PS's for January - will later times become available?

Well, now that the hours are out for January, I've begun trying to make some PS's around WDW. As of now, I have a PS for dinner at the Crystal Palace for 5:35 pm on Monday, 1/24/04. The MK is open until 8 pm that night with Spectro at 8. I was told the latest dinner seating is only 6 pm - do you think later times might become available closer to the date? I thought later times would be available after the hrs were released - but, so far that hasn't been the case. TIA !
