Pre Cruise - what would you do?

Not sure about a whole week! But there is the Wizard of Oz museum, the Dinosaur store, a massive Ron Jons which is just fun to wonder around in, and a few mini golf options.

I’d probably head back to Orlando at least one day, unless you’re big beach people.
Someone mentioned the pier. Is that just a place to go to eat?
We are headed back there for a couple days depending on flights out of MCO.
 
Waterparks close 5/6 pm so check in day that benefit won’t matter if you’re arriving in the evening.

I would still stay at WDW. You probably can’t get to a park on check in day until at least 7 pm. With flight delays and such we no longer go to the parks on check in day. There is still a lot to do around the bubble. Next day at MK and then DCL (need to book by calling Disney) to port Canaveral.

When we stay at the Hyatt Orlando airport pre cruise, we have to leave our tagged bags in the room by 8 am (confirm with front desk that they have you on the pickup list) on cruise embarkation day and it takes almost 2 hours to board a bus. We usually eat breakfast at Mccoys and head out.
 
I would go to a WDW resort (as other suggested, perhaps a different one than the one you'll be at after the cruise). I love staying in the bubble, plus then you can take advantage of DCL transportation from the resort to the port if you want.
