I think you are thinking of the humidity. I know when I bought my camcorder it said it can be affected by the heat. It is the change from cool air conditioning to hot humid temperatures that can cause problems. My camera and camcorder were mostly okay. The only time I had problems with my camera was on the last day when I started to use it a lot earlier that normal and it kept steaming up.
Those desiccant sachets are supposed to help draw the moisture to them. I know I got some free with my Aquapac waterproof bag I take on holiday. They supply them specifically to help with this problem.
I have big problems with both Cam and camcorder when cruising, mixture of damp air and aircon cabins dont work well.
Not noticed at parks but usually its an hour or so after leaving hotel to using, on ship you are right out of cabin and using it.
As has been said above the problem is the change in heat and humidity. If the camera has been in a nice dry air conditioned room and then is taken out into the hot humid outside air condensation will form on all the cold surfaces within the camera (mainly metal or glass surfaces).
Ways to avoid this is to keep the camera in a good, well padded case (well insulated), with a few dessicant bags to try and keep the camera at a more constant temperature and reduce the moisture.

I'll take on board the tips about the desi-whatnot bag. Anyone know if I could get a big one to wrap around my head?

I did get quite a nice "misty" photo early one morning when I spotted the hot air balloons over head and dashed inside for my camera, somehow it suited the picture.

Apparently after the misty mornings the zoom lense stopped working got repaired then same thing happened the year after! We are cursed with cameras the year before that our ds buried it in the sand on the beach. That we couldnt repair!
