Tonight we had grilled, marinated chicken with corn on the cob and mashed potatoes for supper. We also grilled some shrimp that we had but I didn't like the spice on them so DH is going to take them to work. He and a coworker share lunches and take turns bringing things in. Of course both of them will eat almost anything, so it's a good way to use things up. :laughing:
 
Question of the day: 5/19: Picnic time! What's your favorite picnic food?

Supposedly, maybe, the weather is going to be nice soon and Memorial Day weekend is coming! It's such a weird time but I was thinking about packing up a picnic and just getting away for a pretty drive and somewhere new to relax and have picnic lunch. I'm not sure what I'd want to bring. We are pretty easy food people. I was thinking about fruit skewers, mini meat/cheese board with some good bread, and cookies. If you were out on a pretty day, what would you bring for a picnic?
For a picnic, I'd go the easy route and pick up sandwiches from the grocery store or a sandwich shop. Then we'd get some chips, some fruit(like grapes or cherries) and maybe a macaroni, pasta or potato salad, probably cookies for a dessert.. Yum...now I wanna go on a picnic. 😋
 
Fried chicken, potato salad (yes, keep chilled), fresh fruit and something sweet, like blondies or brownies. Or something easy like chicken or turkey salad sandwiches, crudites, and fresh fruit
Grateful that I mowed the lawn yesterday, as it's raining today (and they weren't calling for it)
Grateful that we both got new cell phones Monday, and so far no major problems with them (other than tracfone taking it's sweet time porting my number over to the new carrier). They gave me a temporary one to use, which will become permanent if tracfone can't get their act together
Grateful that businesses are slowly starting to reopen here--although they say MD had more new cases yesterday than before :(
 
I really enjoy a good cheeseburger and fruit salad at a picnic. We always bring a fruit salad so I know there will be one!

I am grateful that a healthy baby girl was born to my cousin yesterday. Mom is a nurse who worked through pregnancy in Bergen County NJ. We look forward to the day when we can meet baby Francesca.
 

Favorite picnic foods:

For backyard cookouts, it’s the salads! I love trying a little of each of the different kinds people make. (Same goes for desserts.)

For “hike into the woods” type of picnics, it’s all about convenience. - We bring granola bars and stuff like that.

And for the beach, picnic fare must include cheese and crackers and grapes.

I can't recall a time where I've put together all the "traditional" picnic foods and taken them somewhere and picnicked. We do enjoy getting out for walks and hikes at national and state parks, and our usual go-to is to stop at WaWa and grab some subs :rotfl2:

With that being said, we've been drooling over some of F&M's baskets and might treat ourselves to one sometime soon. I doubt I'll ever actually take the basket for a picnic though!
 
Thanks again for the all the thoughts for me and my boy....:laughing: My poor baby has an ACL tear...he's probably going to need surgery. 😟 Our vet sent his xrays to the doggy ortho surgeon for a second opinion so we should hear back Thursday. If he was a smaller dog, the vet thinks we could leave it be but he's just SOOO BIG its not likely to get better with just rest and its actually more likely to end up completely tearing causing more damage. He's almost 130lbs and if he stands next to me his back is up to the top of my hip(I'm 5'1"). My poor boy is miserable right now. Our sweet daughter offered to split the cost with us if he does need the surgery. My bosses dog just had surgery for a completely torn in half ACL, so its crazy this is happening now with our boy. When I'm working we're always talking about our special need dogs....:laughing: Her dog has seizures and our dog's Lupus. 🤦‍♀️

I'm so sorry that he needs surgery. Our last dog tore both of her ACLs (at different times) and had surgery on both. She was about 9 years old at the time. Cocker spaniel, so she was much smaller than yours, but she still did great. When we took her back to the vet for her post-surgery 2-week checkup, she jumped up on the bench in the waiting room, and the vet's jaw dropped..."She can jump already???" 2 months later, she was sleeping on the ledge of our bay window when someone rang the doorbell. She tried to get up and bark, but she wasn't fully awake and she fell off the ledge, which tore the other one. Back to surgery she went. But she never had issues after the surgeries, never seemed to develop arthritis, and lived to be 17 1/2. Again, maybe the size difference is a factor, but I've personally heard lots of stories about dogs doing quite well after their ACL surgeries. I hope yours is one of them :hug:

That sounds good! We don't really picnic much...Our annual Tanglewood outing is as close as we get. My MIL used to bring sandwich fixings (Portuguese rolls, lunchmeat, cheeses, condiments) and we'd make our own sandwiches. Now she orders them ready-made from a local pizzeria. She also brings fruit salad, a small seafood salad from another local place (it has HUGE shrimps in it! Love it!) for those that like seafood. My SIL brings chips, crackers, cheese, homemade salsa, and cold venison kielbasa. My BIL and his family usually bring soda, and we are in charge of sweets - I typically do brownies or cookies, something simple. One year, since it fell within a day or two of my BIL's birthday, I brought cupcakes. I have a cupcake transporter, but it took up so much space, I was worried about it falling over in the car, and I ended up bringing half of them home (as I'd brought enough for everyone to have 2).

