I make a mean pie, if I do say so myself and friends and family have come to depend on them at Thanksgiving and Christmas. The consensus seems to be that apple is everyone's favorite, so I make them in batches to give away. My own personal favorite though, is raisin with vanilla ice cream and second would be my secret-recipe coconut cream in a graham crumb crust. :cloud9:

:worship:Today I am BEYOND thankful that we've finally received confirmation from our mortgage company that they will be deferring our payments for 3 months. Not sure about in the States, but this is a measure the Canadian government has urged all lenders to take to ease the strain on those of us with income disruptions. More than 1 million Canadians have lost their jobs since March 1 - this is an unprecedented economic cataclysm.
 
Key lime is my favorite, as long as it is quite tart, I hate sweet key lime pie. I make really good key lime pie squares-basically the same as pie just a different shape.

I like all fruit pies, but much prefer crumbles- not a big fan of pie crust, but I will happily eat the filling out of most fruit pies as long as it isn't too sweet.

I also like really simple chocolate pie, just a graham cracker crust, chocolate pudding, and whipped cream, but I haven't had that in years.

Peanut butter and chocolate fudge pie is also good, again as long as it isn't too sweet.


Today was a good day. I checked this morning and our Alaska Airlines flight to Maui was finally canceled by the airline, I called and they are giving us a full refund back to our credit card!!! Only one flight left and then we will have gotten our part of our two week family vacation to Hawaii fully refunded!!!
 
Shoofly pie, chess pie, and any kind of pie with lemon. I like peach pie too. It's hard to find a pie with a flaky crust like my grandmothers made but when I do I remember:). I used to like a covered apple pie but the thrill is sort of gone now.
As pie crust making skills die out I've become more of an open faced tart lover.

Today, was a sopping wet day with dark skies that fit my mood. DGD won't be home until the week's end now. Leaving my son to talk to his former wife as my tongue is too sharp and I've no patience with those who are wishy washy about time.
Read an article over the weekend about the closing of a large pork processing plant so checked an online site I like and replenished my pork cuts. Fortunately they're having a freezer sale so that was a goody.
 

I love pie! In fact, I'd rather have pie than cake. My favorite is hard to determine, but I'd say lime meringue. We always called it key lime pie, but it's not; it's made with cornstarch and lime juice, but NO SWEETENED CONDENSED MILK, so it's like lemon meringue only using lime juice. I can't stand traditional key lime pie- the sour lime with the milk reminds me of vomit. UGH.

Other favorites include strawberry rhubarb, blueberry/raspberry, and peach (or peach/blueberry). Also love peanut butter pie, chocolate cream pie, pecan pie, and mincemeat pie- I know, I can hear people groaning now! For many years, I was the family pie maker at Thanksgiving. I make a killer pie traditional pie crust, and for family holidays would make 4-6 different pies. We don't do those get-togethers anymore (age/distance), so I don't make as many pies as I used to, mainly because if I did make pie, I'd eat it all!

Things I'm grateful for: Tonight the power went out but only for a couple of hours. Last week we lost the power for 20 hours and several friends were out for days, so I am thankful this one was brief. Of course, it happened just as I was starting to cook supper... so I am also thankful that there was ham, cheese, and fresh bread in the house so we could eat!
 
Happy Tuesday to my DIS friends,

It's pretty but deceiving looking day here in IN. It's cold! Currently about 38 degrees and windy. This up and down weather wrecking havoc on my allergies making me snort and cough. Makes me paranoid even though I haven't been around people up close in a while. I don't really have anything special to report today. I spent my morning doing my community obligation zoom meetings. So many people being hurt by this virus in ways we may not have even thought of. I'm blessed not to be a caregiver to someone who needs hands on medical assistance. I was told by someone today that she is caregiver to her husband who needs medical assistance and now they are having difficulty finding medical gloves and other safety items they use in addition to turning their respite care person away. It never dawned on me people needing such at home.
I was talking with someone else that is having a hard time transition out of the military because this is awful time to be trying to figure out how to move and get a new job in this day and time.

I spent the afternoon doing my accounting homework. Bleh.. I have my next test this weekend. Wish me luck! Right now I'm working on a big kohl's order to replace a lot of my kitchen gadgets and utensils. As I have spent more and more time in my kitchen cooking, I realize how wore down lot of my items are and this good time as any to replace a lot of them. I'm thinking about starting to sneak in some new dishes too and start getting out the cheap set I bought us when we married 18 years ago.

Dinner tonight is chicken sausage brats, with baked fries, and fresh fruit.

I'm so glad ya'll are still interested in this thread. I know it's been a month of my ramblings and spilling about our boring life here. If nothing else I hope it makes you all feel better about your lives or emotions knowing others have it too. I'm glad ya'll want to share what you are eating or how life is going or anything else. I'm just glad I'm not feeling so alone and in a safe area with this ongoing conversation.

Thankful another day to this being closer to done even if we don't know the when.
I'm grateful that we are blessed my husband wasn't more injured than he was during all his deployments. We both struggle with scars on the inside but he had very few outside injuries.
I'm thankful that I have the skills to sit still and listen to people when they are feeling the feels that make others uncomfortable. It's not particularly easy but I'm glad I'm comfortable doing so. I might not be great at accounting but I'm outstanding with tears.

Question of the day 4/14: What's a favorite meal?

What's a favorite meal you enjoy? It can be at home or out and about. Every year for the month of October I hear all about how excited my husband is for chili and cornbread. He loves chili and cornbread but I think it's also about the routine with Halloween and tradition.

A favorite meal I make at home is buffalo chicken sandwiches shredded or buffalo chicken dip or buffalo chicken pasta. I also make great egg rolls baked in the oven with variety of filling. It makes for fun dinner or appetizers. As simple as this is one my favorite take out meals is Chick fila. There is a place in TX that makes the best steak I have ever had and it was a treat to go because so expensive but worth it! I'm not big beef/meat eater and I always have the steak with wine mushrooms when there.

So what's your favorite meal?
 
Nothing new here today, or any day. Been entertaining myself with texting "pew pew" to other iPhone users (iPhone to iPhone gives a laser light show) and sending pictures of google 3D animals. I sound like a 7 year old, add 60 years. I am easily entertained. Did some laundry and helped DH with some mindless chores that needed doing for his work.
Question of the day 4/14: What's a favorite meal?
Anything I don't have to cook. Going beyond that, I liked steamed blue crabs because usually that is with family. Or, we have a local pizza place that DH and I would go to on a Friday night for salad, pizza, and beer. Or Mexican dinner out. I guess too much cooking at home so anything out sounds good.

Dinner tonight is grilled chicken, left over mac and cheese from Easter, and left over veggie from Saturday. Nothing goes to waste.

Good luck on your tests this weekend Tina. I feel you about the weather. We got to a high of 45, it's raining now, temp going down to 30 overnite. I had to light the wood stove, and the other day we were talking about putting the AC in, lol.
Dinner tonite was steamed salmon, mashed potatoes, and peas
A favorite meal of mine is crock pot chicken, with stuffing and corn.
Another one, though hubby doesn't like cooked cabbage are stuffed cabbage rolls. My great grandmother used to make them by the pressure cooker full, and as soon as they were done, they were gone, lol
Also love homemade meat loaf with baked potatoes, and steamed broccoli
