Question about "switching off"

Me, DH, DS (8 yrs old), and DD (3 yrs old) will be going to Disney in a few weeks. Say we go on Splash Mountain and me and DS ride first while DH waits with DD. When we return it is now DH's turn to go, will they let DS go again with him or will they only let DH ride alone?
 
Yes your older child can ride with both adults. Make sure that you inform the CM at the entrance each time that you want to "child swap" as each CM and each ride handle it differently. In fact it can vary from day to day on the same attraction.

Sometimes we were asked to wait at the exit and re ride from the exit and other times we were given a ticket simliar to a fast pass to re-enter for the second parents ride. In all cases the second adult can bring someone to ride along. My oldest loved getting the double rides!

I prefered getting the FP type ticket so I could take the non-rider to play, get a snack, see a show or even re ride a favorite.

We are a family of 5. Every single time we would get in line for the ride, my seven year old would decide he didn't want to ride. My two other children would get to ride with my husband while my son waited with me, and then the two girls would get to ride again with me when it was my turn. I never had a problem, and everyone was so helpful!!! Needless to say, my two girls loved it that my son didn't want to ride because they got to do everything two times!!!!
 
We are just back and did the child "swap". Every ride was a bit different with where and how we would wait, but every single time, they let the other adult take up to 2 others with them on the ride.
