Not a crockpot recipe, but just as easy and super-fast to make:
Pasta e Fagiolio
In a fry pan, saute one diced onion in a good amount of olive oil until browned.
Separately, cook 1 box of small macaroni (like elbow, ditalini or rotini) in salted water. During the last 4 minutes of cooking, add one can of cannillini or chick peas.
Reserve 1 cup of the cooking water, then drain off most of the remaining water. You want to leave it a bit wet; it's a soup.
Add a 1/4 to 1/2 cup of tomato sauce (or one can of tomato paste).
Toss with the olive oil. Serve with crusty bread and a green side dish like broccoli rape' or sauteed spinach. A little grated cheese is also yummy, added to each dish.

, and I have to admit it was nice that DH cooked some meals (and cleaned the bathroom for me, and any other thing requiring chemicals)... We're back to "normal" here now that she's 2. I'm no longer the queen.
