into a well greased 9x12 baking pan, cover with 2 cups cheese. Cover entire pan with pizza dough (I used frozen) and bake at 425 for 25 mins. It looked not very good but it tasted delicious!!

This one was so embarrasingly easy:
1-rotisserie chicken cooked from market
1-jar of black bean corn salsa
4-flour tortillas
2cups shredded cheddar

Shred the chicken and place into baking pan, pour in the salsa and cheese, cut flour tortillas into strips and mix everything together. (I added a 1/2 jar of black beans and some extra frozen corn)
Bake at 350 for 25mins.
 
So here's what I have so far for easy summer dinners:

English muffin pizzas
Shrimp (she loves fried shrimp)
Chicken tendars
Spaghetti (her all time fav)
Breakfast for dinner
Chicken fajitas in the crock
Hot dogs
We both eat a lot of salad as our "side dish"

I guess I''m looking for some more "main" ingredient type things.

Tuna Sandwiches, chicken breasts cooked on the grill, macaroni salads (add tuna, chicken etc as desired),BBQ pulled pork sandwiches (cook the pork in the slow cooker - it doesn't heat up the house), quesadillas. Oh, and of course, rotisserie chicken.
 
I work FT and don't get home until 6pm. Having a DD7 and DS2 I need something quick and easy or a crock pot. Thanks everyone for providing their crock pot ideas! I am definitely going to try them out.

To the person that makes the English muffin pizzas....do you toast the english muffins first?

I take shortcuts whenever I can. I love making shrimp pesto pizza on the grill. I buy the premade pesto at BJ's and a bag of cooked and previously frozen shrimp as well as the Bobali pizza crust.

Brush bottom of crust with olive oil and grill til it gets a bit crispy. Brush top with olive oil and flip.

Top pizza with pesto Put the pesto and I like to use the mozzarella ball cheese and dice it up. I then add shrimp. Grill it until cheese melts. YUMMY!!!!!!!

The other thing I made the other night was white chicken chili in my crockpot. It came out fabulous and even my DD LOVED it. Even asked to take it to school for lunch the next day. Let me know if anyone wants the recipe and I would be happy to share it.

I also usually have Purdue shortcuts (Original). You can mix that with some romaine lettuce, parmesan cheese, croutons and caesar dressing and put that in a roll up. You could also add the thawed shrimp.

The shorcuts can also be used for fajitas. Just fry it in EVOO with peppers and onions.

They also make great chicken salad.

May I have this recipe, please? DH won't eat tomatoes in any form, so white chili sounds great!
 
My family likes egg bake.

It is basic scrabled egg mixture and you add what ever you want to it.

Our favs are ham, green peper, onions, mushrooms and cheese.

you mix your eggs and milk together then take bread ends and cube them and add to eggs, let it sit for about a half hour or you can do in the fridge hours ahead ( I have done both) Add your veggies and cheese and bake for about 35 minutes or until middle is set, at 350, oh I use a 9x13 pan and 2 eggs per person.

Breadworld.com has awesome pizza dough recipes...we follow a similar procedure to DisneyChix- brush with oil and lay on the grill- flip and top the first grilled side ( we love pesto, grilled chicken, red onion and kalamata olive with a balsamic glaze drizzled over top).Use a low heat and watch it carefully!

My CP tostadas:
Ground Beef
2 cans refried beans
1 envelope taco season
8 oc can of Tomato sauce
1/2 cup of water
Tostada shells
shredded lettuce
diced tomatos
shredded chedder cheese
can black olives
sour cream
salsa

Brown ground beef in skillet. Drain
Combine ground beef, beans, taco season mix, tomato sauce and water in crock pot.
Cover. Cook on low 6 hours
Crisp tostada shells
Spread hot mixture over tostada shells, top with goodies

Here you go....it was so easy and absolutely delicious. This recipe was adapted from recipezaar.com.

Ingredients

1 1/4 lbs boneless skinless chicken breast (I probably used 1 1/2 lbs)

2 (15 oz) cans great northern beans or navy beans (I used 1 can of cannellini beans and 1 can of garbanzo beans - drained)

1 (15oz) can hominy or white corn (drained)

1 (1 1/4 oz) envelope taco seasoning

1 (4 1/2 oz) can of chopped green chiles (drained)

1 (10 3/4 oz) can condensed cream of chicken soup (no milk added, just the can)

1 (14 oz) can chicken broth

1/2 cup sour cream (I used 1 1/2 c)

chopped green onion (optional)

Directions.

Place chicken in bottom of crockpot

Top with beans and corn

In separate bowl, mix taco seasoning, chiles, soup, and broth. Then pour in crockpot.

Cover and cook on low for 8 hours (shorter if chicken was previously defrosted).

Before serving, add sour cream and green onions (scallions) and stir.

I also added salt, pepper and garlic to taste. I also added some parmesan cheese to taste.

Made plenty to feed a family of four with leftovers.
