We have a few traditions: 1st and last days - MK. 2nd day Epcot. Other days are decided using Touring Plans as I find their information accurate and helpful.

EMH does not cost extra. You have access to that if you stay onsite. This time of year, the crowds on Tuesday are lower than other days because of the after-hours Halloween party. MK closes at 6 on party days.
- when and where I was able to snag high-demand FPs, like FOP.

I think I read on another site that Sunday and Tuesday, the week I am going is having the Early Morning Magic hours, where you get a breakfast and only Fantasy Land is open, and the cost is an extra $79 on top of your daily ticket.

Animal Kingdom is typically least busy on Tuesdays, Wednesdays, and Sundays. It’s busiest on Mondays, Fridays, and Saturdays, particularly on days with morning Extra Magic Hours.
Epcot is generally least busy on Mondays, Wednesdays, and Fridays. Saturdays are typically busiest with most Tuesdays and Thursdays seeing longer waits than other weekdays.
Mondays, Wednesdays, and Saturdays are usually best for Hollywood Studios. Sundays and Fridays typically see higher attendance.

Although in the end, it's good planning that will mater more than anything, ie picking priority fastpasses, using either rope drop or the end of the night properly, knowing which rides will build lines faster.

Just feel like that MK is the park we want to start and end and our vacation. We'll see if I keep to that plan when I make FP+; we have not been since FoP and SDD opened so those are the priorities over everything else.
I am using Touring Plans, worth every penny IMO for what you get.
