I don't know if I consider it a snack (as opposed to a treat), but I love ice cream, especially peppermint stick, ginger, and anything with caramel/butterscotch. Peanut butter ice cream is also a favorite, along with fresh peach if I can find it. Chocolate? Not so much... I'll eat it, but it's never a top choice.

I guess my favorite snack is dip. I try to eat dip on veggies, prefer it on chips, but honestly I should just save the calories and eat it with a spoon. Homemade clam dip (with a cream cheese base) is my favorite, followed closely by Lipton onion dip. Needless to say, I don't make or buy it hardly ever, because I'd eat it!

Of course it's not nearly the same but I have started subbing in greek yogurt with touch of sour cream for my dips instead of cream cheese or mayo. It takes getting used to but I do like the tang or it can be taken down with squirt of lemon or some salt. I saw a vegan recipe that used silken tofu smoothed up in the blender as a dip base. I haven't tried it but pretty smart.
 
Happy Friday ya'll! We have made it another work week and fumbling through this times like the rest of the world.

I was really trying to reflect this morning while doing yoga that this time in our lives is reflected around the world. It doesn't matter, race, religion or color we are all in the suck together. We are all trying to find a normal and worrying about others we love and soothe with music or food or prayer in our religions. It's kind of amazing if you think of it on a big world basis. I hope in the end it can show how much we are the same and not so different and there's place for all of us at the table.

We are scheduling a zoom family time tomorrow with my husband's family. It'll be interesting if we break zoom lol We have about 60 families over multiple time zones. I hope it can cheer up his grandma and it'll do us all good to see each other. We are so worried about the other and we are holding up the 3 doctors in our family in prayers. Two are in CA in not great areas and one here in Indiana. All holding on the best they can. All we can do is be ready when they need us.

Dinner tonight is blue cheese burgers with grilled onions and mushrooms, grilled corn on cob and mini pasta salad (all leftover veggies into the pasta). I have a lemon pound cake in the oven and make a strawberry glaze to go over it.

Gratitudes today:

1. Our medical personnel, first responders and all those others that are trying their best with what little they have.
2. My husband for being a safe place at night when worries, fears and doubt crowd in.
3. Good people in the world. I have been trying to take 15 minutes every day to watch the goodness that is going on in the world. It sounds very Anne Franke/Pollyana but I will doubt that there is good in this world and will always be good. It just isn't widely shared.

Do something fun this weekend. Smile and laugh. It refreshes the soul and feeds the heart. Matt doesn't know it yet but we are having a karaoke party tomorrow night. I mean I guess it's party for two but it's a party. I found karaoke on the cable last night "on demand.." Baby Got Back here we come!!

One of the most attractive things about my husband when we were dating and still is his ability to make me laugh and laugh at himself. He is pretty serious guy and sometimes he needs reminded to lighten up ( the ice cream tour!) but sometimes he reminds me to laugh too. He doesn't think twice about pulling me out to the dance floor and busting a move. He has taken some nasty pies to the face for fundraisers when in the Army and dunk tanks and laugh as cleaning his face off. It's by far one the best things about him.
 

Happy Friday! My daughter had 3 tests today and wrapped up school work in an hour. It's officially SPRING BREAK! Wheeeee!

Tonight we will have pizza delivered (it's been too long) and watch Onward. Been looking forward to this for 2 weeks.

I know it's not nearly the same but maybe for "staycation" you could do some virtual tours of museums or aquariums that are popular. I saw online somewhere a virtual escape room that is Harry Potter themed. Bake something fun for ya'll even if cut and bake cookies. Have a great Spring Break!

I make this cheddar bacon ranch dip that is sooo good, my husband and daughter are obsessed. When people started panic buying I could not find sour cream in the stores :confused3 and they were soo upset they wouldn't be able to eat their dip....:laughing: I mean it was almost worse that I couldn't find sour cream than toilet paper to them....:laughing:

DS has a very dry wit, and it always catches me off guard (mainly because he doesn't come talk to us much anymore, just sticks his head out for food and to do his laundry. prefers to spend his time online with his buddies)

dinner tonight: Butter chicken, basmati rice, roasted cauliflower and brussel sprouts.
 
My grand children make me laugh all the time.....they are so funny and do so many funny things!!
We get to see them Sunday. The family will be together (there are 7 of us) for DH's birthday celebration.
Probably outside most of the time......I am so looking forward to it.

Dinner.....not sure. I took some leftover thing out of the freezer. I have to see if it is edible. No idea how long it has been in there.

My dog makes me laugh constantly, he gets in the oddest positions when he sleeps, it is hilarious and adorable.

I went grocery shopping this morning, they have almost everything I needed and all of my essentials, except hand sanitizer, that is just not happening it seems.

I also received my new mattress today!! Seems comfortable, but it is so much taller than our last one, not really sure how to fix this so that we can get in and out of bed safely.
 
We have a lot of laughs in this house, my son is 28 and always has something funny to say to keep me giggling.
My husband feeds off of him, so its great.

Of course my grandkids, I face time the two older ones daily ( so strange to go from seeing them all the time to being a "long-distance grandma" :sad2: ) Its so hard.

