If you look at the App in the morning, it'll tell you what time each show is running that day so you can extrapolate for your day. Unfortunately they don't post a show schedule per se, each day they just list the upcoming times.

Also just as an FYI, the water rides Popeyes barges & Dudley Dooright flume will get you fully drenched, to the panties. Fair warning. They're a lot of fun, just know what you're getting into.

In reference to Dudley Do-Right, do you happen to know if the accessible seat known as the "Canadian goose" is still offered on that ride? I rode it once years ago and BARELY fit into a regular seat, which soured me on re-rides. But my understanding, if it's still accurate, is that the accessible seat is much easier to get into.