My picky little son gets a Smuckers Uncrustable PB&J sandwich and a juice box/Capri Sun. He's happy to fill in with the chips and cheese :)
 
Peaceful day and my eyeballs are tired. Decided to forge ahead with "Billions" to get up to date w/ the current season.

Before the bingeing began, I washed my new OXO Pop containers, filled them and figured out what sizes I need for other items. Toying with the idea of redesigning the existing 3 sided kitchen base cabinet. Maybe a trolley system will be more efficient? This is the smallest kitchen I've ever had (7*5?) and I'm not interested in expanding it just want it to be as storage efficient as possible. Kinda of funny because when my mother bought this space and I saw the kitchen I suggested she bump out one wall 2 feet. Now I'm trying to get the space I want with the same footprint she insisted on. What a difference a day makes:).

Potato salad! Where the pushed back subsumed carb lover in me gets out and has a big ol party. There are many other picnic dishes I like but that's the one that if I can work it into a picnic menu I will. I love potato salad so much that sometimes I'll make it a complete meal with meat (pork) and veggies added too. Not hard to ensure it's safe when eating it away from home. Just wrap the container in flexible gel packs (WM sells them).

My favorite full menu picnic meal is Spanish tapas: sherry marinated 'shrooms, rm temp served potato tortilla with smoked paprika, garlic chicken, artichoke hearts and Serrano ham, Sangria, and tropical fruit salad as a finish.

Dinner last night was all about using up the seafood and pasta dish with garlic sauce. The sauce wasn't garlicky enough for us so I change the flavor profile to Asian by using sesame oil, soy sauce, a little chili and garlic sauce w/ rice wine vinegar to heat it up in the microwave. Took about 5 minutes to prep and heat including the scallion greens I sprinkled atop when the dish was hot.
 
Potato salad, chicken, and homemade brownies or cookies. That was what I made for the one picnic DH and I had while we were dating. Never had another picnic with him as he doesn't like to eat outside. With the kids when I would take them to the playground or even just in the yard we would have sandwiches, chips or pretzels, and sweets.

Fortnum and Mason's or a different company? If it's the English company sounds like serious fun! If it's not who else makes mouthwatering baskets?
 
For a picnic, if spontaneous I make a quick stop at the store and grab some Italian subs and some chips, beverages, and maybe cupcakes for dessert. If planned ahead, homemade fried chicken tenders (no bones to deal with afterward), homemade macaroni salad, a thermos of fresh brewed iced tea (we have a two gallon thermos), and some sort of homemade brownie or bar cookie for dessert. I try to plan to be able to throw everything away at the end of the meal, so I don’t have to worry about keeping the leftovers at the correct temperature, or dealing with dirty dishes. I like the covered disposable foil pans for picnics.
 
Hi ya'll and happy whatever day it is. I just can't keep track lately.

It's been dark dreary rainy looking day. It looks more like Feb than May. We are charging along in Indiana to Phase 3 opening which means restaurants can be dining at 50% in most areas and malls/stores can be up to 75% and social gatherings up to 100 people and lots other things. My church opens this weekend but we are going to stay home. The logistics of social distance and taking communion and being inside and other aspects just too much for me yet. I'm going to be doing this in small steps to see how things are going. I'm not as afraid as I was 2 months ago but I'm still nervous about all of this. I am determined to have some time out doing something relaxing and normal this summer before things possibly change this fall/winter. So much unknown. I do have hopes I can go see my mom soon, which will put me more at ease.

Dinner tonight was clean out fridge of things and stuff.

Gratitude:

1. Being in a place to weather all that is going on without too much damage to our financial infrastructure.
2. Lemon oreos and good cup coffee
3. Online library. I have more time on my hands and reading while having nice cup coffee and lemon oreos is good day.

Question of the day 5/20: What is your best trait? What is your worst trait?

I had job interview recently and wanted to ask more about who I am as a person, which included my best and worst traits. My best trait is my personality (ability to make someone smile or laugh) and ability to deal with people's emotions. I'm comfortable letting people feel what they feel and then talking it through or giving a hug or kick in the butt. My worst trait is working too much and always wanting to do more and better. I'm not great on work/life balance. The last job almost did me in because of this and I learned so much from it.