My 2 yr old grandson is just funny because well, he's two.
He lives here with his parents, so I have the joy of him everyday, thank God!
His mommy and daddy put up his big boy toddler bed last weekend, he was so excited, but scared, he circled and giggled at the bed (Its a Mickey Mouse toddler bed) He will not go on it though, he gets real close and then runs away laughing.
Its so funny.
He makes us sit on it, but he won't.
He makes the four of us go in his room and sit on the floor with him and play, he shuts the door and won't let us leave. He loves a captive audience.

Again, my kid...I call him "Monkey" and it totally suits him! He truly is a silly boy.

So this morning my mother ventured out to Target and the grocery store with one of my scarves triple-folded over her face, as we don't have masks. I raided my craft box and found some fabric scraps and ONE piece of elastic that was just the right length, and spent 2 hours sewing a mask for her (I don't own a sewing machine). Doesn't look too terrible. She likes it. I think I have some Boston Bruins fabric laying around somewhere, so maybe I'll make one for DH. I have some old elastic headbands that might suffice for ear pieces...

The biggest thing for which I'm grateful is that we have gotten through another week with no (obvious) illness. I'm also grateful that we are not having to worry about finances like so many others are. We will be okay. We may not be able to retire - we've lost about 1/2 of our 401(k)s - but we're okay for the immediate future.
 
I am SO glad I found this thread. Just spent my lunch hour reading most of it. Some definite "feel good" in here.

To play some catch up, I am me, from Minnesota :) Twin Cities, to be exact-ish.

I have been here since 1999. I booked my first adult trip, to take my then-boyfriend to WDW for his first time in January 1999. He was INSTANTLY hooked. I got engaged to him because of that trip - he promised me a ring when we got back if I let him go on Dinosaur one more time (I have never been a fan!).

We got engaged about a month later. Then, 2 weeks after that, my dad was dx with what was eventually, terminal cancer. I joined here about 2 months before he died, when we were planning another trip. After he passed, I forced my mom and my cousin to go with us the next time. WDW has always been my healing place. I hope I can still feel that way after this is over..

So, to catch up, my favorites are:

Holiday - Thanksgiving. All the food, wine, and football. No pressure of gifts. And, the weather is usually decent-ish

Book - Winds of Skilak. Reading it the second time right now

Comfort food - either MN style pizza or fried shell tacos

Snack - my taco dip. Popcorn comes in second

Memory - I had a very blessed childhood. Hell, I have had a very blessed life. If I could go back to one moment right now - it would be a hot summer day, hanging on the beach at our cabin in NW Wisconsin. My mom always brought me lunch on the beach - white bread, mayo, good swiss cheese. There was always grains of sand in it. I would jump into the lake afterwards. So many kids to play with. All day was spent just laughing and having fun. We were a tight knit group during the summers. At night, after everyone washed up, we would sit at the big table and play poker for hours. Those moments with my parents, grandparents, and extended family - bliss.

Anyway, thank you for this thread, Tina! I adore you even more for it :)

I think laughter has kept DH and I together for more than 35 years. Nothing like a good laugh. Could be a funny meme on Facebook, a classic comedy like Blazing Saddles or Airplane, or something DGD does. When our kids were little, it wasn't a meal until someone spewed milk out of their nose. LOL

Ingredients
  • 1 cup sour cream (After the first time I decided to use 2 cups of sour cream....
  • 1 1/2 cups mayo I use Best Foods with olive oil (and only 1/2 of mayo....when I used all the mayo it was really salty)
  • 1 package 1 ounce Ranch salad dressing & seasoning mix packet
  • 10 green onions chopped (I've made it without the green onions tons just because I always forget to buy them....still good without them.)
  • 2 cups grated cheddar cheese
  • 1 cup cooked & crumbled bacon, you can also use bacon bits (First time I made it, i forgot the bacon....hahaha....again still came out pretty good. Just way better with bacon.)
Instructions
  • In a medium mixing bowl add sour cream, mayo and ranch packet, stir together until well combined.
  • Add in green onion, grated cheddar cheese and bacon, stir together until well combined.
  • Serve immediately with cracker, chips or veggies like celery and carrots. Or refrigerate until ready to use, you can make this a day or two in advance. (We really like it with Ritz but any cracker works. Hubby loves it in the middle of celery.)

We are a joking family so we're always making jokes and cracking up. Even in some of our hardest moments, we laugh. My mom had a brain aneurysm years ago and while she was on surgery, they weren't even sure she'd make it, our whole family was in the waiting area cracking jokes. I'm sure everyone there probably though we were nuts. Even during family funerals(well we do celebrations of life in our family), someone will say something that someone else will find funny and next thing you know all us adult cousins are cracking up. It happened at both great grandparents and an uncles celebration....they would've been right there with us laughing had they been there too. 😊


Our daughter is hilarious...she takes after my dad and brother and has a quick, dry sense of humor. Always saying things that crack us up. I told her I'm going to put together a book called Funny *&%$ my daughter says....:laughing:

My husband and I are always cracking up about something....like tears laughing, usually at something so dumb probably no one else would think was funny but still cracks us up.
