Well I do live right off the Strip (downtown end) and just blocks away from several strip clubs, in case you wanna give the old pole dance a whirl :banana: (closest thing to a stripper I could find) so you could make some dollars to catch a cab back to your hotel after you choke me!

Ingredients:
1 precooked rotisserie chicken-picked into bite size chicken pieces

1 large or 2 small cans of green enchilada sauce(I use the brand that is a red and white label, can't remember which it is?)

1 package(2 cup size) taco/mexican shredded cheese

1 package flour tortilla shells(I get the kind in the "ethnic" grocery store aisle, they are waaaaay better than the Ortega ones!)

Other options
Black beans, refried beans, red enchilada sauce, ground beef taco meat, onions, basically whatever you like in a taco...

Toppings
Salsa
Sour Cream
Lettuce
Tomatoes
Olives

1. Pick apart the chicken into bite size pieces.

2. Spray 13x9" pan with non stick spray and heat oven to 375.

3. Empty the can of enchilada sauce in a pan on the stove big enough to fit a tortilla in without folding or bending it. Heat on medium heat until it JUST starts to bubble. Turn to low.

4. Have filling ingredients(chicken and cheese for me!) in bowls on the counter next to enchilada sauce and 13x9 pan on stove top next to sauce, this makes it easier for assemble and less mess.

5. Place one tortilla in the enchilada sauce, cover it up and wait til it gets soft, normally 30 seconds to 1 minute. You don't want it too soft or it will rip! Put the tortilla shell into the pan(makes less mess this way) and put the next shell in the pan and cover. Fill your shell with your filling ingredients(chicken and cheese), then just roll closed. Not too full people! Push to end of pan.

6. Repeat until one of all your ingredients is gone(save a little cheese for the top). Normally I get about 12 enchiladas per batch. (Dawn, you may need to double everything for your herd! :lmao:)

7. Put remaining cheese on top and place pan in the oven, bake for 20-25 minutes, I bake them til just the very end of the corner enchiladas get brown.

8. Put on plates and serve with sour cream and salsa(other toppings if you please).

Mmmm, I may have to make these this weekend. Brent can eat 6 at a time! :scared1:

I started reading your post last night while at work to keep me awake, you got my adrenaline flowing, slept for a couple of hours and had to get my fix. I'm going to make those cookies next week, I love me some peanut butter.

Sorry for the bragging, :laughing: I guess I shouldn't tell you that I have my PTR started for WDW for October, we are planning on 3 trips to the Dells(HEY, you should come down and join us!!!) in between and Jamaica in March 2012, then, should I? :rolleyes1 We had that conversation in one of these TRs or PTRs that I'm like you with the travel instead of the "stuff"... :laughing:

thanks that looks good and pretty easy. when we make chicken salad, we usually put a little ranch seasoning in it as well. I use the big jug of it from sams club, lasts forever...also makes good homemade croutons.




I am anxiously waiting for this one-I too roast my chicken or turkey for salad, but I am trying to figure out if you used pasta in there too. I also need a good recipe for macaroni salad that doesn't taste just like potato salad.

dont want to steal dawns thunder on her macaroni salad receipe....but i have an easy one that i make and usually goes over pretty good.

come to think of it, this is not even macaroni salad, just an easy one i make for parties.


noodles(any kind)
cook noodles, set aside and rinse with cold water to stop from cooking.

then i take carrots cut into small pieces...

small hunks of cheese(same size as carrots) usually cheddar

italian dressing to taste

and the main flavor comes from the mcCormicks salad sepream (sp) seasoning...i spelled that wrong.

very goodand you can customize it to your taste as well.

sometimes we put in cut up brocoli, or calliflower, or even sliced up pieces of salami and pepperoni


that is nothing like macaroni salad,,,opps sorry.

try adding the ranch seasoning to your macaroni salad it will taste different from potato salad.

Yup, since I was about 1. It's a nice place to visit but living here sucks.

September should be ok especially if you come towards the end though we were still getting days with 95 degree highs in November last year!

We're coming Labor Day weekend for the Badger vs. UNLV game. Currently we have reservations at the MGM, but that may change if we can find a better deal. No cars, we'll be reliant on the 3 day monorail pass, busses and cabs. We are currently a party of 6, hopefully we will be 10. Waiting for flight prices to come down right now :eek: I can't find anything less that $400 for decent flight times. Ugh!
 
Ok, so just off this thread alone I have the means to make an entire meal. I might have to fix this all tomorrow night as a welcome back present for DBF and his family.

I actually just got done working out at the rec center...but I'm currently finishing off my box of Girl Scout cookies.....but that counts as a reward, it doesn't cancel it out...right?
