Quick breakfasts for a diabetic

DH, DS(19), DD(9 turning 10), DD, and DM, and myself will all be at the Swan July 3-9. Planning for our upcoming trip is coming along fine thanks to all the great info I keep finding here. The one thing I'm having a little trouble with is where to grab a quick bite in the mornings that won't totally sabotage my Dad's diet. He is really sensitive to all carbs, not just simple sugars, and has to strictly limit breads, pastas, rice, and potatoes. Think Atkins diet.

This should be not be too hard for lunch and dinner, but breakfast seems to be more of a challenge. We would rather not spend lots of time in the morning at sit down meals and head out early to the parks, but it seems the other options offer only pastry kind of things. Recommendations anyone?
 
My husband is diabetic and usually enjoyed a breakfast burrito (soft tortilla, egg and breakfast meat), or other available breakfast sandwhich at the Boardwalk Bakery. It allowed us to grab a quick breakfast, yet was a better choice for him than a pastry, of course.
 
I'm just learning to deal with diabetes...5 months now on a 12 carb/day plan set by my endrocronologist...think I added one to many o's there...anyway...I find that protein in the morning is good...or to stack the carbs so that I consume more earlier in the day helps. I think the suggestion about the breakfast burrito is a good one. If you are able maybe take some peanut butter...Peter Pan makes one with splenda that has 90% peanuts for a great source of protein...that made with some low carb bread (2 slices = 1 carb) and a wee bit of the all fruit grape jelly is my sweet tooth fix and it's great with a glass of skim milk...total carbs between 3 - 4. I'll be making my first trip to WDW since the diagnosis and am interested in other folks suggestions!
 

Check out Tubbi's Buffeteria in the Dolphin (right next to the Swan). You can get items to go there - it's kind of a cross between a cafeteria and a Food Court. I know they have omelet's and breakfast sandwich's. Your Dad can just throw the bread/toast away or request not to get it - that's what I do. They will also make things on the grill for you.

I like it because it is open all the time - so you can really get going early if you need to. They also serve Starbuck's coffee and Krispy Kreme donuts (for those who are not dieting or diabetic),

P.S. Be careful of the burrito - the tortilla is very high in carbs. Ask for a plate and try to get your Dad to throw the tortilla away.
 
I'm on Atkins, and I have a breakfast burrito every morning from the Boardwalk Bakery! I usually eat about half of the tortilla, then just scoop out the rest of the insides with a fork! They're really good! :flower:
